本发明的目的在于提供一种水果酒,酒精含量低,具有保健功能,集酒与饮料为一体的水果酒及其制造方法。
为了实现上述目的,以苹果、梨、芒果、葡萄为原料。其工艺特征是:选果、去皮去核、打浆(破碎)、脱胶、榨汁、混合发酵、过滤、沉清、陈酿、调配、冷冻处理、无菌过滤、灌装。
本发明的积极效果在于:由苹果、梨、芒果、葡萄为原料酿制的水果酒,在发酵、调配过程中均不加外来的糖源,只将水果本身的糖源转化为酒度,果酒即为低度营养性的果酒。是一种酒精含量低,具有保健功能,集酒与饮料为一体的水果酒。
