Abstract
本发明公开一种糖炒板栗保健饮品的制作方法,其由下述重量配比原料制备而得,糖炒板栗酱20份、蜂蜜9份、橄榄油0.4份、中药提取液5份、鲜牛奶10份、稳定剂0.1份,水60份,本发明使糖炒板栗的植物蛋白、乳品动物蛋白相结合,两种营养互补,制作出来的产品更易于人体吸收,并适当添加保健成分,具有清凉泻火,健胃消食的作用,是一种理想的保健饮料,应用前景广阔。

技术领域
本发明涉及一种食品加工技术领域,具体地涉及一种营养作用与保健作用兼备的糖炒板栗保健饮品的制作方法。
背景技术
饮料是人们日常生活中必不可少的消费品之一,传统的饮料多数含有碳酸水、磷酸、柠檬酸等,所产生的气体不仅对胃肠道有刺激,而且会破坏体内维生素C和维生素B的合成,及对钙的吸收。随着生活水平的提高,特别是在日益严重的学习压力、就业压力和工作压力下,患营养不良并导致身体免疫功能下降的人有逐渐增多的趋势。且随着人们生活水平的提高,摄入高热量的食物越来越多,过剩的热量在体内积聚,导致身体肥胖,胃火旺盛,脾胃不和,消化不良,腹胀,口干口臭等上火症状,体内积聚了大量的各种毒素,伴随着人们健康意识的增强,营养保健饮料越来越被市场青睐。
板栗富含蛋白质、脂肪、碳水化合物、钙、磷、铁、锌、多种维生素等营养成分,其维生素B1、B2含量丰富,维生素B2的含量至少是大米的4倍,每100克还含有24毫克维生素C,有健脾养胃、补肾强筋、活血止血之功效。孕妇常吃板栗不仅可以健身壮骨,而且有利于骨盆的发育成熟,还有消除疲劳的作用。而且炒熟的板栗味道香甜、可口,是一道非常不错的美食。本发明以糖炒栗子和以中草药为主要成分,营养与保健作用兼备。据有关部门预测,未来五年全球健康饮料将以高于普通饮料增长速度一倍以上的速度增长。建立在我国传统中医药学和现代健康理论基础上的具有强身和保健功能的营养保健饮料产品更是受到市场上的欢迎,其前景越来越好。这些保健功能的饮料迎合了人们保健意识越来越强的消费需求,受到现代人的热爱。
依照现有已公开的板栗饮品,孟宪军等公开了一种板栗饮料的制作方法,以板栗为主要原料,配以甜味剂,酸味剂,稳定剂,低聚糖等原料制成的保健饮料。工艺流程包括板栗挑选、脱壳、去衣、磨浆、护色、过滤、液化、煮浆、糖化、调配、均质、灌装、灭菌得产品。主要是提供了一种以鲜板栗生产饮料的工艺及配方,而鲜板栗不易消化且口感较加工成熟的板栗相差甚远,导致饮品口感一般。于山大公开了一种板栗双歧因子功能饮料及其制备方法(中国发明专利,申请号:200610109637),该饮料将板栗仁、糯米或玉米和矿泉水或软化饮料水作为主辅原料,辅之以甜味剂、植物油、风味剂、乳化剂、稳定剂、抗氧化剂、品质改良剂等配制而成。该板栗双歧因子功能饮料的制备方法是将板栗作为主要原料进行分拣、洗净、烘干、脱壳脱衣、烫漂、打磨、护色、预煮、喷淋冲洗、粗磨打浆、调浆、液化、糖化转苷、过滤,糯米或玉米经过浸泡、粗磨打浆、液化、糖化转苷、过滤,混合、灭酶、脱色、微细化精磨、调配、调节pH值、离心过滤、脱气、过筛、加热、均质乳化、瞬时高温杀菌、灌装、二次高温杀菌、快速冷却、晾干、观察、贴标制成成品,其制备过程繁杂,不易操作。而本发明是以糖炒板栗成分和中药汁成分为主要成分的饮品,人体更易于吸收,营养更加丰富,适宜各种群体,经过研制,本发明制作的产品克服了板栗产品遇水沉淀、回生、口感粗糙、稳定性差等众多难题,既保留了糖炒板栗的香气滋味、有了乳品的顺滑香甜,营养价值极高,老少皆宜,易于保存。
发明内容
本发明的目的在于克服现有技术存在的不足,提供一种营养作用与保健作用兼备的糖炒板栗蛋白饮品及其制作方法,本申请发明人结合大量现有产品根据前人经验,通过对传统中药的研究,并结合辩证论证,多方收集众家之长,寻求最佳组合方案,本发明饮料是一种绿色、健康的保健饮品。鉴于山药、茯苓、黄芪、马齿苋、沙棘、金银花、蒲公英具有诸多保健功能,属于药食两用的药材,上述中药有效成分的加入使得本发明饮品具有补脾健胃,清凉泻火等多种保健功效。
为实现上述目的,本发明采用的技术方案如下:
一种糖炒板栗蛋白饮品及其制作方法,其由下述重量配比原料制备而得,
糖炒板栗酱20份、蜂蜜9份、橄榄油0.4份、中药提取液5份、鲜牛奶10份、稳定剂0.1份,水60份。
所述糖炒板栗酱的制备方法为:将糖炒板栗去皮,用辊磨机磨成均匀的细酱;
所述糖炒板栗的制备方法为:将收获的无虫蛀、无腐烂、无异味、所含包括农残的各项指标符合食品卫生规定的鲜板栗在0℃冷库里存放30天进行糖化、分级清洗、划口、糖炒栗子机炒至7成熟后放入托盘内摊平入锅蒸制,水沸后蒸20分钟,将经过糖炒蒸制的板栗用辊磨机磨成均匀的细酱;
所述中药提取液由下述重量配比的原料制备而得:
山药20份、茯苓18份、黄芪18份、马齿苋15份、沙棘15份、金银花10份、蒲公英10份。
制备方法为:1)取山药、茯苓、金银花混合均匀,加3倍重量的水武火煮沸,然后文火煎煮1小时,过滤收集滤液和滤渣;往滤渣中添加1倍重量的水,武火煮沸,然后文火煎煮30分钟,过滤收集滤液;合并上述两次滤液得液体A;
2)取其余成分(即黄芪、马齿苋、沙棘、蒲公英)加70%乙醇浸泡0.5-1.5小时,提取两次,每次1-2小时,合并提取液,滤过,得液体B;
合并液体A和液体B获得中药提取液。
所述稳定剂成分为:乙基麦芽酚、海藻酸钠、黄原胶、单甘脂、六偏磷酸钠、CMC(羧甲基纤维素钠)、按照质量比3∶1∶2∶1∶1∶1混合制备。
所述糖炒板栗蛋白饮品的制备方法为:按照重量比例混合糖炒板栗酱、蜂蜜、橄榄油、中药提取液、鲜牛奶、水、并添加稳定剂搅拌均匀,灭菌,然后用高压均质机均质乳化处理,均质压力25-35Mpa,物料温度50℃左右,均质后的浆液经灭菌后,在无菌条件下灌装,即得。
本发明可以使糖炒板栗的植物蛋白、乳品动物蛋白相结合,两种营养互补,再适当添加蜂蜜等调味剂,使制作出来的产品具有更多人体所需的能量。经过调配、高温均质、杀菌等操作步骤,使制作出来的产品更易于人体吸收,此方法使糖炒板栗融合到质地均匀的液体,方便直接食用,易于保存、增长保质期。方法简便,易于操作,适合工业大量生产。本发明适当添加保健成分,具有清凉泻火,健胃消食的作用,是一种非常好的,针对当前人们生活存在问题的保健饮料,促进消化,提高缺氧耐受力。
感官指标:滋气味适中,组织状态均匀,无沉淀,无杂质,无悬浮大颗粒,无分层现象。
微生物指标:细菌总数<10个/mL,无致病菌检出。
保质期:常温6个月。
本发明的保健饮料其使用结果表明,有下述优点:
1本发明糖炒板栗蛋白饮品所需原料药较少,配伍简单,成本较低。原料搭配合理,具有清凉泻火,健胃消食的功效。通过原料中多种营养物质的有机结合,有效地将多种不同成分融入在产品中,这些成分相互配合,协同作用,通过营养素的作用改善和提高自身功能,预防疾病,增进健康。
2本发明人通过创造性实验制备的稳定剂成分用于本申请的糖炒板栗饮品能够较长时间的保持饮料的色泽和风味及其稳定性,使得糖炒板栗融合质地均匀,避免较多的沉淀从而延长饮料货架期降低的企业风险;检验结果见表1:

3本发明产品作为饮料,不仅能够起到解渴作用,而且还有保健功能;本发明饮料喝了使人感到沁人心脾。本发明产品另外具有清热解毒、健胃消食、生津止渴等功效,能起到有病治病无病防身的效果;对人体无任何毒副作用。
具体实施方式
实施例1
一种糖炒板栗蛋白饮品及其制作方法,其由下述重量配比原料制备而得,
糖炒板栗酱20份、蜂蜜9份、橄榄油0.4份、中药提取液5份、鲜牛奶10份、稳定剂0.1份,水60份。
所述糖炒板栗酱的制备方法为:将糖炒板栗去皮,用辊磨机磨成均匀的细酱;
所述糖炒板栗的制备方法为:将收获的无虫蛀、无腐烂、无异味、所含包括农残的各项指标符合食品卫生规定的鲜板栗在0℃冷库里存放30天进行糖化、分级清洗、划口、糖炒栗子机炒至7成熟后放入托盘内摊平入锅蒸制,水沸后蒸20分钟,将经过糖炒蒸制的板栗去皮,用辊磨机磨成均匀的细酱;
所述中药提取液由下述重量配比的原料制备而得:
山药20份、茯苓18份、黄芪18份、马齿苋15份、沙棘15份、金银花10份、蒲公英10份。
制备方法为:1)取山药、茯苓、金银花混合均匀,加3倍重量的水武火煮沸,然后文火煎煮1小时,过滤收集滤液和滤渣;往滤渣中添加1倍重量的水,武火煮沸,然后文火煎煮30分钟,过滤收集滤液;合并上述两次滤液得液体A;2)取其余成分(即黄芪、马齿苋、沙棘、蒲公英)加70%乙醇浸泡1小时,提取两次,每次2小时,合并提取液,滤过,得液体B;合并液体A和液体B获得中药汁。
所述稳定剂成分为:乙基麦芽酚、海藻酸钠、黄原胶、单甘脂、六偏磷酸钠、CMC、按照质量比3∶1∶2∶1∶1∶1混合制备。
所述糖炒板栗蛋白饮品的制备方法为:按照重量比例混合糖炒板栗酱、蜂蜜、橄榄油、中药提取液、鲜牛奶、水、并添加稳定剂搅拌均匀,灭菌,然后用高压均质机均质乳化处理,均质压力30Mpa,物料温度50℃左右,均质后的浆液经灭菌后,在无菌条件下灌装,即得。
实施例2
安全性试验
实验动物与环境:清洁级SD大鼠,昆明种小鼠。实验期间实验环境温度21℃-25℃,湿度40%-58%。
小鼠急性毒性试验:选用体重为18g-22g的健康昆明种小鼠20只,雌雄各半。取实施例1制备的饮料按21500ml/kg.bw剂量,间隔3小时分两次经口灌胃,每次灌胃体积为0.2ml/10g.bw。灌胃后连续观察两周,记录中毒表现及死亡情况。
30天喂养试验:选择初断乳的SD大鼠随机分为两组,即对照组及实施例1受试组,每组20只,雌雄各半。对照组予以等体积的蒸馏水。分别给以受试动物灌胃,每天灌胃一次,灌胃体积为2ml/100g.bw,连续30天。各组动物均喂以普通饲料,笼内喂养,自由饮食、饮水。
检验结果:
1.急性经口LD50结果:对雌、雄小鼠的急性经口LD50,均大于21500mg/kg.bw,属无毒物。
2.30天喂养试验结果:实验组经口灌胃30天,试验期间,动物生长发育良好,各剂量组体重、增重、食物利用率、血常规指标、血生化指标、脏器系数与对照组比较,无显著性差异(P>0.05)。大体解剖和组织病理检查未见与样品有关的异常改变。提示送检样品30天喂养对大鼠各项观察指标未产生明显毒副作用。
实施例3
对实施例1产品口味的评定
随机选取100人对实施例1制备的饮品进行品尝,统计品尝结果如下:

品尝者们认为口感很细腻顺滑的占91%,口味很香浓的达到92%,甜度适中的为90%。
实施例4
临床数据
随机选择门诊病例60例为治疗组,女性30例,男性30例,其中腹部饱胀消化不良不适38例,口腔异味13例,口唇生疮9例,随机分成两组。第一组30人,第二组30人。两组在年龄、病程、病情等方面经统计学处理,无显著性差异(P>0.05),具有可比性。
治疗方法:第一组服用实施例1制备的保健饮料,每次200ml,每天三次;
第二组服用专利号201010606836制备的保健饮料,每次200ml,每天三次。
疗效判定标准
显效:使用后5天以内症状减轻,1周以内临床症状及大部分体征消失。
有效:使用本发明后5天以内症状减轻,1周以内临床症状及部分体征消失。
无效:使用本发明5天内无变化者。
研究结果:

使用本发明后症状改善情况总结:体内热毒逐渐排除,口腔异味消除,食欲增加,腹部饱胀、消化不良等症状消除。
本发明采用的上述各中药互作配伍,能发挥其协同作用,所用中药原料各成分之间具有药效相互交织相互促进和协调效能,本申请的保健饮料,成本低廉,效果显著,具有广阔的应用前景。
Claims (1)
1.一种糖炒板栗蛋白保健饮品的制作方法,其由下述重量份的原料制备而得,
糖炒板栗酱20份、蜂蜜9份、橄榄油0.4份、中药提取液5份、鲜牛奶10份、稳定剂0.1份,水60份;
所述饮品的制作方法包括:
(1)制备糖炒板栗酱:将糖炒板栗去皮,磨成均匀的细酱;
(2)制备中药提取液:所述中药提取液由下述重量份的原料制备而得:
山药20份、茯苓18份、黄芪18份、马齿苋15份、沙棘15份、金银花10份、蒲公英10份;所述中药提取液的制备方法包括:1)按照重量份取山药、茯苓以及金银花,混合均匀,加3倍重量的水武火煮沸,然后文火煎煮1小时,过滤收集滤液和滤渣;往滤渣中添加1倍重量的水,武火煮沸,然后文火煎煮30分钟,过滤收集滤液;合并上述两次滤液得液体A;2)按照重量份取其余原料,加70%乙醇浸泡0.5-1.5小时,回流提取两次,每次1-2小时,合并提取液,滤过,得液体B;3)合并液体A和液体B获得所述中药提取液;
(3)制备稳定剂:所述稳定剂成分为:乙基麦芽酚、海藻酸钠、黄原胶、单甘脂、六偏磷酸钠、CMC,按照质量比3∶1∶2∶1∶1∶1混合制备;
(4)混合匀质:按照重量份取糖炒板栗酱、蜂蜜、橄榄油、中药提取液、鲜牛奶、稳定剂以及水,搅拌均匀,灭菌,然后用高压均质机处理,均质压力25-35Mpa,物料温度50℃,均质后的浆液经灭菌后,在无菌条件下灌装,即得。
