Abstract
一种阿胶补血紫薯条,由以下重量份原料制成:紫薯全粉400-430、大麦全粉60-70、木瓜60-70、红豆40-50、蜂王浆25-30、玉米汁50-60等;油炸薯条时会产生丙烯酰胺,这是一种致癌物质,利用果汁对薯条浸泡抑制丙烯酰胺的生成,本发明用木瓜汁浸泡过薯条,再进行油炸,能够有效抑制丙烯酰胺这种致癌物质的产生,添加红豆、红枣、阿胶,改善口感且能够达到很好的补益气血的效果,本发明采用油炸工艺且补血中药在补气血的同时可能会引起上火症状,因此特别添加淡竹叶、金银花等提取物,能清热泻火,有效缓解食用本发明薯条的上火症状。

技术领域
本发明涉及紫薯制品,尤其涉及一种阿胶补血紫薯条及其制备方法。
背景技术
紫薯富含花青素、硒和铁,能够防癌抗癌,是人体抗疲劳、抗衰老补血的必要元素,还能够清楚人体自由基,增强免疫力,紫薯能够制成各种副食品,口感好,市面上所售的紫薯制品品种不多见,不能够满足人们多紫薯这种营养食品的需求。
发明内容
本发明克服了现有技术不足,提供了一种阿胶补血紫薯条。
本发明是通过以下技术方案实现的:
一种阿胶补血紫薯条,由以下重量份原料制成:紫薯全粉400-430、大麦全粉60-70、木瓜60-70、红豆40-50、蜂王浆25-30、玉米汁50-60、乳酸菌2-3、红枣35-40、阿胶8-10、枸杞5-6、黄芪4-5、人参须2-3、淡竹叶4-5、金银花5-6、黑种草子2-3、食盐适量、蔗糖适量、大豆油适量。
一种阿胶补血紫薯条的制备方法,包括以下步骤:
(1)将红豆洗净,浸泡1-2小时,取出红豆,与蜂王浆、玉米汁混合,搅拌均匀后放入容器中,将容器放在蒸屉中,焖蒸至红豆粉沙,取出容器中所有物料,制成红豆沙,冷却至38-40℃,添加乳酸菌,搅拌均匀,将容器用保鲜膜密封,发酵5-6小时,得发酵红豆沙待用;
(2)将红枣洗净,去核,与阿胶混合放入锅中,加入适量的水,加热熬制,待溶液浓时,过滤,得滤液备用;
(3)将木瓜洗净,去皮去籽,所得木瓜果肉放入榨汁机中榨汁,得木瓜汁,按照果汁:纯净水为2:10的比例兑入纯净水,稀释待用;
(4)将枸杞、黄芪、人参须、淡竹叶、金银花、黑种草子磨碎,用5-10倍量的水加热提取,过滤,得滤液待用;
(5)将剩余原料中除水外的其他物料与发酵红豆沙、步骤2中的滤液、中药滤液合并,加适量水,充分搅拌成型,用制薯条机制成薯条,将薯条放入盛有稀释过的木瓜汁的容器中,浸泡1-1.5小时;
(6)将浸泡好的薯条取出,沥干水,用大豆油炸至焦脆即可。
与现有技术相比,本发明的优点是:
油炸薯条时会产生丙烯酰胺,这是一种致癌物质,利用果汁对薯条浸泡抑制丙烯酰胺的生成,本发明用木瓜汁浸泡过薯条,再进行油炸,能够有效抑制丙烯酰胺这种致癌物质的产生,添加红豆、红枣、阿胶,改善口感且能够达到很好的补益气血的效果,本发明采用油炸工艺且补血中药在补气血的同时可能会引起上火症状,因此特别添加淡竹叶、金银花等提取物,能清热泻火,有效缓解食用本发明薯条的上火症状。

下面结合实施例对本发明作进一步详细描述:

一种阿胶补血紫薯条,由以下重量份原料(Kg)制成:紫薯全粉400、大麦全粉60、木瓜60、红豆40、蜂王浆25、玉米汁50、乳酸菌2、红枣35、阿胶8、枸杞5、黄芪4、人参须2、淡竹叶4、金银花5、黑种草子2、食盐适量、蔗糖适量、大豆油适量。

1.一种阿胶补血紫薯条,其特征在于,由以下重量份原料制成:紫薯全粉400-430、大麦全粉60-70、木瓜60-70、红豆40-50、蜂王浆25-30、玉米汁50-60、乳酸菌2-3、红枣35-40、阿胶8-10、枸杞5-6、黄芪4-5、人参须2-3、淡竹叶4-5、金银花5-6、黑种草子2-3、食盐适量、蔗糖适量、大豆油适量。
2.如权利要求1所述的一种阿胶补血紫薯条的制备方法,其特征在于,包括以下步骤:
