八宝饭是人们喜爱的食品之一,传统的八宝饭是以糯米为主要原料,辅以其他的原料制成,因此品种、口味单一,限制了八宝饭的发展,随着人们生活水平不断提高,消费者在要求更多口味的同时,对休闲类食品提出了更高的需求,希望在品尝美味的同时,又能够起养生、调理的作用,又能富有更多种类的营养成分,且目前市场上还缺乏一种用紫米配以金丝蜜枣、红小豆、桂圆、冰糖、莲子、白果、果冻粉制成营养且携带方便的紫米八宝饭。
发明内容
为了克服背景技术的缺点与不足之处,本发明的目的在于提供一种紫米水晶八宝饭及其制作工艺,解决目前市场上还缺乏一种用紫米配以金丝蜜枣、红小豆、桂圆、冰糖、莲子、白果、果冻粉制成营养且携带方便的紫米八宝饭的问题。
本发明的目的是通过以下技术方案来实现:
一种紫米水晶八宝饭及其制作工艺,其包括以下步骤:
称取以下原料:紫米30kg,金丝蜜枣6kg,红小豆3kg,桂圆3.5kg,冰糖2.5kg,莲子3kg,白果3.5kg,果冻粉1.5kg,熟猪油100g;
(1)处理主料:将紫米用水淘净后,再用温水泡透,然后上蒸笼蒸煮,加入熟猪油,拌匀备用;
(2)处理辅料:将金丝蜜枣洗净切成细丝,红小豆洗净蒸熟,再将桂圆去壳、白果去壳、莲子去皮去心后一同用水泡涨后蒸煮,备用;
(3)拌料:先将冰糖加水化开,再加入果冻粉溶化,然后将步骤(1)处理得到的主料和步骤(2)处理得到的辅料加入,混合搅拌均匀并加热至90℃;
(4)装碗:将步骤(3)混合均匀的料装入塑料杯碗后迅速真空封口;
(5)杀菌:将步骤(4)装碗后的产品利用紫外线杀菌,并用消毒水冷却至35℃后可装箱为成品。
所述紫米素有“米中极品”之称,它的主要成分是赖氨酸、色氨酸、维生素B1、维生素B2、叶酸、蛋白质、脂肪等多种营养物质,以及铁、锌、钙、磷等人体所需矿物元素;紫米有补血益气、暖脾胃的功效,对于胃寒痛、消渴、夜尿频密等症有一定疗效,此外,糯性紫米粒大饱满,黏性强,蒸熟后食用能使断骨复续,而且紫米饭清香、油亮、软糯可口,营养价值和药用价值都比较高,具有补血、健脾、理中及治疗神经衰弱等功效。
本发明的有益效果为:提供一种紫米水晶八宝饭及其制作工艺,解决目前市场上还缺乏一种用紫米配以金丝蜜枣、红小豆、桂圆、冰糖、莲子、白果、果冻粉制成营养且携带方便的紫米八宝饭的问题,该紫米水晶八宝饭色调和谐,甜香爽口,携带方便,且配以金丝蜜枣、红小豆、桂圆、冰糖、莲子、白果等使营养更全面,含有丰富的多种营养物质,以及铁、锌、钙、磷等人体所需矿物元素,具有补血益气、暖脾胃等功效。

1.一种紫米水晶八宝饭及其制作工艺,其特征在于以下步骤:
称取以下原料:紫米30kg,金丝蜜枣6kg,红小豆3kg,桂圆3.5kg,冰糖2.5kg,莲子3kg,白果3.5kg,果冻粉1.5kg,熟猪油100g;
(1)处理主料:将紫米用水淘净后,再用温水泡透,然后上蒸笼蒸煮,加入熟猪油,拌匀备用;
