本发明公开一种阿胶饮料及其制备方法,以阿胶为主料,以菊粉、果粉、甜味剂等为辅料,依次经过原料预处理、熬煮、过滤、杀菌后得到阿胶-菊粉饮料;所述饮料配方为(质量分数):阿胶:1-2%,菊粉:3-10%,木糖醇:3-5%,果粉:5-10%,甜菊糖:0.005%,余量为水。本发明的优点是:菊粉的加入不仅使阿胶饮料具有更佳的口味和口感,而且能够促进肠道有益菌的生长,促进常带蠕动,防止便秘的发生,有效地解决了阿胶存在的副作用问题。因此,本发明具有以下有益效果:(1)饮料饮用方便,适合各年龄阶段人群饮用;(2)口味、口感好,无阿胶的腥腻味;(3)饮料既保留了阿胶、菊粉的功效,又通过其合理搭配,克服了原料单独食用存在的缺点。

技术领域
本发明涉及饮料制备技术领域,具体地说是一种阿胶-菊粉饮料及其制备方法。
背景技术
阿胶为马科动物-驴的干皮或鲜皮经煎煮浓缩而制成的,与人参鹿茸并称为滋补三宝,始载于神农本草经,列为上品。阿胶在临床上有广泛的应用,能补血滋阴润燥止血,主治血虚萎黄、眩晕心悸、肌萎无力、心烦不眠、虚风内动、肺燥咳嗽等,阿胶还可以用于食品领域,是一种很好的滋养品,例如生产的阿胶枣、阿胶奶酪等,并且已经有口服液、颗粒剂等多种剂型出现在保健品行列,如氨基葡萄糖阿胶制品、阿胶保健口服液等。阿胶虽好,但如果不能正确食用,将会产生许多副作用。主要表现在:(1)服用阿胶后,出现肠胃不适等症状,影响脾胃功能。(2)现存制作工艺的局限性,新制成的阿胶总带有一些火毒,因而进服新鲜阿胶会使人产生火气亢盛及各种中毒症状。服用阿胶之后,出现火气亢盛的表现,如鼻腔、口唇等部位出现许多热疮,或眼睛干涩、发红、眼眵增多,甚至出现喉咙干痛及大便秘结或大便带血等症状。
阿胶传统的服用方法是加水熬化或在蒸锅中加水烊化后趁热服用,这样极不方便;而且由于阿胶本身气味比较浓烈,若直接冲服,有腥腻味。因此有必要开展阿胶新剂型的研究开发,将阿胶与菊粉等辅料加工为饮料,即方便阿胶的饮用,又能避免服用阿胶产生的副作用,利于阿胶功能的发挥。
发明内容
为了解决以上问题,本发明以阿胶粉为主要原料,辅以菊粉、果粉、木糖醇、甜味剂等辅料,发明了一种阿胶饮料。具体技术方案如下:
一种阿胶饮料,以阿胶为主料,以菊粉、果粉、甜味剂等为辅料,依次经过原料预处理、熬煮、过滤、杀菌后得到阿胶-菊粉饮料。
所述饮料配方为(质量分数):阿胶:1-2%,菊粉:3-10%,木糖醇:3-5%,果粉:5-10%,甜菊糖:0.005%,余量为水。
所述果粉可为苹果粉、柠檬粉、蓝莓粉的一种或几种。
本发明进一步公开了制备所述的阿胶饮料的方法,包括以下步骤:
1)、将菊粉以1:5-7g/g的料液比加入到纯净水中,在45-60℃下溶解,然后升温至70-80℃进一步溶解至澄清,备用;
2)、将木糖醇以1:5-7g/g的料液比加到纯净水中,保持50-60℃,强力搅拌数秒至其溶解,备用;
3)、将果粉以1:4-5g/g的料液比加到常温水中,强力搅拌至其初步溶解,备用;
4)、将阿胶粉以1:10-20g/g的料液比加到纯净水中,保持50-70℃,强力搅拌至其初步溶解,备用;
5)、将步骤1)所得的菊粉溶液在60-80℃下进行熬煮,然后边搅拌边加入木糖醇溶液、果粉溶液和阿胶溶液;
6)、向液体饮料中以1:0.00001-0.00006g/g的料液比加入甜菊糖,搅拌、熬煮得棕黄色液体;
7)、对液体进行热过滤,滤液用离心机进行离心处理,分离出不溶物,澄清液体;
8)、对饮料进行杀菌、装罐、密封。
本发明的特点是:菊粉是由D-果糖经β(1→2)糖苷键连接而成的链状多糖,末端常含有一个葡萄糖基。其来源于菊芋、菊苣等植物,是一种功能性果聚糖,也是最易溶解的水溶性膳食纤维。菊粉具有调节血脂、改善肠道环境、促进益生菌增殖、防治便秘、预防结肠癌、促进矿物质吸收、预防肥胖症、防止血糖波动等生理功能。菊粉的加入不仅使阿胶饮料具有更佳的口味和口感,而且能够促进肠道有益菌的生长,促进肠道蠕动,防止便秘的发生,有效地解决了阿胶存在的副作用问题。
本发明的制备工艺中,各组分的添加次序与产品的最终使用效果和口感密切相关。首先进行菊粉的溶解和熬煮是为了使菊粉溶解完全,甜味更加浓郁,更好地发挥菊粉促进肠道有益菌生长、带动肠道蠕动的功效;然后依次加入木糖醇、果粉进行熬煮是为了增加饮料甜度,调节口感,使果香味更加醇厚;最后加入阿胶是为了使其与已溶解的菊粉、果粉更好地融合,有效降低本身带有的腥腻味,使饮料具有独特风味,更好地实现阿胶补血、强身健体、增强人体免疫功能的功效而避免其副作用。
本发明具有以下有益效果:(1)饮料饮用方便,适合各年龄阶段人群饮用;(2)口味、口感好,无阿胶的腥腻味;(3)饮料既保留了阿胶、菊粉的功效,又通过其合理搭配,克服了原料单独食用存在的缺点。

取菊粉6000g,加入到40kg纯净水中,50℃溶解,后升温至70℃进一步溶解至澄清,备用。取木糖醇6000g,加入到40kg纯净水中,保持50℃,强力搅拌至其溶解,备用。取苹果果粉10kg,加入到50kg常温水中,强力搅拌使其初步溶解,备用。取阿胶粉2000g,加入到40kg纯净水中,50℃强力搅拌使其初步溶解,备用。将菊粉溶液在80℃下熬煮1min,然后边搅拌边加入木糖醇溶液、果粉溶液和阿胶溶液,分别熬煮1min、2min、5min。最后取10g甜菊糖加入液体中,搅拌30s,熬煮得棕黄色液体。对液体进行热过滤,将滤液用离心机进行离心处理,分离出不溶物,澄清液体,并对其进行杀菌、装罐、密封保存。阿胶菊粉饮料感官评价结果显示,制备的阿胶菊粉饮料整体风味、甜度、色泽和口感都比较好。
实施例2
取菊粉9000g,加入到45kg纯净水中,45℃溶解,后升温至80℃进一步溶解至澄清,备用。取木糖醇15kg,加入到80kg纯净水中,保持50℃,强力搅拌至其溶解,备用。取柠檬果粉15kg,加入到75kg常温水中,强力搅拌使其初步溶解,备用。取阿胶粉3000g,加入到48kg纯净水中,50℃强力搅拌使其初步溶解,备用。将菊粉溶液在80℃下熬煮1min,然后边搅拌边加入木糖醇溶液、果粉溶液和阿胶溶液,分别熬煮1min、2min、5min。最后取15g甜菊糖加入液体中,搅拌30s,熬煮得棕黄色液体。对液体进行热过滤,将滤液用离心机进行离心处理,分离出不溶物,澄清液体,并对其进行杀菌、装罐、密封保存。阿胶菊粉饮料感官评价结果显示,制备的阿胶菊粉饮料整体风味、甜度、色泽和口感都比较好。
实施例3
取菊粉4500g,加入到31.5kg纯净水中,60℃溶解,后升温至75℃进一步溶解至澄清,备用。取木糖醇7500g,加入到37.5kg纯净水中,保持60℃,强力搅拌至其溶解,备用。取蓝莓果粉1.05kg,加入到4.2kg常温水中,强力搅拌使其初步溶解,备用。取阿胶粉1500g,加入到15kg纯净水中,70℃强力搅拌使其初步溶解,备用。将菊粉溶液在80℃下熬煮1min,然后边搅拌边加入木糖醇溶液、果粉溶液和阿胶溶液,分别熬煮1min、2min、5min。最后取10g甜菊糖加入液体中,搅拌30s,熬煮得棕黄色液体。对液体进行热过滤,将滤液用离心机进行离心处理,分离出不溶物,澄清液体,并对其进行杀菌、装罐、密封保存。阿胶菊粉饮料感官评价结果显示,制备的阿胶菊粉饮料整体风味、甜度、色泽和口感都比较好。
实施例4
取菊粉20kg,加入到70kg纯净水中,50℃溶解,后升温至70℃进一步溶解至澄清,备用。取木糖醇10kg,加入到70kg纯净水中,保持50℃,强力搅拌至其溶解,备用。取苹果果粉10kg,加入到50kg常温水中,强力搅拌使其初步溶解,备用。取阿胶粉8000g,加入到80kg纯净水中,50℃强力搅拌使其初步溶解,备用。将菊粉溶液在80℃下熬煮1min,然后边搅拌边加入木糖醇溶液、果粉溶液和阿胶溶液,分别熬煮1min、2min、5min。最后取20g甜菊糖加入液体中,搅拌35s,熬煮得棕黄色液体。对液体进行热过滤,将滤液用离心机进行离心处理,分离出不溶物,澄清液体,并对其进行杀菌、装罐、密封保存。阿胶菊粉饮料感官评价结果显示,制备的阿胶菊粉饮料整体风味、甜度、色泽和口感都比较好。
Claims (3)
1.一种阿胶饮料,其特征在于:以阿胶为主料,以菊粉、果粉、甜味剂等为辅料,依次经过原料预处理、熬煮、过滤、杀菌后得到阿胶-菊粉饮料;
所述饮料配方为(质量分数):阿胶:1-2%,菊粉:3-10%,木糖醇:3-5%,果粉:5-10%,甜菊糖:0.005%,余量为水。
2.根据权利要求1所述的阿胶饮料,其特征在于:所述果粉可为苹果粉、柠檬粉、蓝莓粉的一种或几种。
3.一种如权利要求1所述的阿胶饮料的制备方法,其特征在于包括以下步骤:
1)、将菊粉以1:5-7g/g的料液比加入到纯净水中,在50℃下溶解,然后升温至70-80℃进一步溶解至澄清,备用;
2)、将木糖醇以1:5-7g/g的料液比加到纯净水中,保持50-60℃,强力搅拌数秒至其溶解,备用;
3)、将果粉以1:4-5g/g的料液比加到常温水中,强力搅拌至其初步溶解,备用;
4)、将阿胶粉以1:10-20g/g的料液比加到纯净水中,保持50-70℃,强力搅拌至其初步溶解,备用;
5)、将步骤1)所得的菊粉溶液在60-80℃下进行熬煮,然后边搅拌边加入木糖醇溶液、果粉溶液和阿胶溶液;
6)、向液体饮料中以1:0.00001-0.00006g/g的料液比加入甜菊糖,搅拌、熬煮得棕黄色液体;
7)、对液体进行热过滤,滤液用离心机进行离心处理,分离出不溶物,澄清液体;
8)、对饮料进行杀菌、装罐、密封。
