Abstract
本发明公开了一种含有绣球菌的粉丝,其原料由绣球菌、猴头菌、鸡腿菇、红菇、金针菇、香菇、羊肚菌、茶树菇、榛菇、白灵菇、大秃马勃、姬松茸、长裙竹荪、大米组成。本发明以绣球菌等多种食药菌菇制成浆液,再和大米打浆制成粉丝,其营养价值高,味道鲜美,还具有滋阴补肾,健脾胃,抗癌抗肿瘤,降脂降压,助消化、美白养颜,延缓衰老,增强免疫力等保健效果。

本发明涉及食品技术领域,具体涉及一种含有绣球菌的粉丝。
背景技术
绣球菌,又名绣球菇,拉丁学名为Sparassis crispa,是非褶孔菌目、绣球菌科、绣球菌属。绣球菌是名贵的食药兼用菌,其含有大量的蛋白质、碳水化合物、多种维生素、多种氨基酸及膳食纤维和灰分、矿物质等。其中,绣球菌含有大量的β-葡聚糖,β-葡聚糖是一种生物活性物质,具有免疫调节、抗肿瘤、抗炎、抗病毒、抗氧化、抗辐射、降血糖、降血脂、保肝、提高造血功能等多种功能;绣球菌中的维生素E、维生素C具有抗氧化作用;绣球菌还含有麦角固醇,麦角固醇在阳光和紫外线照射下可转变为维生素D,促进钙、磷的吸收,有利于骨骼的形成,可预防儿童佝偻病、成人骨质疏松症和骨质软化症;绣球菌中钾含量非常高,而钠含量相对较低,高钾低钠有利尿的作用,对高血压十分有利;绣球菌中含有大量的抗氧化物质,如超氧化物岐化酶,能有效清除体内的自由基,防止活性氧对机体的损害,有抗氧化、抗衰老的作用。
粉丝是中国常见的食品之一,是一种用绿豆、红薯淀粉等做成的丝状食品,故名粉丝。往往又叫做粉条丝、冬粉(主要在台湾),日本称春雨,朝鲜半岛称唐面,越南称面。目前市场中粉丝的原料简单,营养价值单一,不能满足市场需求,各种高营养的粉丝具有很大的研究价值。
发明内容
本发明的目的在于,针对现有技术,提供一种含有绣球菌的粉丝。
为实现上述目的,本发明采取以下技术方案:一种含有绣球菌的粉丝由绣球菌、猴头菌、鸡腿菇、红菇、金针菇、香菇、羊肚菌、茶树菇、榛菇、白灵菇、大秃马勃、姬松茸、长裙竹荪、大米组成。
其制备方法为:
(1)粉碎:将绣球菌、猴头菌、鸡腿菇、红菇、金针菇、香菇、羊肚菌、茶树菇、榛菇、白灵菇、大秃马勃、姬松茸、长裙竹荪等干品分别置于超微粉碎机中进行超微粉碎;
(2)配浆:步骤(1)所得的各超微粉按比例混合,置于20~25倍质量份的水中,搅拌混匀,煮沸10~30min,冷却至室温;
(3)打磨米浆:将大米按量浸泡于步骤(2)所得的浆液中,浸泡10~12h后,将大米与浆汁打磨成混合米浆;
(4)制备粉丝:将混合浆汁通过制粉机制作成粉丝,按照常规的方法将粉丝晒干即得含有绣球菌粉丝。
其中,步骤(2)中,各超微粉按如下质量份混合:绣球菌1~3份、猴头菌3~5份、鸡腿菇2~4份、红菇3~7份、金针菇1~5份、香菇3~6份、羊肚菌1~4份、茶树菇1~3份、榛菇2~5份、白灵菇1~3份、大秃马勃2~4份、姬松茸2~5份、长裙竹荪3~5份。
优选的,步骤(2)中,各超微粉等质量份混合。
其中,步骤(4)中大米与浆液浸泡比为500g:2~5L。
其中,绣球菌含有大量的蛋白质、碳水化合物、多种维生素、多种氨基酸及膳食纤维和灰分、矿物质等,具有免疫调节、抗肿瘤、抗炎、抗病毒、抗氧化、抗辐射、降血糖、降血脂、保肝、提高造血功能等多种功能;绣球菌的麦角固醇经生物反应还能促进钙、磷的吸收,绣球菌中高钾低钠有利尿的作用,对高血压十分有利;绣球菌中含有大量的抗氧化物质,有抗氧化、抗衰老的作用。
其中,猴头菌是一种药食两用的真菌,性平,味甘,利五脏,助消化,滋补,抗癌、治疗神经衰弱,猴头菌还有抗溃疡、抗炎、抗肿瘤作用、保肝护肝、增加免疫力,抗衰老作用、提高机体耐缺氧能力,增加心脏血液输出量,加速机体血液循环、降低血糖和血脂等药理作用。
其中,鸡腿菇形如鸡腿,味似鸡肉,口感滑嫩,清香味美,味道鲜美,口感极好。鸡腿蘑还含有丰富的蛋白质,碳水化合物,多种维生素,多种矿物质。鸡腿菇具有通便、安神除烦、降糖消渴、抗癌、提高免疫力等作用。
其中,红菇风味独特,香馥爽口,含有人必需的多种氨基酸等成分,具有治疗肿瘤尤其肺部肿瘤、腰腿酸痛、手足麻木、筋骨不适、四肢抽搐和补血、滋阴、清凉解毒及治疗贫血、水肿、营养不良和产妇出血过多等疾病,还具有增加机体免疫力和抗癌等作用,经常食用,可使人皮肤细润,精力旺盛,益寿延年。
其中,金针菇性寒,味甘、咸,具有补肝、益肠胃、抗癌、益智的功效,主治肝病、胃肠道炎症、溃疡、肿瘤等病症。金针菇中锌含量较高,对预防男性前列腺疾病较有帮助。而且金针菇还是高钾低钠食品,可防治高血压,对老年人也有益。
其中,香菇是具有高蛋白、低脂肪、多糖、多种氨基酸和多种维生素的菌类食物,具有延缓衰老、防癌抗癌、降血压、降血脂、降胆固醇,增强免疫力等作用,香菇还对糖尿病、肺结核、传染性肝炎、神经炎等起治疗作用,又可用于消化不良、便秘等。此外,香菇所含核酸类物质,还具有防治爱滋病的功用。
其中,羊肚菌性平,味甘寒,无毒;有益肠胃、助消化、化痰理气、补肾壮阳、补脑提神等功效,另外还具有强身健体、预防感冒,增强人体免疫力的功效。
其中,茶树菇性平,甘温,无毒,益气开胃,有健脾止泻,并且有抗衰老、降低胆固醇、防癌和抗癌的特殊作用,还具有补肾滋阴、健脾胃、提高人体免疫力、增强人体防病能力的功效。常食可起到抗衰老、美容等作用。
其中,榛菇肉质细腻,柔嫩鲜美,富含大量的微量元素、蛋白质、胡萝卜素、维生素C等营养成分营养价值极高,经常食用可加强肌体免疫力,益智开心,益气不饥,延年轻身等作用,还可防止皮肤干燥,并可抵抗某些呼吸道及消化道感染疾病,对眼睛视力有很好的保护作用。
其中,白灵菇肉质细嫩,味美可口,具有较高的食用价值,有消积、杀虫、镇咳、消炎和防治妇科肿瘤等功效,增强人体免疫力,调节人体生理平衡的作用。
其中,大秃马勃味辛,性平,清肺利咽,止血消肿。
其中,姬松茸性平,味甘,归心、肺、肝、肾经。具有健脑、消炎、益肾、降血糖、改善糖尿病、降胆固醇、增强精力、改善动脉硬化、防治心血管病等功效。被视为强有力抵抗滤过性病毒的物质,它能防止病毒和有害物体进入人体危害脆弱的组织,大幅度提高免疫功能,阻致癌物质有吸收、排泄作用;姬松茸可促进人的骨髓的造血功能,能干扰白血病的细胞增殖。姬松茸菌丝体粉中含能杀死癌细胞的蛋白质,及人体必需的全部氨基酸,可长期服用,老少皆宜。
其中,竹荪口味鲜美,是著名的珍贵食用菌之一。对减肥、防癌、降血压、美白祛黑等均具有明显疗效。
本发明的有益效果是:本发明以绣球菌等多种食药菌菇制成浆液,再和大米打浆制成粉丝,其营养价值高,味道鲜美,还具有滋阴补肾,健脾胃,抗癌抗肿瘤,降脂降压,助消化、美白养颜,延缓衰老,增强免疫力等保健效果。
具体实施方式
下面结合具体实施例,对本发明进一步的说明。
实施例1
一种含有绣球菌的粉丝由绣球菌、猴头菌、鸡腿菇、红菇、金针菇、香菇、羊肚菌、茶树菇、榛菇、白灵菇、大秃马勃、姬松茸、长裙竹荪、大米按如下方法制成:
(1)粉碎:将绣球菌、猴头菌、鸡腿菇、红菇、金针菇、香菇、羊肚菌、茶树菇、榛菇、白灵菇、大秃马勃、姬松茸、长裙竹荪等干品分别置于超微粉碎机中进行超微粉碎;
(2)配浆:步骤(1)所得的各超微粉以质量份计,按绣球菌3份、猴头菌5份、鸡腿菇4份、红菇7份、金针菇5份、香菇6份、羊肚菌4份、茶树菇3份、榛菇5份、白灵菇3份、大秃马勃4份、姬松茸5份、长裙竹荪5份混合后,置于25倍质量份的水中,搅拌混匀,煮沸30min,冷却至室温;
(3)打磨米浆:将大米按浸泡比100g:1L浸泡于步骤(2)所得的浆液中,浸泡12h后,将大米与浆汁打磨成混合米浆;
(4)制备粉丝:将混合浆汁通过制粉机制作成粉丝,按照常规的方法将粉丝晒干即得含有绣球菌粉丝。
实施例2
一种含有绣球菌的粉丝由绣球菌、猴头菌、鸡腿菇、红菇、金针菇、香菇、羊肚菌、茶树菇、榛菇、白灵菇、大秃马勃、姬松茸、长裙竹荪、大米按如下方法制成:
(1)粉碎:将绣球菌、猴头菌、鸡腿菇、红菇、金针菇、香菇、羊肚菌、茶树菇、榛菇、白灵菇、大秃马勃、姬松茸、长裙竹荪等干品分别置于超微粉碎机中进行超微粉碎;
(2)配浆:步骤(1)所得的各超微粉以质量份计,按绣球菌1份、猴头菌3份、鸡腿菇2份、红菇3份、金针菇1份、香菇3份、羊肚菌1份、茶树菇1份、榛菇2份、白灵菇1份、大秃马勃2份、姬松茸2份、长裙竹荪3份混合后,置于20倍质量份的水中,搅拌混匀,煮沸10min,冷却至室温;
(3)打磨米浆:将大米按浸泡比250g:1L浸泡于步骤(2)所得的浆液中,浸泡10h后,将大米与浆汁打磨成混合米浆;
(4)制备粉丝:将混合浆汁通过制粉机制作成粉丝,按照常规的方法将粉丝晒干即得含有绣球菌粉丝。
实施例3
一种含有绣球菌的粉丝由绣球菌、猴头菌、鸡腿菇、红菇、金针菇、香菇、羊肚菌、茶树菇、榛菇、白灵菇、大秃马勃、姬松茸、长裙竹荪、大米按如下方法制成:
(1)粉碎:将绣球菌、猴头菌、鸡腿菇、红菇、金针菇、香菇、羊肚菌、茶树菇、榛菇、白灵菇、大秃马勃、姬松茸、长裙竹荪等干品分别置于超微粉碎机中进行超微粉碎;
(2)配浆:步骤(1)所得的各超微粉以质量份计,按绣球菌2份、猴头菌4份、鸡腿菇3份、红菇5份、金针菇3份、香菇5份、羊肚菌3份、茶树菇2份、榛菇4份、白灵菇2份、大秃马勃3份、姬松茸4份、长裙竹荪4份混合后,置于24倍质量份的水中,搅拌混匀,煮沸25min,冷却至室温;
(3)打磨米浆:将大米按浸泡比500g:4L浸泡于步骤(2)所得的浆液中,浸泡12h后,将大米与浆汁打磨成混合米浆;
(4)制备粉丝:将混合浆汁通过制粉机制作成粉丝,按照常规的方法将粉丝晒干即得含有绣球菌粉丝。
实施例4
一种含有绣球菌的粉丝由绣球菌、猴头菌、鸡腿菇、红菇、金针菇、香菇、羊肚菌、茶树菇、榛菇、白灵菇、大秃马勃、姬松茸、长裙竹荪、大米按如下方法制成:
(1)粉碎:将绣球菌、猴头菌、鸡腿菇、红菇、金针菇、香菇、羊肚菌、茶树菇、榛菇、白灵菇、大秃马勃、姬松茸、长裙竹荪等干品分别置于超微粉碎机中进行超微粉碎;
(2)配浆:步骤(1)所得的各超微粉等质量份混合后,置于23倍质量份的水中,搅拌混匀,煮沸20min,冷却至室温;
(3)打磨米浆:将大米按浸泡比500g:3L浸泡于步骤(2)所得的浆液中,浸泡11h后,将大米与浆汁打磨成混合米浆;
(4)制备粉丝:将混合浆汁通过制粉机制作成粉丝,按照常规的方法将粉丝晒干即得含有绣球菌粉丝。
Claims (5)
1.一种含有绣球菌的粉丝,其特征在于,其原料由绣球菌、猴头菌、鸡腿菇、红菇、金针菇、香菇、羊肚菌、茶树菇、榛菇、白灵菇、大秃马勃、姬松茸、长裙竹荪、大米组成。
2.根据权利要求1所述的一种含有绣球菌的粉丝的制备方法,其特征在于,包括以下步骤:
(1)粉碎:将绣球菌、猴头菌、鸡腿菇、红菇、金针菇、香菇、羊肚菌、茶树菇、榛菇、白灵菇、大秃马勃、姬松茸、长裙竹荪等干品分别置于超微粉碎机中进行超微粉碎;
(2)配浆:步骤(1)所得的各超微粉按比例混合,置于20~25倍质量份的水中,搅拌混匀,煮沸10~30min,冷却至室温;
(3)打磨米浆:将大米按量浸泡于步骤(2)所得的浆液中,浸泡10~12h后,将大米与浆汁打磨成混合米浆;
(4)制备粉丝:将混合浆汁通过制粉机制作成粉丝,按照常规的方法将粉丝晒干即得含有绣球菌粉丝。
3.根据权利要求2所述的一种含有绣球菌的粉丝的制备方法,其特征在于,所述的步骤(2)中,各超微粉按如下质量份混合:绣球菌1~3份、猴头菌3~5份、鸡腿菇2~4份、红菇3~7份、金针菇1~5份、香菇3~6份、羊肚菌1~4份、茶树菇1~3份、榛菇2~5份、白灵菇1~3份、大秃马勃2~4份、姬松茸2~5份、长裙竹荪3~5份。
4.根据权利要求3或2所述的一种含有绣球菌的粉丝的制备方法,其特征在于,步骤(2)中,各超微粉等质量份混合。
5.根据权利要求2所述的一种含有绣球菌的粉丝,其特征在于,步骤(4)中大米与浆液浸泡比为500g:2~5L。
