巧克力豆沙粉
本发明属于食品工业中的大豆深加工技术领域。
目前在我国市场上出售的豆沙粉,原料均以红小豆制成。但红小豆在我国种植业中属于分散令星种植,总产量小,价格一般在5-6元/公斤,目前原料收购困难。
本发明的目的是研制完成一种风味、色泽、状态均与豆沙粉相似的,以原料充足的大豆粉为主要成份的“巧克力豆沙粉”。
本发明的生产技术如下:采用脱腥大豆粉与可可粉、糖粉均匀混拌而成。
本发明的积极效果是:1、原料是脱腥大豆粉,我国大豆资源丰富,不会出现原料供给困难的问题;2、风味廉具豆沙味与巧克力味,比现有的豆馅更易于被各种人群接受;3、“巧克力豆沙粉”主要以大豆为原料,而大豆的价格是红小豆的1/2-1/3,所以“巧克力豆沙粉”的成本可比“红小豆豆沙”大幅度降低。
本发明的实施例为:以脱腥大豆粉(包括高频脱腥、微波脱腥、热蒸汽闪蒸法脱腥、全干法瞬时高温脱腥、酶法脱腥等大豆脱腥技术制成的脱腥豆粉)为基料,混入干豆粉重量的5%-10%的可可粉,再加入相当于脱腥大豆粉与可可粉总量30-80%的糖粉,均匀搅拌,加糖量可根据区域人群口味不同而适当调整。均匀混拌后即成为色泽、形态似小豆粉沙,风味具有巧克力风味的“巧克力豆沙粉”。食用时加入相当于“巧克力豆沙粉”重量一倍左右的沸水冲调调成糊状即成为“巧克力豆沙馅”,可取代红小豆沙馅用于家庭作馅或食品工业作为甜味馅;如将“巧克力豆沙粉”加水8-15倍冲调成饮料状,也可作为饮料。

Claims (1)

  1. 一种巧克力豆沙粉,其特征是由脱腥后的大豆粉,可可粉,糖粉组成的混合物,三种成份的比例是以大豆粉为基料,加入豆粉重量5%-10%的可可粉,加入前述两种成份总重量30%-80%的糖粉。
