目前,我国市场上的瑞士糖营养价值低,不具有保健功能,将瑞士糖与润肺食材相结合,增加瑞士糖的滋养润肺功能,能够明显扩大瑞士糖的市场需求量。
发明内容
为了弥补已有技术的缺陷,本发明的目的是提供一种滋养润肺瑞士糖。
一种滋养润肺瑞士糖,由以下重量份的原料制成:砂糖25~27、低聚木糖18~20、低聚异麦芽糖18~20、低聚龙胆糖16~18、水9~11、柿子8~10、百合8~10、梨8~10、鸭蛋5~7、中药6~8、奶油6~8、氢化棕榈油2~4、玉米淀粉1~3、结冷胶1~2、魔芋胶1~2、柠檬酸0.4~0.6、溶菌酶0.02~0.04。
所述的中药,由以下重量份的中药组成:鱼腥草42~46、丝瓜花31~35、三色堇24~26、玉竹24~26、白果20~24、独角莲20~24、紫苑16~18、前胡16~18、百药煎12~14、海浮石12~14。
所述的奶油,含水量为奶油总重量的9~11%(w/w)。
一种滋养润肺瑞士糖的制备方法,其具体步骤为:
(1)向砂糖中加水,搅拌至完全溶化,过140~160目筛,加热,70~80℃熬煮40~50分钟,加热至90~100℃,熬煮20~30分钟,加热至125~130℃,熬煮10~15分钟,将温度降至115~120℃,加入低聚木糖、低聚异麦芽糖和低聚龙胆糖,熬煮15~20分钟,得混合糖浆;
(2)将柿子和梨洗净,去皮,打浆,60~80目筛过滤,得滤液,10000~12000转/分钟,离心10~15分钟,得果汁;
(3)将鸭蛋洗净,去壳,捣碎,过120~140目筛,加入奶油和氢化棕榈油,加热至78~84℃,混合均匀,得奶油混合物;
(4)将中药粉碎,过100~120目筛,加入中药重量2~3倍量的水,加热煮沸,小火煎煮50~70分钟,过滤,得中药提取液和中药渣,向中药渣中加入中药渣重量2~3倍量的体积分数为70~74%(v/v)的酒精溶液,90~95℃超声提取50~60分钟,6000~8000转/分钟,离心5~7分钟,得中药提取液和中药渣,合并所有中药提取液,70~80℃烘干至无水分,得中药提取物;
(5)向果汁中加入柠檬酸,搅拌至完全溶化,加入玉米淀粉、结冷胶和魔芋胶,浸泡8~12小时,加入步骤(1)得到的混合糖浆中,保持110~115℃,熬煮20~25分钟,待温度降至100~105℃,加入奶油混合物和中药提取物,搅拌15~20分钟,待温度降至75~80℃,加入百合和溶菌酶,混合均匀,得混合料;
(6)将混合料取出,置于46~48℃烘箱中,老化6~8小时,取出,挤压成型,得糖块,置于-38~-36℃的真空冷冻干燥机中进行冷冻干燥,至含水量为糖块重量的6~8%(w/w),得滋养润肺瑞士糖;
(7)包装,得成品。
所述步骤(7)的包装,紧贴着瑞士糖的最里层包装纸,为魔芋胶制备的可食性包装纸。
柿子:止血凉血,清热去燥,润肺化痰,活血降压,解酒。
百合:清热消炎,润肺止咳,利咽消肿,宁心安神,美容养颜,防癌抗癌,对肺热干咳、痰中带血、肺弱气虚、肺结核咯血等症,都有良好的疗效。
梨:生津、润燥、清热、化痰,适用于热病,伤津烦渴,消渴症,热咳,痰热惊狂,噎膈,口渴失音,眼赤肿痛,消化不良。
鸭蛋:补阴,清热,用于阴虚肺燥,咳嗽,咽干,肺胃津伤,口渴。
鱼腥草:提高机体免疫力,抗菌消炎,抗病毒,抗病原微生物,抗辐射,抗癌,镇痛,镇咳,治疗肺炎、肺脓疡、慢性气管炎、百日咳、钩端螺旋体、化脓性关节炎、痢疾、感冒发烧。
丝瓜花:清热解毒,化痰止咳,用于肺热咳嗽,咽痛,鼻窦炎,痔疮。
三色堇:抗菌消炎,清热解毒,散瘀,止咳,利尿。
玉竹:美容护肤,强心,润肺清热,抗氧化,抗衰老,降血糖,降血脂,抗菌消炎,治燥热咳嗽,虚劳久嗽,内热消渴,寒热鼻塞,头目昏眩,筋脉挛痛。
白果:抑菌杀菌,祛疾止咳,抗涝抑虫,止带浊,缩小便,降低血清胆固醇,扩张冠状动脉,美容护肤,抗衰老。
独角莲:燥湿化痰,祛痰通络,祛风止痉,解毒,散结止痛。
紫苑:润肺下气,化痰止咳,主咳嗽,肺虚劳嗽,肺痿肺痈,咳吐脓血,小便不利,痰多喘咳,新久咳嗽,劳嗽咳血。
前胡:具有降气化痰,散风清热的功效。用于痰热喘满,咯痰黄稠,风热咳嗽痰多。
百药煎:润肺化痰,生津止渴,治久咳痰多,肺胀,喘咳不休,咽痛,口疮。
海浮石:清肺化痰,软坚散结,治痰热喘嗽,老痰积块,瘿瘤,疝气,疮肿,痰稠色黄,咯血,支气管炎,淋巴结结核。
本发明的优点是:本发明提供的一种滋养润肺瑞士糖,配方科学,油水比例合理,热稳定性好,高温不出水、不变形,口感酸甜,风味清香、细腻;富含多种滋养润肺食材和中药,利于消化吸收,保健功能全面,能够抗氧化,抗衰老,增强免疫力,排毒,抗癌,清肺化痰,祛疾止咳;果汁增加瑞士糖的水果口味,营养丰富,不含香精和添加剂,天然健康;先将糖溶化、过滤,再分阶段进行熬制,加入一定比例的玉米淀粉、结冷胶和魔芋胶,得到的糖体细腻、柔软、不黏牙;经真空冷冻干燥调节水分,使糖果气孔均匀,细密,咀嚼性好,速度快,节省搅打和冷却时间,工作效率高;加入整片百合花瓣,切割后瑞士糖里可见清晰花瓣,给消费者带来突出的视觉感受;最里层包装纸为魔芋胶可食性纸,避免了粘纸的可能性;加入功能性低聚糖,减少砂糖的使用量,能够促进肠道益生菌的生长,减小龋齿的发生率;熬糖降温后加入百合和溶菌酶,保持营养成分和风味,香甜可口,进行天然杀菌防腐,货架期长,不含防腐剂,安全健康。
具体实施方式
下面用具体实施例说明本发明,但并不是对本发明的限制。
实施例1
一种滋养润肺瑞士糖,由以下重量份的原料制成:砂糖25、低聚木糖18、低聚异麦芽糖18、低聚龙胆糖16、水9、柿子8、百合8、梨8、鸭蛋5、中药6、奶油6、氢化棕榈油2、玉米淀粉1、结冷胶1、魔芋胶2、柠檬酸0.4、溶菌酶0.02。
所述的中药,由以下重量份的中药组成:鱼腥草42、丝瓜花31、三色堇24、玉竹24、白果20、独角莲20、紫苑16、前胡16、百药煎12、海浮石12。
所述的奶油,含水量为奶油总重量的9%(w/w)。
一种滋养润肺瑞士糖的制备方法,其具体步骤为:
(1)向砂糖中加水,搅拌至完全溶化,过140目筛,加热,70℃熬煮40分钟,加热至90℃,熬煮20分钟,加热至125℃,熬煮10分钟,将温度降至115℃,加入低聚木糖、低聚异麦芽糖和低聚龙胆糖,熬煮15分钟,得混合糖浆;
(2)将柿子和梨洗净,去皮,打浆,60目筛过滤,得滤液,10000转/分钟,离心10分钟,得果汁;
(3)将鸭蛋洗净,去壳,捣碎,过120目筛,加入奶油和氢化棕榈油,加热至78℃,混合均匀,得奶油混合物;
(4)将中药粉碎,过100目筛,加入中药重量2倍量的水,加热煮沸,小火煎煮50分钟,过滤,得中药提取液和中药渣,向中药渣中加入中药渣重量2倍量的体积分数为70%(v/v)的酒精溶液,90℃超声提取50分钟,6000转/分钟,离心5分钟,得中药提取液和中药渣,合并所有中药提取液,70℃烘干至无水分,得中药提取物;
(5)向果汁中加入柠檬酸,搅拌至完全溶化,加入玉米淀粉、结冷胶和魔芋胶,浸泡8小时,加入步骤(1)得到的混合糖浆中,保持110℃,熬煮20分钟,待温度降至100℃,加入奶油混合物和中药提取物,搅拌15分钟,待温度降至75℃,加入百合和溶菌酶,混合均匀,得混合料;
(6)将混合料取出,置于46℃烘箱中,老化6小时,取出,挤压成型,得糖块,置于-36℃的真空冷冻干燥机中进行冷冻干燥,含水量为糖块重量的6%(w/w),得滋养润肺瑞士糖;
(7)包装,得成品。
实施例2
一种滋养润肺瑞士糖,由以下重量份的原料制成:砂糖26、低聚木糖19、低聚异麦芽糖19、低聚龙胆糖17、水10、柿子9、百合9、梨9、鸭蛋6、中药7、奶油7、氢化棕榈油3、玉米淀粉2、结冷胶1.5、魔芋胶1.5、柠檬酸0.5、溶菌酶0.03。
所述的中药,由以下重量份的中药组成:鱼腥草44、丝瓜花33、三色堇25、玉竹25、白果22、独角莲22、紫苑17、前胡17、百药煎13、海浮石13。
所述的奶油,含水量为奶油总重量的10%(w/w)。
一种滋养润肺瑞士糖的制备方法,其具体步骤为:
(1)向砂糖中加水,搅拌至完全溶化,过150目筛,加热,75℃熬煮45分钟,加热至95℃,熬煮25分钟,加热至128℃,熬煮13分钟,将温度降至118℃,加入低聚木糖、低聚异麦芽糖和低聚龙胆糖,熬煮18分钟,得混合糖浆;
(2)将柿子和梨洗净,去皮,打浆,70目筛过滤,得滤液,11000转/分钟,离心13分钟,得果汁;
(3)将鸭蛋洗净,去壳,捣碎,过130目筛,加入奶油和氢化棕榈油,加热至81℃,混合均匀,得奶油混合物;
(4)将中药粉碎,过110目筛,加入中药重量2.5倍量的水,加热煮沸,小火煎煮60分钟,过滤,得中药提取液和中药渣,向中药渣中加入中药渣重量2.5倍量的体积分数为72%(v/v)的酒精溶液,93℃超声提取55分钟,7000转/分钟,离心6分钟,得中药提取液和中药渣,合并所有中药提取液,75℃烘干至无水分,得中药提取物;
(5)向果汁中加入柠檬酸,搅拌至完全溶化,加入玉米淀粉、结冷胶和魔芋胶,浸泡10小时,加入步骤(1)得到的混合糖浆中,保持113℃,熬煮23分钟,待温度降至103℃,加入奶油混合物和中药提取物,搅拌18分钟,待温度降至78℃,加入百合和溶菌酶,混合均匀,得混合料;
(6)将混合料取出,置于47℃烘箱中,老化7小时,取出,挤压成型,得糖块,置于-37℃的真空冷冻干燥机中进行冷冻干燥,含水量为糖块重量的7%(w/w),得滋养润肺瑞士糖;
(7)包装,得成品。
实施例3
一种滋养润肺瑞士糖,由以下重量份的原料制成:砂糖27、低聚木糖20、低聚异麦芽糖20、低聚龙胆糖18、水11、柿子10、百合10、梨10、鸭蛋7、中药8、奶油8、氢化棕榈油4、玉米淀粉3、结冷胶2、魔芋胶2、柠檬酸0.6、溶菌酶0.04。
所述的中药,由以下重量份的中药组成:鱼腥草46、丝瓜花35、三色堇26、玉竹26、白果24、独角莲24、紫苑18、前胡18、百药煎14、海浮石14。
所述的奶油,含水量为奶油总重量的11%(w/w)。
一种滋养润肺瑞士糖的制备方法,其具体步骤为:
(1)向砂糖中加水,搅拌至完全溶化,过160目筛,加热,80℃熬煮50分钟,加热至100℃,熬煮30分钟,加热至130℃,熬煮15分钟,将温度降至120℃,加入低聚木糖、低聚异麦芽糖和低聚龙胆糖,熬煮20分钟,得混合糖浆;
(2)将柿子和梨洗净,去皮,打浆,80目筛过滤,得滤液,12000转/分钟,离心15分钟,得果汁;
(3)将鸭蛋洗净,去壳,捣碎,过140目筛,加入奶油和氢化棕榈油,加热至84℃,混合均匀,得奶油混合物;
(4)将中药粉碎,过120目筛,加入中药重量3倍量的水,加热煮沸,小火煎煮70分钟,过滤,得中药提取液和中药渣,向中药渣中加入中药渣重量3倍量的体积分数为74%(v/v)的酒精溶液,95℃超声提取60分钟,8000转/分钟,离心7分钟,得中药提取液和中药渣,合并所有中药提取液,80℃烘干至无水分,得中药提取物;
(5)向果汁中加入柠檬酸,搅拌至完全溶化,加入玉米淀粉、结冷胶和魔芋胶,浸泡12小时,加入步骤(1)得到的混合糖浆中,保持115℃,熬煮25分钟,待温度降至105℃,加入奶油混合物和中药提取物,搅拌20分钟,待温度降至80℃,加入百合和溶菌酶,混合均匀,得混合料;
(6)将混合料取出,置于48℃烘箱中,老化8小时,取出,挤压成型,得糖块,置于-38℃的真空冷冻干燥机中进行冷冻干燥,含水量为糖块重量的8%(w/w),得滋养润肺瑞士糖;
(7)包装,得成品。
对比例
市售普通瑞士糖。
实施例滋养润肺瑞士糖的感官评定:
随机选择18~65岁的受试者30位,每位受试者品尝后,对各项进行打分,各项满分为10分,结果取30位受试者的平均分。实施例滋养润肺瑞士糖的感官评定结果见表1。

从表1的结果可以看出,实施例的滋养润肺瑞士糖,色泽均一,无斑纹,滋味纯正,清香适中,气孔均匀、细密,不黏牙,不粘纸,细腻,柔软,耐咀嚼,无肉眼可见杂质,符合国家标准。
实施例和对比例瑞士糖的滋养润肺功能:
有效:咳嗽、痰中带血、胸闷、胸痛、气促、精神萎靡、烦躁不安等症状消失或减轻;
无效:咳嗽、痰中带血、胸闷、胸痛、气促、精神萎靡、烦躁不安等症状不变或加重。
随机选择具有肺部症状的患者400名,随机分为4组,每组100人,每人在受试期间不刻意服用滋养润肺的药品和食品,每人每天食用该组的瑞士糖30克,受试时间为30天,实施例和对比例瑞士糖的滋养润肺效果见表2。

从表2可以看出,实施例的滋养润肺瑞士糖的减轻肺部症状的有效率明显较对比例高,说明本发明提供的滋养润肺瑞士糖能够明显减轻肺部疾病和症状。
典型病例:
(1)患者李某,男,48岁,咳嗽、胸闷、胸痛、气促、精神萎靡。食用本发明提供的滋养润肺瑞士糖,每天30克,10天后咳嗽减轻,精神状态得到改善,30天后胸闷、胸痛、气促症状明显减轻。
(2)患者牛某,男,56岁,咳嗽、痰中带血、胸闷、胸痛、气促、精神萎靡。食用本发明提供的滋养润肺瑞士糖,每天30克,15天后痰中血丝减少,精神状态得到改善,30天后胸闷、胸痛、气促症状得到明显改善。
(3)患者章某,男,58岁,咳嗽、痰中带血、胸闷、胸痛、气促、精神萎靡、烦躁不安。食用本发明提供的滋养润肺瑞士糖,每天30克,30天后痰少,无血丝,胸闷、胸痛、气促、精神萎靡、烦躁不安症状明显减轻,精神焕发。
Claims (5)
1.一种滋养润肺瑞士糖,其特征在于,由以下重量份的原料制成:砂糖25~27、低聚木糖18~20、低聚异麦芽糖18~20、低聚龙胆糖16~18、水9~11、柿子8~10、百合8~10、梨8~10、鸭蛋5~7、中药6~8、奶油6~8、氢化棕榈油2~4、玉米淀粉1~3、结冷胶1~2、魔芋胶1~2、柠檬酸0.4~0.6、溶菌酶0.02~0.04。
2.根据权利要求1所述的滋养润肺瑞士糖,其特征在于,所述的中药,由以下重量份的中药组成:鱼腥草42~46、丝瓜花31~35、三色堇24~26、玉竹24~26、白果20~24、独角莲20~24、紫苑16~18、前胡16~18、百药煎12~14、海浮石12~14。
3.根据权利要求1所述的滋养润肺瑞士糖,其特征在于,所述的奶油,含水量为奶油总重量的9~11%(w/w)。
4.根据权利要求1所述的滋养润肺瑞士糖的制备方法,其特征在于,具体包括以下步骤:
(1)向砂糖中加水,搅拌至完全溶化,过140~160目筛,加热,70~80℃熬煮40~50分钟,加热至90~100℃,熬煮20~30分钟,加热至125~130℃,熬煮10~15分钟,将温度降至115~120℃,加入低聚木糖、低聚异麦芽糖和低聚龙胆糖,熬煮15~20分钟,得混合糖浆;
(2)将柿子和梨洗净,去皮,打浆,60~80目筛过滤,得滤液,10000~12000转/分钟,离心10~15分钟,得果汁;

(7)包装,得成品。
5.根据权利要求4所述的滋养润肺瑞士糖的制备方法,其特征在于,所述步骤(7)的包装,紧贴着瑞士糖的最里层包装纸,为魔芋胶制备的可食性包装纸。
