Abstract
本发明提供一种枣饮料的加工方法,具体包括以下步骤:①选料;②清洗;③制汁;④稀释调配;⑤超高温灭菌;⑥装罐;⑦二次灭菌;⑧成品。大枣含有大量的糖类物质,具有较强的补养作用,将大枣制作成饮料不仅能增加饮料的功能性还能增添其口感。

本发明涉及到食品领域,具体地讲是涉及一种红枣饮料的加工方法。
背景技术
大枣含有大量的糖类物质,主要为葡萄糖,也含有果糖、蔗糖,以及由葡萄糖和果糖组成的低聚糖、阿拉伯聚糖及半乳醛聚糖等;并含有大量的维生素C、核黄素、硫胺素、胡萝卜素、尼克酸等多种维生素,具有较强的补养作用,能提高人体免疫功能,增强抗病能力。将红枣加工成饮料,不仅能增加饮料的功能性还能增添其口感,在饮料行业也将是一个很大的突破。
发明内容
本发明通过以下技术方案实现的:一种枣饮料的加工方法,首先选择优质的红枣为原料,经过清洗后,将原料枣制作成红枣汁,然后将其进行稀释调配,然后用超高温瞬时灭菌机对其进行第一次灭菌,然后装罐,装罐之后再进行第二次灭菌,灭菌完成后即为成品。具体包括以下步骤:
1、选料,选择优质的新鲜红枣为原料,除去霉变及腐烂的枣;
2、清洗,将选择好的原料枣,用清洗机进行清洗,除去各种杂质;
3、制汁,将清洗干净的红枣制作成红枣汁;
4、稀释调配,将制作好的红枣汁倒入冷热罐中,同时加入添加剂山梨酸钾和乙酰磺胺酸钾,其中山梨酸钾的添加量≤0.38g/kg ,乙酰磺胺酸钾的添加量≤0.3g/kg ,然后将红枣汁与纯净水按9:5的比例进行稀释、调配;
5、超高温灭菌,将调配好的料液用超高温瞬时灭菌机对其进行灭菌,杀菌温度控制在121℃,时间为10s使杀菌完全;
6、装罐,经过灭菌的料液冷却后进行装罐,然后密封;
7、二次灭菌,将密封后的饮料罐放入盛有90℃的恒温水中进行二次灭菌,时间是两分钟。
8、成品,二次灭菌冷却之后,将有涨瓶现象的不合格产品另外处理,其他合格产品可以装箱。
本发明的有益效果是:工艺简单,营养丰富,具有较强的补养作用,同时也丰富了饮料的口感。
具体实施方式
下面结合具体实施例,对本发明做进一步的说明。
一种枣饮料的加工方法,包括以下步骤:
1、选料,选择优质的新鲜红枣为原料,出去霉变及腐烂的枣;
2、清洗,将选择好的原料枣,用清洗机进行清洗,除去各种杂质;
3、制汁,将清洗干净的红枣制作成900kg的红枣汁;
4、稀释调配,将制作好的900kg红枣汁倒入冷热罐中,同时加入添加剂山梨酸钾和乙酰磺胺酸钾,其中山梨酸钾的添加量为270g ,乙酰磺胺酸钾的添加量为180g,然后向冷热罐中加入500kg的纯净水,将红枣汁与纯净水进行稀释、调配;
5、超高温灭菌,将调配好的料液用超高温瞬时灭菌机对其进行灭菌,杀菌温度控制在121℃,时间为10s使杀菌完全;
6、装罐,将经过灭菌的料液进行装罐,然后密封;
7、二次灭菌,将密封后的饮料罐放入盛有90℃的恒温水中进行二次灭菌,时间是两分钟。
8、成品,二次灭菌之后,将有涨瓶现象的不合格产品另外处理,其他合格产品可以装箱。
Claims (1)
1.一种枣饮料的加工方法,其特征在于:包括以下步骤:
①选料,选择优质的新鲜红枣为原料,除去霉变及腐烂的枣;
②清洗,将选择好的原料枣,用清洗机进行清洗,除去各种杂质;
③制汁,将清洗干净的红枣制作成红枣汁;
④稀释调配,将制作好的红枣汁倒入冷热罐中,同时加入添加剂山梨酸钾和乙酰磺胺酸钾,其中山梨酸钾的添加量≤0.38g/kg ,乙酰磺胺酸钾的添加量≤0.3g/kg ,然后将红枣汁与纯净水按9:5的比例进行稀释、调配;
⑤超高温灭菌,将调配好的料液用超高温瞬时灭菌机对其进行灭菌,杀菌温度控制在121℃,时间为10s使杀菌完全;
⑥装罐,经过灭菌的料液冷却后进行装罐,然后密封;
