本发明属于食品加工技术领域,具体涉及一种保健型紫薯冲剂的制作方法。
背景技术
紫薯又叫黑薯,薯肉呈紫色至深紫色。其富含蛋白质、淀粉、果胶、纤维素、氨基酸、维生素及多种矿物质,同时还富含硒元素、花青素和绿原酸,还含有一种重要物质液蛋白,该物质可预防心血管疾病,如高血压、冠心病等,还能治疗消化道、呼吸道、肝脏、肾脏的疾病等 。硒是人体抗疲劳、抗衰老的必要元素,被称为“抗癌大王”,花青素和绿原酸这两种物质也具有抑制癌细胞的产生和减少得作用。日本学者将紫薯列为抗癌蔬菜之首。此外,紫薯富含纤维素,可增加粪便体积,促进肠胃蠕动,清理肠腔内滞留的粘液、积气和腐败物,排出粪便中的有毒物质和致癌物质,保持大便畅通,改善消化道环境,防止胃肠道疾病的发生。紫薯除了具有普通红薯的营养成分外,还含有多糖、黄酮类物质,具有一定预防高血压、减轻肝机能障碍、抗癌的功能。紫薯作为一种健康食品,由于其突出的营养保健功能,越来越受到人们的重视。保健型紫薯冲剂以紫薯为主要原料,辅以营养和功效作用突出的发芽糙米,利用生物工程技术制备而成。
发明内容
本发明的目的是提供一种口感好、营养丰富的保健型紫薯冲剂的制作方法。
本发明的目的是这样实现的:将紫薯去皮、切片、干燥、粉碎,过20目筛子,得紫薯粗粉,将发芽糙米也粉碎并过20目筛子,得发芽糙米粉,将紫薯粗粉和发芽糙米粉按照质量比4:6的比例混合均匀,加入紫薯粗粉和发芽糙米粉总质量5-6倍的水调浆,在60—65℃条件下水解5—6小时,将水解液用层纱布粗滤,将滤液煮沸15~20分钟灭酶,得紫薯水解液,将紫薯水解液与紫薯粗粉按照质量比10:3的比例混合均匀,在80℃条件下加热10分钟,用胶体磨磨浆,然后均质、喷雾干燥即得成品。
保健型紫薯冲剂是以紫薯为主要原料,利用发芽糙米中的多种酶对紫薯粉进行水解,水解液再与紫薯粉混合,经胶体磨磨浆、喷雾干燥等工序精制而成。本发明的紫薯冲剂中不仅含有大量的紫薯原有的营养成分,由于添加了发芽糙米,所以又增加了γ-氨基丁酸等功效成分,γ-氨基丁酸具有健脑、降压、减肥和预防皮肤老化等多种生理功效,又由于发芽糙米的水解作用,又增加了多肽、氨基酸、低聚糖、可溶性膳食纤维等小分子功效成分,这些新增的成分具有增强机体免疫力、促进消化吸收、润肠通便改等多种功能。所以本发明的保健型紫薯冲剂在原紫薯的基础上,营养与保健功效也明显提高。
具体实施方案
将紫薯去皮、切片、干燥、粉碎,过20目筛子,得紫薯粗粉,将发芽糙米也粉碎并过20目筛子,得发芽糙米粉,将紫薯粗粉和发芽糙米粉按照质量比4:6的比例混合均匀,加入紫薯粗粉和发芽糙米粉总质量5-6倍的水调浆,在60℃条件下水解6小时,将水解液用层纱布粗滤,将滤液煮沸20分钟灭酶,得紫薯水解液,将紫薯水解液与紫薯粗粉按照质量比10:3的比例混合均匀,在80℃条件下加热10分钟,用胶体磨磨浆,然后均质、喷雾干燥即得成品。
