本发明涉及石榴饮料的加工方法,特别是涉及一种石榴饮料及其制备方法。
背景技术:
石榴别名安石榴,金罂,金庞,钟石榴,天浆,甘石榴,丹若等。一般人群均可食用。特别适宜口干舌燥者、腹泻者、扁桃体发炎者。
石榴中含有丰富的石榴酸等多种有机酸。能促进消化和吸收,增加食欲等功效。石榴具有丰富的营养成分,主要包括有:维生素B1、B2、C,和碳水化合物、钙、磷等营养成分。石榴中的维生素C、胡萝卜素都是具有防止细胞癌变功效的(抗氧化剂),并且能预防动脉粥样硬化等作用。
石榴因不耐贮藏,通常用于鲜食,其营养丰富,用于加工石榴饮料可实现对石榴的综合利用,提高经济效益。

本发明的目的是提供一种石榴饮料及其制备方法,实现石榴原料的深加工综合利用。
本发明解决其技术问题所采取的技术方案是:
一种石榴饮料及其制备方法,其特征是:采用选料→冲洗→去皮→压榨→过滤→调配→杀菌→灌装→成品的加工工艺;其主要加工步骤为:
A、选料:选择无虫害、无腐烂、完熟期采收的石榴;
B、冲洗:用清水冲洗掉沾石榴上的灰尘泥土;
C、去皮:石榴皮中含有大量不良风味的可溶性物质,榨汁前要去皮,采用用手工法去皮;
D、压榨:将石榴籽放入压榨机中压榨得石榴汁;
E、过滤:以醇化法处理后经板框式过滤机过滤,得到澄清石榴汁;
F、调配:石榴汁20-25千克,白砂糖10-12千克,柠檬酸0.10-0.15千克,蛋白糖0.15-0.25千克,山梨酸钾0.01-0.02千克,食用胭脂红适量,水70-75千克,按此配方在配料罐中配料;
G、杀菌、装罐:采用高温短时杀菌,温度85-95℃,时间3-5分钟,然后立即用玻璃瓶分装,即为成品。
质量标准:产品呈粉红色,甜酸适中,具有明显的石榴香味,澄清透明,无沉淀。

具体实施方式:
实施例1
一种石榴饮料及其制备方法,其主要加工步骤为:
A、选料:选择无虫害、无腐烂、完熟期采收的石榴;
B、冲洗:用清水冲洗掉沾石榴上的灰尘泥土;
C、去皮:石榴皮中含有大量不良风味的可溶性物质,榨汁前要去皮,采用用手工法去皮;
D、压榨:将石榴籽放入压榨机中压榨得石榴汁;
E、过滤:以醇化法处理后经板框式过滤机过滤,得到澄清石榴汁;
F、调配:石榴汁22千克,白砂糖11.5千克,柠檬酸0.11千克,蛋白糖0.10千克,果葡糖浆0.15千克,山梨酸钾0.015千克,食用胭脂红适量,水75千克,按此配方在配料罐中配料;
G、杀菌、装罐:采用高温短时杀菌,温度95℃,时间3.5分钟,然后立即用玻璃瓶分装,即为成品。

C、去皮:石榴皮中含有大量不良风味的可溶性物质,榨汁前要去皮,采用用手工法去皮;
D、压榨:将石榴籽放入压榨机中压榨得石榴汁;
E、过滤:以醇化法处理后经板框式过滤机过滤,得到澄清石榴汁;
F、调配:石榴汁20-25千克,白砂糖10-12千克,柠檬酸0.10-0.15千克,蛋白糖0.15-0.25千克,山梨酸钾0.01-0.02千克,食用胭脂红适量,水70-75千克,按此配方在配料罐中配料;
