技术领域
本发明涉及一种食品的加工方法,尤其是涉及一种香菇复合保健精粉的制作方法。
背景技术
香菇,又名冬菇、香蕈、北菇、厚菇、薄菇、椎茸,是一种食用真菌。菌肉白色,稍厚,细密,具香味。幼时边缘内卷,有白色的绒毛,随着生长而消失。菌盖下面有菌幕,后破裂,形成不完整的菌环。老熟后盖缘反卷,开裂。菌褶白色,密,弯生,不等长。菌柄常偏生,白色,弯曲,菌环以下有纤毛状鳞片,纤维质,内部实心。孢子光滑,无色,椭圆形至卵圆形,用孢子生殖。
香菇的作用:1.提高机体免疫功能:香菇多糖可促进淋巴细胞的产生,并提高淋巴细胞的杀伤活性;2.延缓衰老:香菇的水提取物对过氧化氢有清除作用,对人体内的过氧化氢有一定的消除作用;3.防癌抗癌:香菇菌盖部分含有双链结构的核糖核酸,进入人体后,会产生具有抗癌作用的干扰素;4.降血压、降血脂、降胆固醇:香菇中含有嘌呤、胆碱、酪氨酸、氧化酶以及某些核酸物质,能起到降血压、降胆固醇、降血脂的作用,又可预防动脉硬化、肝硬化等疾病。
香菇的生长周期短,不易贮藏,且营养价值非常高,用于加工成香菇复合保健精粉可实现对香菇原料的综合利用,食用方便,且便于储存,提高其经济价值。
发明内容
本发明的目的是解决香菇生长周期短,不易贮藏的问题,提供一种香菇复合保健精粉的制作方法。
本发明解决其技术问题所采取的技术方案是:
一种香菇复合保健精粉的制作方法,其特征在于:采用选料→清洗→提取原液→原液合并离心→真空浓缩→配料→保温→喷雾干燥→冷却包装→成品的加工工艺流程,具体操作步骤为:
(1)选料、清洗:选无霉变、无虫蛀、未经硫黄熏蒸的香菇、银耳干品,然后用清水快速冲洗去杂,捞出沥水备用;
(2)提取原液:将洗净的香菇、银耳加入6倍清水,在玻璃钢夹层锅中加热至沸腾45min,经纱布过滤提取第一次原液;再将料渣入锅,加3倍清水,加热至沸35min,经纱布提取第二次原液;
(3)离心浓缩:将两次提取的原液合并,混匀后经离心机精滤,弃渣取得原液,再经真空机浓缩,真空度为75.66千帕,进料浓度为12波美度,浓缩为18波美度;
(4)配料、加温:将浓缩液加入45%的蔗糖、10%甘草、芦根粉3%、5%可可粉、2%牛蒡提取液、3%的干燥助剂糊精粉,充分搅拌使其溶解,配成浓度为22波美度的溶液,在玻璃钢夹层锅中加温至85℃;
(5)喷雾干燥:将调配好的浓缩液,采用高压喷雾设备进行喷雾干燥,进料温度为65℃,高压泵工作压力为121.5千帕,进风温度为120℃,出风温度为102℃,干燥后呈块状,粉碎过150目筛,既得香菇精粉;
(6)冷却包装:将干燥后的精粉置于清洁干燥的包装室内迅速冷却,先用聚丙烯复合袋包装,封口,再用纸盒进行包装,即为成品。
有益效果:本发明产品为浅咖啡色,呈疏松颗粒状,速溶性好,具有香菇浓郁的清香和美味;本产品不仅营养丰富,易于消化,还可提高人体免疫力,具有延缓衰老、降压降脂、防癌抗癌的功效。食用方便,老少皆宜,是集保健食疗于一身的纯天然无公害的保健食品。
具体实施方式
实施例1:
一种香菇复合保健精粉的制作方法,具体操作步骤为:
(1)选料、清洗:选无霉变、无虫蛀、未经硫黄熏蒸的香菇、木耳干品,然后用清水快速冲洗去杂,捞出沥水备用;
(2)提取原液:将洗净的香菇加入10倍清水,在玻璃钢夹层锅中加热至沸腾3-5小时,经纱布过滤提取第一次原液;再将菇渣入锅,加6倍清水,加热至沸1-2小时,经纱布提取第二次原液;
(3)离心浓缩:将两次提取的原液合并,混匀后经离心机精滤,弃渣取得原液,再经真空机浓缩,真空度为78.66千帕,进料浓度为5波美度,浓缩为8波美度;
(4)配料、加温:将浓缩液加入45%的果糖、1%红参提取液、3%冰糖、5%银耳粉、2%的干燥助剂糊精粉,充分搅拌使其溶解,配成浓度为15波美度的溶液,在玻璃钢夹层锅中加温至65℃;
(5)喷雾干燥:将调配好的浓缩液,采用高压喷雾设备进行喷雾干燥,进料温度为65℃,高压泵工作压力为155.3千帕,进风温度为128℃,出风温度为75℃,干燥后呈块状,粉碎过160目筛,既得香菇精粉;
(6)冷却包装:将干燥后的香菇精粉置于清洁干燥的包装室内迅速冷却,先用聚丙烯复合袋包装,封口,再用纸盒进行包装,即为成品。
实施例2:
一种香菇复合保健精粉的制作方法,具体操作步骤为:
(1)选料、清洗:选无霉变、无虫蛀、未经硫黄熏蒸的香菇、羊肚菌干品,然后用清水快速冲洗去杂,捞出沥水备用;
(2)提取原液:将洗净的香菇加入6倍清水,在玻璃钢夹层锅中加热至沸腾3小时,经纱布过滤提取第一次原液;再将菇渣入锅,加3倍清水,加热至沸45min,经纱布提取第二次原液;
(3)离心浓缩:将两次提取的原液合并,混匀后经离心机精滤,弃渣取得原液,再经真空机浓缩,真空度为86.27千帕,进料浓度为12波美度,浓缩为15波美度;
(4)配料、加温:将浓缩液加入40%的红糖、2%饴糖、4%五味子提取液、2%百合粉、0.8%的干燥助剂糊精粉,充分搅拌使其溶解,配成浓度为20波美度的溶液,在玻璃钢夹层锅中加温至55℃;
(5)喷雾干燥:将调配好的浓缩液,采用高压喷雾设备进行喷雾干燥,进料温度为55℃,高压泵工作压力为152.5千帕,进风温度为108℃,出风温度为65℃,干燥后呈块状,粉碎过80目筛,既得香菇精粉;
(6)冷却包装:将干燥后的香菇精粉置于清洁干燥的包装室内迅速冷却,先用聚丙烯复合袋包装,封口,再用纸盒进行包装,即为成品。

1.一种香菇复合保健精粉的制作方法,其特征在于:采用选料→清洗→提取原液→原液合并离心→真空浓缩→配料→保温→喷雾干燥→冷却包装→成品的加工工艺流程,具体操作步骤为:
(1)选料、清洗:选无霉变、无虫蛀、未经硫黄熏蒸的香菇、银耳干品,然后用清水快速冲洗去杂,捞出沥水备用;
(2)提取原液:将洗净的香菇、银耳加入6倍清水,在玻璃钢夹层锅中加热至沸腾45min,经纱布过滤提取第一次原液;再将料渣入锅,加3倍清水,加热至沸35min,经纱布提取第二次原液;
