本发明公开了一种莲子保健糕点制备方法,由下列重量份的原料制成:大麦粉20-30份、黍米粉20-30份、薏苡粉20-30份、绿豆粉30-40份、莲子4-6份、麦芽2-3份、神曲2-3份、红曲米2-3份、紫芝2-3份、松萝2-3份、海马2-3份。本发明生产出来的保健糕点工艺简单,易于实现,适合工业化生产,且富含人类所需的多种微量元素及其他营养,具有滋阴润肺、延缓衰老、益气养血、增强免疫力、改善营养性贫血、健脑养神等保健功能,是集营养和食疗于一体的保健糕点。

本发明属于食品加工技术领域,尤其涉及糕点制作。
背景技术
随着经济的快速发展,人们的生活水平大大提高,对食品的纯天然性、安全性、营养性等方面的要求也越来越高。尤其是对“三高”(高血压、高血脂、高血糖)人群而言,选择低脂、低糖健康安全的食品尤为重要。莲子,是睡莲科水生草本植物莲的种子,莲子的营养价值较高,含有丰富的蛋白质、脂肪、碳水化合物、氧黄心树宁碱和N-去甲亚美罂粟碱,莲子中的钙、磷和钾含量非常丰富,除可以构成骨骼和牙齿的成分外,还有促进凝血,使某些酶活化,维持神经传导性,镇静神经,维持肌肉的伸缩性和心跳的节律等作用;丰富的磷还是细胞核蛋白的主要组成部分,帮助机体进行蛋白质、脂肪、糖类代谢,并维持酸碱平衡,对精子的形成也有重要作用;莲子有养心安神的功效;中老年人特别是脑力劳动者经常食用,可以健脑,增强记忆力,提高工作效率并能预防老年性痴呆的发生;莲子心味道极苦,却有显著的强心作用,能扩张外周血管,降低血压;莲心还有很好的去心火的功效,治疗口舌生疮,助于睡眠;莲子有益心补肾、健脾止泻、固精安神的作用。目前生产的普通糕点原料大都是高糖高热量等添加剂,缺乏人体所需的维生素和多种微量元素。
发明内容
针对目前生产的普通糕点大都缺乏维生素和多种微量元素的这一现实问题,提供一种新的添加含有多种人体必需微量元素和维生素的保健糕点制作方法,制成天然绿色保健食品,更加受消费者的欢迎。
本发明的技术解决方案是:一种莲子保健糕点制备方法,其特征在于:
(1)由下列重量份的原料制成:大麦粉20-30份、黍米粉20-30份、薏苡粉20-30份、绿豆粉30-40份、莲子4-6份、麦芽2-3份、神曲2-3份、红曲米2-3份、紫芝2-3份、松萝2-3份、海马2-3份;
(2)将莲子粉碎至45-55目,然后与麦芽、神曲、红曲米一起放入锅中炒至变焦,然后磨成粉;
(3)将紫芝、松萝、海马一起用适量水煎煮 5-6次,合并煎煮液;
(4)将大麦粉、黍米粉、薏苡粉、绿豆粉混合,加入步骤(3)得到的煎煮液,搅拌均匀后静置35-45分钟,然后加入步骤(2)得到的莲子、麦芽、神曲、红曲米的混合粉,再次搅拌,至黏稠糊状,分成小份揉成团;
(5)将上述制得的粗粮面团,置于模具中压制成型,然后转移至铺有荷叶的蒸锅中,隔水蒸熟,即得。

具体实施方式
下面对本发明作更进一步的说明。
实施例一
一种莲子保健糕点制备方法:
(1)由下列重量份的原料制成:大麦粉23份、黍米粉22份、薏苡粉24份、绿豆粉31份、莲子5份、麦芽3份、神曲3份、红曲米2份、紫芝2份、松萝2份、海马3份;
((2)将莲子粉碎至48目,然后与麦芽、神曲、红曲米一起放入锅中炒至变焦,然后磨成粉;
(3)将紫芝、松萝、海马一起用适量水煎煮 5次,合并煎煮液;
(4)将大麦粉、黍米粉、薏苡粉、绿豆粉混合,加入步骤(3)得到的煎煮液,搅拌均匀后静置38分钟,然后加入步骤(2)得到的莲子、麦芽、神曲、红曲米的混合粉,再次搅拌,至黏稠糊状,分成小份揉成团;
(5)将上述制得的粗粮面团,置于模具中压制成型,然后转移至铺有荷叶的蒸锅中,隔水蒸熟,即得。
实施例二
一种莲子保健糕点制备方法:
(1)由下列重量份的原料制成:大麦粉27份、黍米粉28份、薏苡粉29份、绿豆粉37份、莲子6份、麦芽3份、神曲2份、红曲米3份、紫芝2份、松萝3份、海马3份;
(2)将莲子粉碎至54目,然后与麦芽、神曲、红曲米一起放入锅中炒至变焦,然后磨成粉;
(3)将紫芝、松萝、海马一起用适量水煎煮 6次,合并煎煮液;
(4)将大麦粉、黍米粉、薏苡粉、绿豆粉混合,加入步骤(3)得到的煎煮液,搅拌均匀后静置44分钟,然后加入步骤(2)得到的莲子、麦芽、神曲、红曲米的混合粉,再次搅拌,至黏稠糊状,分成小份揉成团;
(5)将上述制得的粗粮面团,置于模具中压制成型,然后转移至铺有荷叶的蒸锅中,隔水蒸熟,即得。
通过上述方法制作的莲子保健糕点不仅美味可口、香味宜人,而且老少皆宜,是十分有益于健康的天然有机绿色食品。

1.一种莲子保健糕点制备方法,其特征在于:
(1)由下列重量份的原料制成:大麦粉20-30份、黍米粉20-30份、薏苡粉20-30份、绿豆粉30-40份、莲子4-6份、麦芽2-3份、神曲2-3份、红曲米2-3份、紫芝2-3份、松萝2-3份、海马2-3份;
(2)将莲子粉碎至45-55目,然后与麦芽、神曲、红曲米一起放入锅中炒至变焦,然后磨成粉;
(3)将紫芝、松萝、海马一起用适量水煎煮 5-6次,合并煎煮液;
(4)将大麦粉、黍米粉、薏苡粉、绿豆粉混合,加入步骤(3)得到的煎煮液,搅拌均匀后静置35-45分钟,然后加入步骤(2)得到的莲子、麦芽、神曲、红曲米的混合粉,再次搅拌,至黏稠糊状,分成小份揉成团;
