本发明属于食品加工生物技术领域,涉及一种航天员专用合生元活性饮料及其制备工艺。
背景技术
航天员作为一种特殊的人群,工作在极端的航天环境条件下。在航天飞行过程中,由于受到微重力、电离辐射、磁场及昼夜节律变化的影响,航天员的消化道功能紊乱、免疫机能降低,处于稳态的生理平衡遭到破坏,因而会发生航天员肠道微生态的失调。主要表现为以双歧杆菌和乳杆菌等为代表的防御菌群数量下降,甚至消失,而大肠杆菌、梭状芽孢杆菌、变形杆菌、假单孢菌和其它条件致病菌增加。导致航天员体内环境紊乱和失调,甚至出现食欲不振、营养吸收不良、脂肪泻等,直接影响航天员的健康与工作效能。
发明内容
本发明的目的是提供一种航天员专用合生元活性饮料及其制备方法,既可补充体内的益生菌数量,又可以促进空间微重力状态下益生菌的生长,从而可以调整肠道微生态的失衡,适合在航天环境下食用。
本发明的目的是通过以下技术方案实现的:
一种航天员专用合生元活性饮料,由以下原辅料制成:山药50~60g、山楂15~20g、红枣10~15g、桂圆5~8g、低聚果糖0.1~0.15g、低聚异麦芽糖0.1~0.15g、大豆低聚糖0.1~0.15g、双歧杆菌0.2~0.3g、乳杆菌0.2~0.3g、水280mL。
一种上述航天员专用合生元活性饮料的制备工艺,在山药、山楂、红枣、桂圆提取液中加入低聚果糖、低聚异麦芽糖、大豆低聚糖这些益生因子,以及双歧杆菌、乳杆菌两种益生菌,经发酵培养获得目标产品。具体制备方法如下:
一、向浸提罐中加入山药50~60g、山楂15~20g、红枣10~15g、桂圆5~8g;
二、将100℃蒸馏水140mL,注入浸提罐中,搅拌,浸提1~5h ,过滤,得到滤液和滤渣;
三、将100℃蒸馏水140mL注入浸提罐与步骤二中的残渣混合,搅拌,浸提1~5h ,过滤,得到滤液和滤渣;
四、将步骤二和三中的滤液合并,加入低聚果糖0.1~0.15g、低聚异麦芽糖0.1~0.15g、大豆低聚糖0.1~0.15g,搅拌,过滤,得到滤液;
五、滤液在110~120℃灭菌5~20min;
六、待滤液冷却后,加入双歧杆菌0.2~0.3g、乳杆菌0.2~0.3g,30~50℃下培养24~36h,然后将滤液灌装,得到成品。
本发明中,所述每袋合生元活性饮料的体积为250mL。
本发明中,所述包装方法采用吸嘴铝箔饮料袋。
本发明的特点是以山药、山楂、红枣、桂圆为主料,以双歧杆菌、乳杆菌、低聚果糖、低聚异麦芽糖、大豆低聚糖为为辅料。上述原辅料的功效如下:
1、山药含有淀粉酶、多酚氧化酶等物质,有利于脾胃消化吸收功能;
2、山楂的功效: 山楂能够开胃消食,特别对消肉食积滞作用更好;山楂所含的黄酮类和维生素C、胡萝卜素等物质能阻断并减少自由基的生成,增强机体的免疫力;
3、红枣的功效:红枣含有大量糖类物质,包括葡萄糖、果糖、蔗糖、低聚糖等,并含有大量维生素C、核黄素、胡萝卜素等多种维生素,能提高人体免疫功能,增强抗病能力;红枣能够增加食欲,缓解紧张情绪;红枣可以补气养血;
4、桂圆肉中含有蛋白质、脂肪、糖类、有机酸、粗纤维及多种维生素及矿物质等,能够提高机体免疫力,增强机体素质;
5、双歧杆菌、乳杆菌的功效:维护肠道正常细菌菌群平衡,抑制病原菌的生长;在肠道内合成维生素、氨基酸和提高机体对钙离子的吸收;增强人体免疫机能;
6、低聚果糖、低聚异麦芽糖、大豆低聚糖能够改善人体内微生态环境,有利于双歧杆菌和其它有益菌的增殖,经代谢产生有机酸使肠内pH值降低,抑制条件致病菌的生长,调节胃肠功能,并增加维生素合成,提高人体免疫功能。
本发明可以促进失重状态下,肠道内益生菌的增殖,并对条件致病菌有一定抑制作用,调整肠道微生态的失衡,增加食欲,增强机体免疫力。本发明为一种胶态饮料,具有凝聚性好、口感好、适合在航天环境下食用的特点。

向浸提罐中加入山药50g、山楂15g、红枣10g、桂圆5g;
将100℃蒸馏水140mL注入浸提罐中,搅拌,浸提3h,过滤,得到滤液和滤渣;
将100℃蒸馏水140mL注入浸提罐与中残渣混合,搅拌,浸提3h,过滤,得到滤液和滤渣;
将和中滤液合并,加入低聚果糖0.1g、低聚异麦芽糖0.1g、大豆低聚糖0.1g,搅拌,过滤,得到滤液;
滤液在110℃灭菌15min;
待滤液冷却后,加入双歧杆菌0.2g、乳杆菌0.2g,30℃下培养36h,然后将滤液灌装,得到成品。
实施例2:
一种航天员专用合生元活性饮料的制备方法,包含以下操作步骤:
原辅料组成为:山药55g、山楂20g、红枣10g、桂圆8g、低聚果糖0.1g、低聚异麦芽糖0.15g、大豆低聚糖0.15g、双歧杆菌0.25g、乳杆菌0.3g、水280mL;
向浸提罐中加入山药55g、山楂20g、红枣10g、桂圆8g;
将100℃蒸馏水140mL注入浸提罐中,搅拌,浸提34h,过滤,得到滤液和滤渣;
将100℃蒸馏水140mL注入浸提罐与中残渣混合,搅拌,浸提4h,过滤,得到滤液和滤渣;
将和中滤液合并,加入低聚果糖0.1g、低聚异麦芽糖0.15g、大豆低聚糖0.15g,搅拌,过滤,得到滤液;
滤液在115℃灭菌10min;
待滤液冷却后,加入双歧杆菌0.25g、乳杆菌0.3g,40℃下培养30h,然后将滤液灌装,得到成品。

一种航天员专用合生元活性饮料的制备方法,包含以下操作步骤:
原辅料组成为:山药60g、山楂18g、红枣15g、桂圆6g、低聚果糖0.15g、低聚异麦芽糖0.1g、大豆低聚糖0.13g、双歧杆菌0.3g、乳杆菌0.25g、水280mL ;
向浸提罐中加入山药60g、山楂18g、红枣15g、桂圆6g;
将100℃蒸馏水140mL注入浸提罐中,搅拌,浸提53h,过滤,得到滤液和滤渣;
将100℃蒸馏水140mL注入浸提罐与中残渣混合,搅拌,浸提53h,过滤,得到滤液和滤渣;
将和中滤液合并,加入低聚果糖0.15g、低聚异麦芽糖0.1g、大豆低聚糖0.13g,搅拌,过滤,得到滤液;
滤液在120℃灭菌5min;
待滤液冷却后,加入双歧杆菌0.3g、乳杆菌0.25g,50℃下培养24h,然后将滤液灌装,得到成品。

二、将100℃蒸馏水140mL,注入浸提罐中,搅拌,浸提 1~5h,过滤,得到滤液和滤渣;
三、将100℃蒸馏水140mL注入浸提罐与步骤二中的残渣混合,搅拌,浸提1~5h,过滤,得到滤液和滤渣;
四、将步骤二和三中的滤液合并,加入低聚果糖0.1~0.15g、低聚异麦芽糖0.1~0.15g、大豆低聚糖0.1~0.15g,搅拌,过滤,得到滤液;
