Abstract
本发明公开了一种可治疗糖尿病的全麦水饺粉,其创新点在于:它是由黑小麦、高筋小麦和苦荞米按黑小麦70%、苦荞米15%、高筋小麦15%的质量比配料,经去杂工序、去石工序、磁选工序、清洗工序、润麦工序,在润麦24-36个小时以后,进行研磨、筛选、称重和包装后得到的成品。本发明将黑小麦里面的丰富的铬、硒微量元素和苦荞麦特有的降糖效果科学的结合在一起,然后利用高筋小麦的面筋值来做补充,保证包的饺子不破皮,使用本发明的饺子粉制备饺子皮,包出的饺子不但具有降糖的效果又有很好的外观和口感。

技术领域:
本发明涉及一种面粉,具体涉及一种可治疗糖尿病的全麦水饺粉,属于食品加工技术领域。
背景技术:
随着现代生活水平的提高,暴饮、酗酒以及其他不良饮食习惯而引发的肥胖症、糖尿病等,已经成为我国国民的第一健康杀手。据中国医学会糖尿病分会数据显示,仅2011年我国因糖尿病死亡人数达460万,占世界糖尿病人死亡人数的1/4。改变饮食习惯,增加体力运动已成为我国国民身体健康的首要任务。
黑小麦是我国公认的治疗糖尿病最好的食物之一。经检测证明:黑小麦面粉的蛋白质、脂肪、淀粉、干物质、18种氨基酸总量均高于普通小麦,其中苏氨酸比普通小麦高35.56%,缬氨酸对比高66.07%,蛋氨酸对比高33.33%,亮氨酸对比高69.5%,苯氨酸对比高44.30%,赖氨酸对比高50%,组彼岫员雀9.30%。其丰富的铬、硒含量是普通小麦的5-10倍,而这两种可以治疗糖尿病的微量元素在玉米、大米、小米里面含量几乎为零。
研究表明,苦荞米营养价值居所有粮食作物之首,并且含有其他粮食作物所缺乏的特种微量元素及药用成分,对现代“文明病”及几乎所有中老年心脑血管疾病均有预防和治疗功能。《本草纲目》中记载:苦荞米性味苦、平寒,有益气力、续精神、利耳目、降气、宽肠
健胃的作用。临床糖尿病治疗实践证明,苦荞米能够降低空腹血糖、升高胰岛素水平、降低糖化血红蛋白和糖化血清蛋白、降低血脂,从而抑制糖尿病及其合并症的发展。因此,苦荞米是糖尿病人的主要营养食品。目前已经有一些苦荞米产品面世,苦荞营养全粉、苦荞面条、苦荞米茶、苦荞麦饼干等等。现代科研分析,苦荞米营养成分极高,非常丰富,含有生物类黄酮、多种维生素、18种氨基酸、粗蛋白、叶绿素及其硒、锌、镁、铬、钙等矿物质及微量元素,其独特的营养成分是黄酮类物质,其主要成分为芦丁。芦丁又名芸香甙、维生素P,含量占总黄酮的70%-90%,具有降低毛细血管脆性、改善微循环的作用,对糖尿病、高血压有着很好的食效。因此,苦荞米有着其它粮食产品无法可比的营养及食效效果。
高筋小麦:就是蛋白质含量在13.5%以上,面筋值含量高的小麦。适合面筋值要求较高的食品。
中国专利CN201010618937.7公开了一种具有治疗糖尿病功能的面粉及其制备方法,所述的面粉由枸杞、桑葚、佛手、山药、山茱萸、麦冬等多种原料按比例制成,本发明的面粉具有一定的治疗糖尿病的功效,但是原材料种类繁多,不易得,从而导致生产成本高,制备过程繁琐。
发明内容:
本发明提供一种可治疗糖尿病的全麦水饺粉,使得糖尿病人可以吃上安心的水饺。
为解决上述技术问题,本发明采用的技术方案为:它是将黑小麦、高筋小麦和苦荞米按黑小麦70%、苦荞米15%、高筋小麦15%的配比经去杂工序、去石工序、磁选工序、清洗工序、润麦工序,在润麦24-36个小时以后,进行研磨、筛选、称重和包装后得到的成品。
糖尿病人的尿铬含量明显高于正常人,而血铬含量明显低于正常人。三价铬参与机体的糖代谢与脂代谢,胰岛素调节血糖浓度的作用受到铬的支配,血铬在人体内形成一种特殊物质,而胰岛素只有在这种物质的作用下,才能维持血糖的平衡。作为GTF的活性中心,三价铬通过介导胰岛素A链二硫基和胰岛素受体二硫基之间形成配合物从而促进胰岛素与受体之间的结合,即提高胰岛素受体与胰岛素的亲和力、降低周围靶组织对胰岛素的耐受性;同时由于提高了胰岛素利用率,有助于降低胰岛素分泌代偿性障碍,缓解胰岛素分泌压力,可以促进胰腺功能恢复正常。体内缺铬时,胰岛素生物活性降低,靶组织对胰岛素敏感性降低,糖耐量受损,葡糖糖代谢中的磷酸变位酶失去活性,琥珀酸脱氢酶活性降低,减弱琥珀酸的氧化过程,降低葡糖糖的利用率,出现糖代谢紊乱,血糖升高,因此补铬是治疗糖尿病的正确途径之一。
降血糖药物的作用机制主要涉及两个方面:一方面,促进胰岛素分泌和释放;另一方面,影响胰岛素受体作用后代谢的某些环节,主要是抑制肝糖元的异生。硒可以激活葡萄糖转运蛋白的外在化,从而激活葡萄糖的转运过程。硒酸钠可能影响了胰岛素与受体作用后糖代谢的某些环节,可以用硒的类胰岛素活性来解释它的降血糖作用。硒可能象胰岛素那样,在脂肪、肌肉等周围组织中促进细胞对糖的吸收和利用,在肝脏抑制肝糖无异生和分解,增加肝糖元的合成。同时,硒保护了胰岛素功能的正常发挥。在糖代谢磷酸戊糖途径过程中,恢复糖尿病患者肝组织中谷胱甘肽过氧化物酶(GSH-Px)活性,有利于NADPH的合成,保护肝功能,从而维护肝在糖代谢中的重要作用。由于GSH-Px能分解过氧化物,减少自由基产生,故能够保护胰岛素A、B肽链间二硫键免受氧化破坏。硒是GSH-Px的活性中心,因此硒能通过GSH-Px保证胰岛素的结构完整;或者适当剂量的非酶硒直接发挥清除自由基作用,保证胰岛素分子的完整结构和功能,从而表现出降血糖作用。
然而高剂量的硒又可以升高血糖,甚至诱发糖尿病。根据硒生物效应的活性氧自由基机理,高剂量的硒可催化产生自由基。机体内有过多的自由基会破坏胰岛素分子的完整结构,甚至影响胰岛素与受体作用以后糖代谢的顺利进行,所述硒含量要限制在一定的范围内。本发明将70%黑小麦、15%苦荞米和15%高筋小麦作为原料制备水饺粉,黑小麦中含有丰富的治疗糖尿病的微量元素铬和硒,而苦荞米是糖尿病人的主要营养食品,能够降低空腹血糖、升高胰岛素水平、降低糖化血红蛋白和糖化血清蛋白、降低血脂,从而抑制糖尿病及其合并症的发展,因此,以黑小麦、苦荞米原料制备水饺粉具有制备糖尿病的效果。因为苦荞米面筋值较低,做出的饺子容易破口,所以必
须利用高筋小麦的面筋值来做补充,这样在使用本产品包饺子的时候才能保证包的饺子不破皮,才能使这种产品包出的饺子不但具有降糖的效果又有很好的外观和口感。
进一步的,所述研磨工序中将物料研磨成130-150目,优选的为140目。
本发明的有益效果:
1)本发明以黑小麦、苦荞麦和高筋小麦与原料制备饺子粉,原料易得,成本低;
2)本发明将黑小麦里面的丰富的铬、硒微量元素和苦荞麦特有的降糖效果科学的结合在一起,然后利用高筋小麦的面筋值来做补充,保证包的饺子不破皮,使用本发明的饺子粉制备饺子皮,包出的饺子不但具有降糖的效果又有很好的外观和口感。

1.一种可治疗糖尿病的全麦水饺粉,其特征在于:它是由黑小麦、高筋小麦和苦荞米按黑小麦70%、苦荞米15%、高筋小麦15%的质量比配料,经去杂工序、去石工序、磁选工序、清洗工序、润麦工序,在润麦24-36个小时以后,进行研磨、筛选、称重和包装后得到的成品。
2.根据权利要求1所述的一种可治疗糖尿病的全麦水饺粉,其特征在于:所述研磨工序中将物料研磨成130-150目。
3.根据权利要求1所述的一种可治疗糖尿病的全麦水饺粉,其特征在于:所述研磨工序中将物料研磨成140目。
