本发明目的是提供一种利用人参制作具有保健功能蜜枣的加工方法。该制作将鲜人参和大枣为原料进过粉碎、超声波萃取、固液分离、溶液均质、膜分离、真空浸渍等技术。将具有强壮滋补、护肤美容功效的人参溶液融入到大枣中,提高大枣抗衰老功能的加工方法。
该方法利用超声波空化作用加速人参有效成分的浸出萃取,超声波的次级效应,机械振动、乳化、扩散、粉碎等加速萃取成分的扩散释放。超声波萃取技术具有方法简单,萃取效率高,低耗高效,温度低、时间短、处理量大,有效成分易于分离等优点,超声波萃取技术更能够避免高温、高压对有效成分的破坏。
将人参萃取溶液通过膜分离技术:采用微滤对细菌以及浮悬物进行分离,以达到净化、分离浓缩的目的。最大程度地保护了人参溶液的色泽和风味、营养物质和有效成分。

本发明的有益效果:应用超声波萃取辅助真空浸渍等技术制作人参蜜枣与传统的加工工艺比较效率可提高数倍,同时在常温下萃取,最大限度保证萃取的质量。微滤膜能对细菌以及污染物进行分离,以达到净化、分离、浓缩的目的。本发明人参蜜枣适用于调整血压、恢复心脏,具有补血养颜、补中益气,养血安神之功效。使皮肤洁白光滑,能增强皮肤弹性,使细胞获得新生,是护肤美容的极品。长期服用强壮滋补,增强记忆力和延缓衰老的功效。食用方便、便于保存的优点。
具体实施方案
本发明所述的一种利用人参制作具有保健功能蜜枣的加工方法,采用中药鲜人参和大枣为原料按照下列步骤进行:
(1)、大枣处理:挑选出畸形枣、虫枣、过熟枣,经挑选后的大枣去核分等级投入切枣机内,深度以达到果肉厚度2~3min,切缝后的大枣置入竹箩筐内,放在清水中洗净,沥干水分备用;
(2)、人参处理:将鲜人参除去杂物和泥土,用清水漂洗干净后,浸泡在3.5%的乳酸溶液中,浸泡5~8min,用清水冲洗去人参块根上的药液,送入中药粉碎机将人参粉碎成1~2.5mm的颗粒;
(3)、强化萃取:将粉碎后的人参颗粒与等重量的纯净水,一起放入超声波多功能萃取罐内,开启萃取设备将温度加热至65~75℃,功率超声波强化萃取35~55min,保持时间为6~10min;
(4)、固液分离:用离心分离机对人参萃取溶液进行固液分离,除去悬浮物和药渣,分离后得到无渣的人参溶液,离心机转速控制在1500~2000r/Minf范围内,离心时间为3~6min;
(5)、溶液均质:按重量份比称取人参溶液48份,蔗糖52份,送入均质机内,开启均质机的调节压力为3.5~5MPa,温度控制在60~70℃下进行均质,均质时间为4~6min;
(6)、膜分离:把均质后的人参糖溶液放入微滤机内,选用微滤孔径在0.5~13μm的微孔滤膜,温度控制在55~65℃,操作压力0.1~0.6MPa下进行微滤;
(7)、真空浸渍:按重量份比称取预处理的大枣45份,微滤过的人参糖溶液55份,放入真空浸渍罐中,真空浸渍罐的真空压力调节至155~355KPa,浸渍罐温度控制在55~65℃,真空浸渍时间为6~12min;
(8)、鼓风干燥:将真空浸渍后的人参蜜枣从真空浸渍罐里捞起,沥去蜜枣表面的人参糖溶液,放入电热恒温鼓风干燥箱,开启鼓风机将温度控制在150~180℃,当人参蜜枣表面不粘手,停止电热恒温鼓风干燥箱工作,送入无菌室内进行无菌包装。
Claims (1)
1.本发明所述的一种利用人参制作具有保健功能蜜枣的加工方法,其特征是按照下列步骤进行:
(1)、大枣处理:挑选出畸形枣、虫枣、过熟枣,经挑选后的大枣去核分等级投入切枣机内,深度以达到果肉厚度2~3min,切缝后的大枣置入竹箩筐内,放在清水中洗净,沥干水分备用;
(2)、人参处理:将鲜人参除去杂物和泥土,用清水漂洗干净后,浸泡在3.5%的乳酸溶液中,浸泡5~8min,用清水冲洗去人参块根上的药液,送入中药粉碎机将人参粉碎成1~2.5mm的颗粒;
