Abstract
本发明公开了一种适用于中老年人群的牦牛乳蛋白多肽营养粉及其制备方法,由以下重量份的原料组成:牦牛乳蛋白多肽粉22%~28%,酪蛋白酸钠8%~10%,乳清蛋白粉15%~20%,脱脂奶粉8%~10%,牛磺酸0.11%~0.14%,α-亚麻酸0.2%~0.5%,乳酸钙1.0%~2.0%,葡萄糖酸锌0.10%~0.12%,乳酸亚铁0.08%~0.10%,膳食纤维(聚葡萄糖10%~14%、低聚果糖6%~10%),麦芽糊精10~14%,复合维生素0.2%~0.3%,苹果粉2%~3%。本发明的普通型牦牛乳酪蛋白全营养粉各原料搭配合理,全面补充了中老年人群所需营养物质,富含的酪蛋白磷酸肽能够促进矿物质吸收,提高骨密度,预防骨质疏松症;通过上述成分的相互配伍、协同作用,从根本上解决了中老年人群常见的健康问题,有效地帮助中老年人群保持身心健康。

技术领域
本发明属于乳制品技术领域,具体涉及一种适用于中老年人群的牦牛乳蛋白多肽营养粉。
背景技术
目前世界范围内,已经有许多国家和地区相继进入老龄化社会,我国目前大于60岁的人口约有1.3亿,约占全国人口的10%,2020年将达到2.8亿,占我国人口总数的19.5%,预计到本世纪中叶我国将成为世界上人口老龄化最严重的国家之一。且随着年龄的增加,中老年人基础代谢率降低,合成代谢下降而代谢分解增高,引起细胞功能下降,导致对食物的消化吸收利用率降低,心血管功能减退,容易出现营养素缺乏和慢性病发生,抵抗力下降等问题。因此,研制与开发中老年人食品,越来越受到重视,我国也把中老年食品列为21世纪食品。
另外,中国居民营养状况存在较大问题。首先,由于人们缺乏营养知识,选择食物不均衡,造成膳食结构不合理,引起与营养膳食相关的多种疾病,如高血压、糖尿病、癌症、肥胖及维生素和矿物质缺乏症。其次,普遍存在缺钙的问题。因此,从营养角度搞好中老年人的保健工作,延缓衰老过程,预防和减轻中老年病的发生,减少国家医疗费用的巨额开支将有重要和深远的意义。
发明内容
本发明的目的是提供一种适用于中老年人群的牦牛乳蛋白多肽营养粉;
本发明的另一个目的是提供一种适用于中老年人群的牦牛乳蛋白多肽营养粉的制备方法。
本发明的技术方案如下:一种适用于中老年人群的牦牛乳蛋白多肽营养粉,由下述质量百分比的原料制成:牦牛乳蛋白多肽粉22%~28%、酪蛋白酸钠8%~10%、乳清蛋白粉15%~20%、脱脂奶粉8%~10%、牛磺酸0.11%~0.14%、α-亚麻酸0.2%~0.5%、乳酸钙1.0%~2.0%、葡萄糖酸锌0.10%~0.12%、乳酸亚铁0.08%~0.10%、聚葡萄糖10%~14%、低聚果糖6%~10%、麦芽糊精10%~14%、复合维生素0.2%~0.3%和苹果粉2%~3%。
优选的,复合维生素含有维生素A、维生素C、维生素E、维生素B1、维生素B2、维生素B6和维生素B12。优选的,牦牛乳酪蛋白肽粉是以牦牛乳酪蛋白为原料,经过蛋白酶水解后其分子量为5000Da以下的肽类产品。分子量小、结构简单,吸收率高。
一种适用于中老年人群的牦牛乳蛋白多肽营养粉的制备方法,包括以下步骤:
A、包埋:将酶水解的牦牛乳蛋白多肽粉溶解,添加与牦牛乳蛋白多肽粉等量的β-环状糊精,充分混匀后进行包埋(用现有方法);
B、喷雾干燥:将包埋好的牦牛乳蛋白多肽粉在10-15MPa压力下进行均质,之后进行喷雾干燥;
C、原辅料混合:将喷雾干燥好的牦牛乳蛋白多肽粉与其它原料按比例按等量递加法进行混合,充分混匀后,在85℃条件下杀菌15s后进行包装,即可得到成品。
优选的,所述步骤A中牦牛乳蛋白多肽粉溶解的料水比为1:10。优选的,所述步骤B中喷雾干燥的进风温度为165℃,排风温度为85℃。
本发明针对中老年人群免疫力降低、易缺钙、心血管功能下降特点专门设计,具有以下优点:
(1)以动物蛋白为蛋白质补充源,较植物蛋白容易吸收,通过优化其配方与工艺,得到的蛋白粉营养全面。各原料间无配伍禁忌,且剂量在安全使用剂量内,使用安全可靠。蛋白质补充剂采用酶水解牦牛乳蛋白多肽粉,使蛋白质分子量更小、更易消化吸收,在短时间内补充人体所需的氨基酸,为人体提供氮源;其富含酪蛋白磷酸肽、酪蛋白糖巨肽和免疫调节肽,可提高机体免疫力,增强体质;富含酪蛋白磷酸肽,可促进矿物质的吸收利用,预防骨质疏松;富含抗血栓肽、降血压肽和β-酪啡肽,可调节心血管功能,预防心血管疾病;富含酪蛋白糖巨肽,能够促进肠道内有益菌生长,有效预防便秘;富含抗氧化肽,能够很好的清除人体内自由基,延缓衰老。
(2)通过牦牛乳酪蛋白多肽、酪蛋白酸钠、乳清蛋白和脱脂奶粉相配伍,提高了产品供能时间;
(3)牦牛乳酪蛋白多肽和牛磺酸相配伍,使产品具有较强的免疫调节作用;
(4)牦牛乳酪蛋白多肽和α-亚麻酸相配伍,使产品具有很好的降血压血糖的作用;
(5)牦牛乳酪蛋白多肽和矿物质相互配伍,促进矿物质更好地吸收,预防骨质疏松。
(6)以酶水解酪蛋白粉代替蛋白质粉,增加了产品的溶解性,改善了蛋白粉产品的感官性状。
具体实施方式
下面的实施例可以进一步说明本发明,但不以任何方式限制本发明。
实施例1
各原料组成如下(克/100克营养粉):
牦牛乳蛋白多肽粉28%、酪蛋白酸钠10%、乳清蛋白粉20%、脱脂奶粉10%、牛磺酸0.14%、α-亚麻酸0.5%、乳酸钙2.0%、葡萄糖酸锌0.10%、乳酸亚铁0.08%、聚葡萄糖10%、低聚果糖6%、麦芽糊精10%、复合维生素0.2%、苹果粉2.98%。
该牦牛乳蛋白多肽营养粉的制备工艺,包括以下步骤:
(1)包埋:将酶水解的牦牛乳蛋白多肽粉(以料水比=1:10)溶解,添加与牦牛乳蛋白多肽粉等量的β-环状糊精,充分混匀后进行包埋;
(2)喷雾干燥:将包埋好的牦牛乳蛋白多肽粉进行均质(10-15MPa压力),之后进行喷雾干燥,其喷雾干燥条件为:进风温度165℃,排风温度85℃。
(3)原辅料混合:将喷雾干燥好的牦牛乳蛋白多肽粉与其它原料按比例按等量递加法进行混合,充分混匀后在85℃条件下杀菌15s后进行包装,即可得到成品。
实施例2
一种适用于中老年人群的牦牛乳蛋白多肽营养粉配方如下(克/100克营养粉):
牦牛乳蛋白多肽粉22%、酪蛋白酸钠10%、乳清蛋白粉20、脱脂奶粉10%、牛磺酸0.125%、α-亚麻酸0.4%、乳酸钙2.0%、葡萄糖酸锌0.12%、乳酸亚铁0.10%、聚葡萄糖12.005%、低聚果糖8%、麦芽糊精12%、复合维生素0.25%、苹果粉3%。
生产方法同实例1。
实施例3
一种适用于中老年人群的牦牛乳蛋白多肽营养粉配方如下(克/100克营养粉):
牦牛乳蛋白多肽粉22.19%、酪蛋白酸钠8%、乳清蛋白粉20%、脱脂奶粉8%、牛磺酸0.11%、α-亚麻酸0.2%、乳酸钙1.0%、葡萄糖酸锌0.10%、乳酸亚铁0.10%、聚葡萄糖14%、低聚果糖10%、麦芽糊精14%、复合维生素0.3%、苹果粉2%。
生产方法同实例1。
针对产品相关作用,进行功能性实验,其结果如下:
(1)对产品提高骨密度功能进行检验验证,其动物实验如下:
该蛋白粉成人推荐量以20g/60kg/d,动物采用出生四周左右的断乳大鼠(体重为60~75g,雌性),每20只为一组,实验按人推荐量的5倍、10倍、20倍(1.66、3.33、6.66g/kg/bw)三个剂量组和蒸馏水对照组,不同剂量组每天在同一时刻进行受试样品给予,受试时间为3个月,进行实验,实验结果如下:
(A) 禁食12h、饲喂蛋白粉后每周测定大鼠体重,结果见表一:
(B)大鼠饲养3个月后处死,取出同一侧股骨,与105℃烘箱烘至恒重,称其重量,用骨密度仪测定股骨重点及远端骨密度,用原子吸收法测定骨钙含量,结果见表二:
由上述结果看出,经给予蛋白多肽营养粉强化后,低中高剂量组大鼠与对照组大鼠体重增量差异不显著;而骨密度与骨钙含量均高于对照组,根据≤保健食品检验与技术评价规范≥中判定标准,提示该产品具有调高骨密度作用。
(2)对产品降血糖功能进行检验验证,其实验结果如下:
该蛋白粉成人推荐量以20g/60kg/d,挑选55~65周岁非过敏体质、血糖含量偏高人群,每20人为一组,试食组按推荐量服用受试蛋白粉,对照组不食用蛋白粉,服用时间为一个月,得到结果见表三:
根据试验,该蛋白多肽营养粉可辅助降低血糖。

1.一种适用于中老年人群的牦牛乳蛋白多肽营养粉,其特征在于它由下述质量百分比的原料制成:牦牛乳酪蛋白多肽粉22%~28%、酪蛋白酸钠8%~10%、乳清蛋白粉15%~20%、脱脂奶粉8%~10%、牛磺酸0.11%~0.14%、α-亚麻酸0.2%~0.5%、乳酸钙1.0%~2.0%、葡萄糖酸锌0.10%~0.12%、乳酸亚铁0.08%~0.10%、聚葡萄糖10%~14%、低聚果糖6%~10%、麦芽糊精10%~14%、复合维生素0.2%~0.3%和苹果粉2%~3%。
2.根据权利要求1所述的一种适用于中老年人群的牦牛乳蛋白多肽营养粉,其特征在于:复合维生素含有维生素A、维生素C、维生素E、维生素B1、维生素B2、维生素B6和维生素B12。
3.根据权利要求2所述的一种适用于中老年人群的牦牛乳蛋白多肽营养粉,其特征在于:牦牛乳酪蛋白多肽粉是以牦牛乳酪蛋白为原料,经过蛋白酶水解后其分子量为5000Da以下的肽类产品。
4.权利要求1所述的一种适用于中老年人群的牦牛乳蛋白多肽营养粉的制备方法,其特征在于它包括以下步骤:
A、包埋:将酶水解的牦牛乳酪蛋白多肽粉溶解,添加与牦牛乳酪蛋白多肽粉等量的β-环状糊精,充分混匀后进行包埋;
B、喷雾干燥:将包埋好的牦牛乳酪蛋白多肽粉在10-15MPa压力下进行均质,之后进行喷雾干燥;
C、原辅料混合:将喷雾干燥好的牦牛乳酪蛋白多肽粉与其它原料按比例按等量递加法进行混合,充分混匀后,在85℃条件下杀菌15s后进行包装,即可得到成品。
5.根据权利要求4所述的适用于中老年人群的牦牛乳蛋白多肽营养粉的制备方法,其特征在于:所述步骤A中牦牛乳酪蛋白多肽粉溶解的料水比为1:10。
6.根据权利要求4或5所述的一种适用于中老年人的牦牛乳酪蛋白营养粉的制备方法,其特征在于:所述步骤B中喷雾干燥的进风温度为165℃,排风温度为85℃。
