Abstract

本发明提供一种肉类食品稳定剂,所述肉类食品稳定剂由以下质量份数的各组分组成:魔芋精粉20-30份、瓜尔豆胶15-20份、羧甲基纤维素钠1.0-1.5份、刺槐豆胶4-6份、变性淀粉8-10份、山梨醇脂肪酸酯1-2份。经测定,当稳定剂中各组分含量为本发明所述的配比时,效果最好。应用本发明的肉类食品稳定剂冷冻保藏肉类,肉类在6个月内风味和营养无损失。

技术领域
本发明属于食品添加剂技术领域,具体涉及一种肉类食品稳定剂。
背景技术
速冻食品随贮藏时间延长以及冷链中温度变化,会造成速冻食品中冰晶的重结晶,导致速冻食品风味和结构变劣。不同的原料,冰晶的形成对其影响不同。
对肉类成分来说,冰晶变大,在肉中对组织形成了挤压使细胞破裂,组织结构破坏。由于细胞内脱水而溶液浓度增加,细胞内的胶质成为不稳定状态,原有保水能力的蛋白质等营养成分凝固变性,造成冻结肉类食品的风味与营养损失,并且造成肉质持水能力下降,食用时有渣感,变色变味。
发明内容
本发明提供了一种肉类食品稳定剂,能够确保冻结肉类食品的风味与营养长时间不损失。
    本发明提供一种肉类食品稳定剂,所述肉类食品稳定剂由以下质量份数的各组分组成:魔芋精粉20-30份、瓜尔豆胶15-20份、羧甲基纤维素钠1.0-1.5份、刺槐豆胶4-6份、变性淀粉8-10份、山梨醇脂肪酸酯1-2份。
    优选地,所述肉类食品稳定剂由以下质量份数的各组分组成:魔芋精粉25份、瓜尔豆胶18份、羧甲基纤维素钠1.2份、刺槐豆胶5份、变性淀粉9份、山梨醇脂肪酸酯1.5份。
经测定,当稳定剂中各组分含量为本发明所述的配比时,效果最好。应用本发明的肉类食品稳定剂冷冻保藏肉类,肉类在6个月内风味和营养无损失。
具体实施方式
    以下的实施例便于更好地理解本发明,但并不限定本发明。下述实施例中的实验方法,如无特殊说明,均为常规方法。
实施例1
本发明的肉类食品稳定剂的配方如下:     魔芋精粉25g、瓜尔豆胶18g、羧甲基纤维素钠1.2g、刺槐豆胶5g、变性淀粉9g、山梨醇脂肪酸酯1.5g。
实施例2
本发明的肉类食品稳定剂的配方如下:     魔芋精粉20g、瓜尔豆胶15g、羧甲基纤维素钠1.5g、刺槐豆胶6g、变性淀粉8g、山梨醇脂肪酸酯1g。
实施例3
本发明的肉类食品稳定剂的配方如下:     魔芋精粉30g、瓜尔豆胶20g、羧甲基纤维素钠1.0g、刺槐豆胶4g、变性淀粉10g、山梨醇脂肪酸酯2g。

2.根据权利要求1所述的应用,其特征在于:所述肉类食品稳定剂由以下质量份数的各组分组成:魔芋精粉25份、瓜尔豆胶18份、羧甲基纤维素钠1.2份、刺槐豆胶5份、变性淀粉9份、山梨醇脂肪酸酯1.5份。
