黑芝麻含有丰富的油酸、亚油酸,卵磷脂、维生素E和蛋白质及钙、铁等物质。其含油量高达50%以上,尤其是维生素E含量为植物食品之冠。能防止过氧化脂质对人体的危害,抵消或中和细胞内衰老物质“游离基”的积聚,有延缓衰老,延年益寿之功效。
桑葚被医学界誉为“21世纪的最佳保健果品”,有改善皮肤的血液供应、使皮肤白嫩、乌发、延缓衰老、明目、缓解眼睛疲劳干涩、防止人体动脉硬化、骨骼关节硬化、促进新陈代谢的作用,并对治疗糖尿病、贫血、高血压、高脂血症、冠心病、神经衰弱等病症具有辅助功效。
黑葡萄是一种营养丰富的水果,常食对神经衰弱、疲劳过度等大有裨益。黑葡萄之所以呈现出黑色外表,是因为它含有丰富的色素类物质,例如:原花青素、叶绿素等,这类物质具有很强的抗氧化性。相比浅色葡萄来说,黑葡萄还含有更加丰富的维生素C,可以增加人体的抵抗力。
黑木耳在活血补血的同时,还能吸附肠内残渣,起到清涤胃肠的作用。黑木耳含有核酸及其所含脂类成分中的卵磷脂,经近代科学研究表明具有美容养颜、延缓衰老的功效,享有“素中佳肉”之美誉。
发明内容
本发明要解决的问题是提供一种保健黑色面条及其制备方法,该面条添加多种黑色营养物质,有一定的保健效果。
为解决上述技术问题,本发明采用的技术方案是:保健黑色面条由包括如下重量份数的原料制成:小麦面粉50-80份、黑麦面粉20-40份、黑米粉10-30份、紫米粉10-30份、黑芝麻1-10份、桑葚5-20份、黑葡萄5-20份、微细化黑木耳1-10份、食盐1-5份、食用碱0.1-2份。
优选的,保健黑色面条由包括如下重量份数的原料制成:小麦面粉70份、黑麦面粉30份、黑米粉20份、紫米粉20份、黑芝麻6份、桑葚10份、黑葡萄10份、微细化黑木耳6份、食盐2份、食用碱0.5份。
所述微细化黑木耳制作步骤包括将黑木耳经过泡发、去杂洗净、干燥、粉碎
所述微细化黑木耳水分为5-10%,粒度大小为20-50目的微化颗粒为80-100%。
所述的保健黑色面条的制备方法包括:
(1)预处理:精选新鲜的桑葚、黑葡萄,反复洗涤,将桑葚去蒂,黑葡萄去籽备用;
(2)破碎:将经过预处理的相应重量份数的桑葚、黑葡萄通过搅拌机进行充分破碎;
(3)揉合:将小麦面粉、黑麦面粉、黑米粉、紫米粉、黑芝麻、破碎的桑葚和黑葡萄、微细化黑木耳、食盐、食用碱按比例混合均匀,加水,加水量为混合物总重量的20-40%,搅拌成粒径大小为0.1-0.5cm的颗粒面团;
(4)压延、切割、干燥。
本发明具有的优点和积极效果是:1、添加多种黑色物质,使制作出的面条呈黑色,且黑木耳的颗粒使面条的视觉和口感更有层次,使人产生新鲜感和食欲;2、桑葚和黑葡萄破碎后不过滤,保留蔬果粗纤维,有一定清理肠道的保健效果,且使制作的面条带有自然的香甜味;3、添加的黑色物质均有丰富的营养和明显的保健功能,揉和在一起后能使制作的面条有保健效果;4、工艺简单、清香鲜甜、营养丰富,尤其适合重视食品的天然安全和营养保健的人群食用。
具体实施方式
下面结合具体实施例对本发明做详细说明。
实施例1
保健黑色面条的一个优选配方,由包括如下重量份数的原料制成:小麦面粉70份、黑麦面粉30份、黑米粉20份、紫米粉20份、黑芝麻6份、桑葚10份、黑葡萄10份、微细化黑木耳6份、食盐2份、食用碱0.5份。
其制备方法包括:
(1)预处理:精选新鲜的桑葚、黑葡萄,反复洗涤,将桑葚去蒂,黑葡萄去籽备用;
(2)破碎:将经过预处理的相应重量份数的桑葚、黑葡萄通过搅拌机进行充分破碎;
(3)揉合:将小麦面粉、黑麦面粉、黑米粉、紫米粉、黑芝麻、破碎的桑葚和黑葡萄、微细化黑木耳、食盐、食用碱按比例混合均匀,加水,加水量为混合物总重量的35%,搅拌成粒径大小为0.1-0.5cm的颗粒面团;
(4)压延、切割、干燥。
实施例2
保健黑色面条的一个优选配方,由包括如下重量份数的原料制成:小麦面粉60份、黑麦面粉35份、黑米粉15份、紫米粉15份、黑芝麻7份、桑葚15份、黑葡萄13份、微细化黑木耳5份、食盐3份、食用碱0.4份。
其制备方法包括:
(1)预处理:精选新鲜的桑葚、黑葡萄,反复洗涤,将桑葚去蒂,黑葡萄去籽备用;
(2)破碎:将经过预处理的相应重量份数的桑葚、黑葡萄通过搅拌机进行充分破碎;
(3)揉合:将小麦面粉、黑麦面粉、黑米粉、紫米粉、黑芝麻、破碎的桑葚和黑葡萄、微细化黑木耳、食盐、食用碱按比例混合均匀,加水,加水量为混合物总重量的30%,搅拌成粒径大小为0.1-0.5cm的颗粒面团;
(4)压延、切割、干燥。
实施例3
保健黑色面条的一个优选配方,由包括如下重量份数的原料制成:小麦面粉75份、黑麦面粉30份、黑米粉18份、紫米粉18份、黑芝麻8份、桑葚20份、黑葡萄18份、微细化黑木耳8份、食盐3份、食用碱0.7份。
其制备方法包括:
(1)预处理:精选新鲜的桑葚、黑葡萄,反复洗涤,将桑葚去蒂,黑葡萄去籽备用;
(2)破碎:将经过预处理的相应重量份数的桑葚、黑葡萄通过搅拌机进行充分破碎;
(3)揉合:将小麦面粉、黑麦面粉、黑米粉、紫米粉、黑芝麻、破碎的桑葚和黑葡萄、微细化黑木耳、食盐、食用碱按比例混合均匀,加水,加水量为混合物总重量的38%,搅拌成粒径大小为0.1-0.5cm的颗粒面团;
(4)压延、切割、干燥。
选取100位实验者食用实施例中面条,其中男性、女性各50名,年龄范围为18-60岁。上述100人每天午餐食用保健黑色面条,食用3个月后,无毒副作用,肠胃消化吸收功能正常,且67%的人感觉有一定保健效果。其中34.4%的人称有滋肤美容与乌发效果,28.4%的人称改善肠胃消化与排泄,20.9%的人称有降血脂效果,16.3%的人称有抗氧化抗衰老作用。

1.一种保健黑色面条,其特征在于:保健黑色面条由包括如下重量份数的原料制成:小麦面粉50-80份、黑麦面粉20-40份、黑米粉10-30份、紫米粉10-30份、黑芝麻1-10份、桑葚5-20份、黑葡萄5-20份、微细化黑木耳1-10份、食盐1-5份、食用碱0.1-2份。
2.根据权利要求1所述的保健黑色面条,其特征在于:保健黑色面条由包括如下重量份数的原料制成:小麦面粉70份、黑麦面粉30份、黑米粉20份、紫米粉20份、黑芝麻6份、桑葚10份、黑葡萄10份、微细化黑木耳6份、食盐2份、食用碱0.5份。
3.根据权利要求1所述的保健黑色面条,其特征在于:所述微细化黑木耳制作步骤包括将黑木耳经过泡发、去杂洗净、干燥、粉碎。
4.根据权利要求1所述的保健黑色面条,其特征在于:所述微细化黑木耳水分为5-10%,粒度大小为20-50目的微化颗粒为80-100%。
5.一种权利要求1所述的保健黑色面条的制备方法,其特征在于:保健黑色面条的制备方法包括:
(1)预处理:精选新鲜的桑葚、黑葡萄,反复洗涤,将桑葚去蒂,黑葡萄去籽备用;
(2)破碎:将经过预处理的相应重量份数的桑葚、黑葡萄通过搅拌机进行充分破碎;
(3)揉合:将小麦面粉、黑麦面粉、黑米粉、紫米粉、黑芝麻、破碎的桑葚和黑葡萄、微细化黑木耳、食盐、食用碱按比例混合均匀,加水,加水量为混合物总重量的20-40%,搅拌成粒径大小为0.1-0.5cm的颗粒面团;
(4)压延、切割、干燥。
