本发明涉及一种食品的加工方法,尤其是涉及一种姜汁苦瓜保健蜜饯的制作方法。
背景技术
苦瓜,又名凉瓜,是葫芦科植物,为一年生攀缘草本。茎、枝、叶柄及花梗都披有柔毛,腋生卷须。叶子的直径达3至12厘米,有5至7道掌状深裂,裂片呈椭圆形,外沿有锯齿。春夏之交开花,雌雄同株,黄色。果实为长椭圆形,表面有多数不整齐瘤状突起,种子藏于肉质果实之中,成熟时有红色的囊裹着。
苦瓜的作用:1.促进饮食、消炎退热:苦瓜中的苦瓜甙和苦味素能增进食欲,健脾开胃;所含的生物碱类物质奎宁,有利尿活血、消炎退热、清心明目的功效;2.防癌抗癌:苦瓜里面含有一种成分,可以有效抑制细胞的癌变和促进异变细胞的复原,具有一定的抗癌作用;3.降低血糖:苦瓜的新鲜汁液,含有苦瓜甙和类似胰岛素的物质,具有良好的降血糖作用,是糖尿病患者的理想食品。不仅如此,苦瓜还有预防骨质疏松、调节内分泌、抗氧化的作用,同时进一步提高人体抵抗力,提高身体里面的反应机制。
新鲜的苦瓜不易贮藏,用于加工成姜汁苦瓜保健蜜饯可实现对苦瓜原料的综合利用,食用方便,且便于储存,提高其经济价值。

本发明的目的是解决苦瓜不易贮藏的问题,提供一种姜汁苦瓜保健蜜饯的制作方法。
本发明解决其技术问题所采取的技术方案是:
一种姜汁苦瓜保健蜜饯的制作方法,其特征在于:采用的配方为苦瓜100%、蔗糖35%、麦芽糖浆15%、生姜12%、丁香3%、石灰水2.8%、话梅香精2%和柠檬酸0.36%,其加工工艺流程是选料→清洗→切片→硬化→糖渍→烘干→包装,具体操作步骤为:
(1)选料:挑选新鲜成熟、无病虫害、无损伤的苦瓜作原料;
(2)切片:将苦瓜剖开去籽,用流动清水洗净,再用切片机横切成8-12mm的薄片;
(3)硬化:将苦瓜片放入2.8%的石灰水中浸泡12小时,再用清水漂洗,除去石灰味,捞出沥干;
(4)糖渍:先用蔗糖配制出48%的糖液,再将鲜生姜捣碎制成姜泥,加入其中,调制成糖姜汁;将沥干水分的苦瓜片放入糖姜汁中浸泡3-5天,浸渍时,每天把糖姜汁倒入锅中浓缩一次,再放入苦瓜片,继续糖渍,直至糖浓度达65%时停止;然后加入0.36%柠檬酸、3%丁香和15%麦芽糖浆,搅拌均匀,继续糖渍8-10天;
(5)烘干:将苦瓜片捞出,拌入适量的话梅香精,放入72-76%烘房中进行烘烤,当苦瓜片含水量降至13-16%时即可进行包装;
(6)包装:用玻璃纸包装后即为成品。

具体实施方式
实施例1:
一种姜汁苦瓜保健蜜饯的制作方法,具体操作步骤为:
(1)选料:挑选新鲜成熟、无病虫害、无损伤的苦瓜作原料;
(2)切片:将苦瓜剖开去籽,用流动清水洗净,再用切片机横切成3-5mm的薄片;
(3)硬化:将苦瓜片放入5%的石灰水中浸泡5-7小时,再用清水漂洗,除去石灰味,捞出沥干;
(4)糖渍:先用蔗糖配制出52%的糖液,再将鲜生姜捣碎制成姜泥,加入其中,调制成糖姜汁;将沥干水分的苦瓜片放入糖姜汁中浸泡6天,浸渍时,每天把糖姜汁倒入锅中浓缩一次,再放入苦瓜片,继续糖渍,直至糖浓度达70%时停止;然后加入0.42%柠檬酸、5%蜂蜜和20%甜菊糖浆,搅拌均匀,继续糖渍12-15天;
(5)烘干:将苦瓜片捞出,拌入适量的玫瑰香精,放入68%烘房中进行烘烤,当苦瓜片含水量降至25%时即可进行包装;
(6)包装:用玻璃纸包装后即为成品。
实施例2:
一种姜汁苦瓜保健蜜饯的制作方法,具体操作步骤为:
(1)选料:挑选新鲜成熟、无病虫害、无损伤的苦瓜作原料;
(2)切片:将苦瓜剖开去籽,用流动清水洗净,再用切片机横切成25mm的薄片;
(3)硬化:将苦瓜片放入7%的石灰水中浸泡5-7小时,再用清水漂洗,除去石灰味,捞出沥干;
(4)糖渍:先用蔗糖配制出56%的糖液,再将鲜生姜捣碎制成姜泥,加入其中,调制成糖姜汁;将沥干水分的苦瓜片放入糖姜汁中浸泡7天,浸渍时,每天把糖姜汁倒入锅中浓缩一次,再放入苦瓜片,继续糖渍,直至糖浓度达75%时停止;然后加入0.5%柠檬酸、4%甘草和12%冰糖浆,搅拌均匀,继续糖渍7-9天;
(5)烘干:将苦瓜片捞出,拌入适量的芝麻糖粉,放入80%烘房中进行烘烤,当苦瓜片含水量降至8-10%时即可进行包装;
(6)包装:用玻璃纸包装后即为成品。
