本发明涉及一种保健品,特别涉及一种油松针酵素及制作方法。
背景技术:
酵素是一种非常特殊的复杂蛋白质,它是人体中负责新陈代谢的各种化学变化中最重要的酶介质之一,换句话说,如果体内没有酵素,就不会有化学变化,自然也无法进行新陈代谢,当然就没有生命。酵素是生命中不可或缺的物质,生活中的许多疾病都是由于体内酵素缺乏,毒素堆积,从健康到亚健康,再从亚健康到小病,久而久之小病变成大病。只有体内酵素充足,身体新陈代谢活跃,生命才会活力四射。而事实上,随着年龄增长以及不良的饮食生活习惯,人体自身产生的酵素越来越不能满足需求,因此需要从食物中摄取足够的酵素。酵素,英文名称Enzyme,又称植物综合性酶,也就是俗称的酶,具有惊人的催化能力,是人体必不可少的催化剂。迄今为止,科学家已经发现了3000多种酵素,其中已经命名得有700多种,被提纯并结晶的有100多种,作为商品生产的有120多种,各种各样的酵素因为其消化、消炎、抗菌、分解、还原、转移、凝血、解糖、解胶、防御、再生等千变万化的功能,在食品、医药等数十个行业发挥着巨大作用,使生物能在大自然中延续生命。酵素的作用包括提高免疫力、促进营养吸收、养颜、预防现代文明病的发生、平衡、抗炎、分解消化、净化、新生、新陈代谢、热能、净化血液、抗菌防御和解酒作用。
此外,酵素还有减肥、消除疲劳、改善肌肤、帮助睡眠、肠胃道疾病、调节女性生理、改善过敏症状、改善便秘的作用。目前,酵素的品种包括:果蔬酵素、细菌酵素和海洋酵素,其中:果蔬酵素多含在水果蔬菜中,山楂、菠萝、黄豆芽、木瓜、大蒜、红薯等含量比较丰富;细菌酵素多含在酵母、面包、馒头、豆腐乳、面酱、醪糟、酸奶、啤酒中,其中以酸奶、酵母中酵素最多,使用也最方便;海洋酵素多含在海藻、海带、石花菜、裙带菜、鱼虾等海产品中,平时应多吃鱼虾和海带。
油松,松柏科植物,原生于中国,固含有氨基酸、维生素微量元素、花青素、黄酮、挥发油类、树脂、纤维素、叶绿素、超氧化物歧化酶等特殊营养成分是任何植物所无法比拟的,有着比一般植物更佳超强的抗氧化活性。油松针具有缓解疲劳、延缓衰老、增强记忆力,促进心脑血管健康、预防癌症、高血压、高血脂、糖尿病等药性疗效,是健康长寿食品,在河北北方中高海拔地区生长的油松,昼夜温差大,光照充足,无污染,品质好,其经发酵后的油松针酵素更是功效甚佳。目前,国内还没有油松酵素生产和技术方面的相关报道。
发明内容
本发明的目的是针对现有技术的不足,提供一种油松针酵素及制作方法,所要解决的技术问题是确定合理的成分与配比及其制作工艺,本发明所采取的技术方案如下:
本发明由如下成分按重量配比组成:
油松针5~10份酵母菌0.2份蜂蜜1~3份
水果2~4份水30~35份
本发明的制作方法如下:
(1)酵母菌的活化与扩大培养
在无菌条件下,挑取酵母菌菌种于牛肉膏蛋白胨固体培养基上,于35℃恒温培养48天后,选择活性较强的酵母菌在液体培养基中进行扩大培养并进行二次扩培;
(2)将油松针、苹果分别在水中漂洗干净后取出;
(3)在专用沥干槽中沥干油松针、苹果表面水分。
(4)将油松针、苹果分别进行粗粉碎,其中油松针颗粒小于2毫米,苹果颗粒小于5毫米,在粉碎好的油松针、苹果中加入酵母菌、蜂蜜混匀,加水后装入发酵容器中,把容器口封紧,发酵熟成室的室内维持36.5℃恒温,混合液的液温维持在38℃~40℃,发酵熟成至少90天,得到油松针酵素原液。
与现有技术相比,本发明油松针发酵主要是利用糖在酵母菌的作用下,分解为酒精、二氧化碳、水和芳香物质,从而制得滋味酸甜、口感醇香的油松针酵素。油松针酵素的抗氧化性能主要来自发酵过程,油松针在微生物的作用下进行发酵,发酵液中有机酸浓度增加使发酵液的pH值在4左右,酸性环境导致蛋白质水解为氨基酸。与此同时,酵母菌将油松针中丰富而又复杂的大分子酚类物质转化成小分子,总酚含量升高,酚类物质很容易给出一个氢离子并通过共振杂化而稳定,使油松针酵素DPPH自由基清除能力显著提高。另外,黄酮化合物分子的A环和B环上的多羟基取代和自由基的3-羟基取代可以增加酵素的超氧自由基的清除能力。同时,油松针酵素在发酵过程中的抗氧化成分增加,其还原能力也显著增强。本发明得到的油松针酵素最大限度的保留了有效成分的活性及功能,可以中和人体内多余的自由基、抗氧化、提高免疫力、延缓衰老、缓解疲劳、促进生长发育,促进心脑血管健康,达到美容美颜、强身健体、减肥、降血脂、降血清胆固醇,调整机体代谢,促进造血机能之功效。油松酵素原液香气口味纯正,糖≤6克/升,总酸12克/升~17克/升。

2.一种权利要求1所述油松针酵素的制作方法,其特征在于包括如下步骤:
(1)酵母菌的活化与扩大培养
