本发明公开了一种玉皇蘑酵素含片及其制备方法,通过玉皇蘑菌丝体的培养、玉皇蘑酵素原液的制备,最终制得玉皇蘑酵素含片。本发明以辣木树木屑为主料培育玉皇蘑菌丝体,既充分发挥了保健植物辣木树的营养价值,又综合利用了玉皇蘑的营养价值,生产的玉皇蘑酵素含片营养丰富、食用方便,食用后能有效增进人体免疫功能、活化细胞,有益于身体健康,且制备方法简单,具有实用性和产业利用性,适合广泛推广。

技术领域
本发明属于农产品加工领域,具体涉及一种玉皇蘑酵素含片及其制备方法。
背景技术
玉皇蘑又称金顶侧耳,既味道鲜美、香味浓郁,又含有丰富营养,具有滋补强身的功效。辣木树是近年来在欧美新兴的一种具有保健功效的可食用植物,其高钙、高蛋白质、高纤维、低脂质,并且具有增强体力、治疗贫血、抑制病菌、驱除寄生虫等功效。辣木树嫩枝条可做凉拌菜,也可用于熬制肉汤,味追鲜美。
酵素营养丰富,含有多种天然维生素、矿物质和微量元素。酵素进入人体后,能迅速被人体吸收和利用,既能增强体质,又能预防各种疾病发生,因此,食用酵素食品有利于人体的健康,具有很好的开发前景。本发明以辣木树木屑为主料培育玉皇蘑菌丝体,再将玉皇蘑菌丝体与其他原料混合,发酵制成玉皇蘑食用酵素原液,并最终制成玉皇蘑酵素含片。目前市场上未见有相同的产品或出现相同的报道,因此本发明具有新颖性与创造性。
发明内容
本发明的目的在于提供一种玉皇蘑酵素含片及其制备方法,所得玉皇蘑酵素含片是一种天然酵素食品,食用后能增进人体免疫功能、活化细胞,有益身体健康。
为实现上述目的,本发明采用如下技术方案:
一种玉皇蘑酵素含片,其制备方法包括以下步骤:
1)玉皇蘑菌丝体的培养:以辣木树木屑粉、谷粉、大豆粉、葡萄糖为培养基质,调节含水量为55%~60%,pH值为6.0~7.5;将培养基质拌均装瓶,高压灭菌后冷却,接入玉皇蘑菌种,在25℃下暗室培养25~30天,至培养基质长满玉皇蘑菌丝体;
2)玉皇蘑酵素原液的制备:将玉皇蘑菌丝体和培养基质一起捣碎,在瓶底铺一层,然后放入木瓜、柠檬、蜂蜜、米曲霉菌液和糖粉,再铺一层捣碎的玉皇蘑菌丝体和培养基质,按此顺序重复操作,装至瓶高的80%后,密封瓶口,26℃下发酵30天,制得玉皇蘑酵素原液;
3)酵素含片的制备:将玉皇蘑酵素原液和糊精按重量比1:1混合后,采用风干机吹干水份,打碎成酵素粉,再用压片机制成玉皇蘑酵素含片。
步骤1)中各原料按重量百分数计,含有辣木树木屑粉60%~70%,谷粉25%~30%,大豆粉4%~8%,葡萄糖1%~2%,上述各原料的重量百分数之和为100%;
所述辣木树木屑粉为50~100目;
所述谷粉是将稻谷粉碎制得。
步骤2)中各原料按重量百分数计,含有玉皇蘑菌丝体基质30%,木瓜10%,糖40%,蜂蜜8%,米曲霉菌液10%,柠檬2%;
所述木瓜先削皮、去籽、切块后备用;
所述糖粉是将冰糖粉碎后备用;
所述柠檬是将新鲜柠檬切薄片、去籽后备用。
本发明的显著优点在于:本发明以辣木树木屑为主料培育玉皇蘑菌丝体,并进一步制得玉皇蘑酵素含片,既充分发挥了保健植物辣木树的营养价值,又综合利用了玉皇蘑的营养价值,生产的玉皇蘑酵素含片香气浓郁,富含多种蛋白酶、脂肪酶、超氧化物歧化酶以及人体容易吸收利用的小分子物质,大大提高了功能性活性成分含量,提高了酵素的各种保健功效和附加值,且食用方便,制备方法简单,具有实用性和产业利用性,适合广泛推广。
具体实施方式
实施例1
一种玉皇蘑酵素含片,其制备方法包括以下步骤:
1)预处理:将稻谷粉碎成谷粉备用;将木瓜先削皮、去籽、切块后备用;将冰糖粉碎后备用;将新鲜柠檬切薄片、去籽后备用;
2)玉皇蘑菌丝体的培养:将50目辣木树木屑粉70 kg、谷粉25 kg、大豆粉4 kg、葡萄糖1 kg为培养基质,调节含水量为58%,pH值为7.5;将培养基质拌均装瓶,高压灭菌后冷却,接入玉皇蘑菌种,在25℃下暗室培养27天,至培养基质长满玉皇蘑菌丝体;
3)玉皇蘑酵素原液的制备:将30 kg玉皇蘑菌丝体和培养基质一起捣碎,在瓶底铺一层,然后放入木瓜、柠檬、蜂蜜、米曲霉菌液和冰糖,再铺一层捣碎的玉皇蘑菌丝和培养基质,按此顺序重复操作,装至瓶高的80%后,密封瓶口,26℃下发酵30天,制得玉皇蘑酵素原液;所用木瓜重量为10 kg、柠檬重量为2 kg、蜂蜜重量为8 kg、米曲霉(沪酿3.042)菌液重量为10 kg、冰糖重量为40 kg;
4)酵素含片的制备:将玉皇蘑酵素原液和糊精按重量比1:1混合后,采用风干机吹干水份,打碎成酵素粉,再用压片机制成玉皇蘑酵素含片。
实施例2
一种玉皇蘑酵素含片,其制备方法包括以下步骤:
1)预处理:将稻谷粉碎成谷粉备用;将木瓜先削皮、去籽、切块后备用;将冰糖粉碎后备用;将新鲜柠檬切薄片、去籽后备用;
2)玉皇蘑菌丝体的培养:将80目辣木树木屑粉65 kg、谷粉28 kg、大豆粉6 kg、葡萄糖1 kg为培养基质,调节含水量为55%,pH值为6.0;将培养基质拌均装瓶,高压灭菌后冷却,接入玉皇蘑菌种,在25℃下暗室培养25天,至培养基质长满玉皇蘑菌丝体;
3)玉皇蘑酵素原液的制备:将30 kg玉皇蘑菌丝体和培养基质一起捣碎,在瓶底铺一层,然后放入木瓜、柠檬、蜂蜜、米曲霉菌液和冰糖,再铺一层捣碎的玉皇蘑菌丝体和培养基质,按此顺序重复操作,装至瓶高的80%后,密封瓶口,26℃下发酵30天,制得玉皇蘑酵素原液;所用木瓜重量为10 kg、柠檬重量为2 kg、蜂蜜重量为8 kg、米曲霉(沪酿3.042)菌液重量为10 kg、冰糖重量为40 kg;

实施例3
一种玉皇蘑酵素含片,其制备方法包括以下步骤:

3)玉皇蘑酵素原液的制备:将30 kg玉皇蘑菌丝体和培养基质一起捣碎,在瓶底铺一层,然后放入木瓜、柠檬、蜂蜜、米曲霉菌液和冰糖,再铺一层捣碎的玉皇蘑菌丝体和培养基质,按此顺序重复操作,装至瓶高的80%后,密封瓶口,26℃下发酵30天,制得玉皇蘑酵素原液;所用木瓜重量为10 kg、柠檬重量为2 kg、蜂蜜重量为8 kg、米曲霉(沪酿3.042)菌液重量为10 kg、冰糖重量为40 kg;
4)酵素含片的制备:将玉皇蘑酵素原液和糊精按重量比1:1混合后,采用风干机吹干水份,打碎成酵素粉,再用压片机制成玉皇蘑酵素含片。
本发明制得的玉皇蘑酵素含片香气浓郁,富含多种蛋白酶、脂肪酶、超氧化物歧化酶以及人体容易吸收利用的小分子物质,大大提高了功能性活性成分含量,提高了酵素的各种保健功效和附加值,且食用方便,制备方法简单,具有实用性和产业利用性,适合广泛推广。

Claims (4)
1.一种玉皇蘑酵素含片的制备方法,其特征在于:所述方法包括以下步骤:
1)玉皇蘑菌丝体的培养:以辣木树木屑粉、谷粉、大豆粉、葡萄糖为培养基质,调节含水量为55%~60%,pH值为6.0~7.5;将培养基质拌均装瓶,高压灭菌后冷却,接入玉皇蘑菌种,在25℃下暗室培养25~30天,至培养基质长满玉皇蘑菌丝体;
2)玉皇蘑酵素原液的制备:将玉皇蘑菌丝体和培养基质一起捣碎,在瓶底铺一层,然后放入木瓜、新鲜柠檬片、蜂蜜、米曲霉菌液和糖粉,再铺一层捣碎的玉皇蘑菌丝体和培养基质,按此顺序重复操作,装至瓶高的80%后,密封瓶口,26℃下发酵30天,制得玉皇蘑酵素原液;
3)酵素含片的制备:将玉皇蘑酵素原液和糊精按重量比1:1混合后,采用风干机吹干水份,打碎成酵素粉,再用压片机制成玉皇蘑酵素含片。
2.根据权利要求1所述玉皇蘑酵素含片的制备方法,其特征在于:步骤1)中各原料按重量百分数计,含有辣木树木屑粉60%~70%,谷粉25%~30%,大豆粉4%~8%,葡萄糖1%~2%,上述各原料的重量百分数之和为100%;
所述辣木树木屑粉为50~100目;
所述谷粉是将稻谷粉碎制得。
3.根据权利要求1所述玉皇蘑酵素含片的制备方法,其特征在于:步骤2)中各原料按重量百分数计,含有玉皇蘑菌丝体基质30%,木瓜10%,糖40%,蜂蜜8%,米曲霉菌液10%,新鲜柠檬片2%;
所述木瓜先削皮、去籽、切块后备用;
所述糖粉是将冰糖粉碎后备用;
所述柠檬是将新鲜柠檬切薄片、去籽后备用。
