本发明公开了一种魔芋海三珍酱及其制备方法,是由下述重量份的原料制成:鱿鱼条30-35、鱿鱼须10-20、虾仁20-30、魔芋粉30-40、海带粉8-15、树仔菜8-12、灰灰菜8-13、榛子5-8、松子5-10、芝麻油0.4-0.8、抹茶粉2-5、枣花蜜3-8、板栗叶2-3、远志1-2、刺五加叶1-2、红景天2-3、荔枝草2-3、芦根2-3、生姜粉5-7、五香粉0.4-1、米醋8-12、酱油3-8、料酒6-13、植物油适量;本发明魔芋海三珍酱,采用海鱼原料加工制备,营养丰富,口感鲜嫩软滑,加入魔芋粉及其他中药有益成分,增强保健价值,具有开胃护胃、降脂减肥、排毒养颜、安神益智、护肝抗衰的功能,适合各种人群食用。

本发明涉及一种食品加工领域,尤其涉及一种魔芋海三珍酱及其制备方法。
背景技术
水产类包括各种海鱼、河鱼和其它各种水产动植物,如虾、蟹、蛤蜊、海参、海蜇和海带等。它们是蛋白质、无机盐和维生素的良好来源,味道也非常鲜美,是深受人们欢迎的饮食佳品。
随着生活水平的提高,人们对水产类的需求不仅仅满足于食用新鲜水产类组织,水产制品的加工的多样化越来越得到人们的关注,本发明提供一种魔芋海三珍酱,满足市场的需求。
发明内容
本发明克服了现有技术不足,提供了一种魔芋海三珍酱及其制备方法。
本发明是通过以下技术方案实现的:
一种魔芋海三珍酱,由下述重量份的原料制成:
鱿鱼条30-35、鱿鱼须10-20、虾仁20-30、魔芋粉30-40、海带粉8-15、树仔菜8-12、灰灰菜8-13、榛子5-8、松子5-10、芝麻油0.4-0.8、抹茶粉2-5、枣花蜜3-8、板栗叶2-3、远志1-2、刺五加叶1-2、红景天2-3、荔枝草2-3、芦根2-3、生姜粉5-7、五香粉0.4-1、米醋8-12、酱油3-8、料酒6-13、植物油适量。
所述的魔芋海三珍酱的制备方法,包括以下步骤:
(1)、将板栗叶、远志、刺五加叶、红景天、荔枝草、芦根合并破碎至60-90目,加7-15倍水煎煮,过滤去渣,滤液超滤,与料酒搅拌均匀,得药酒;
(2)、将树子菜、灰灰菜洗净切末研磨成浆,得鲜菜浆;将榛子、松子混匀入锅,加入水煮至稠糊,研磨成浆,加入鲜菜浆、海带粉、枣花蜜搅拌均匀,得香甜酱;
(3)、将鱿鱼条、鱿鱼须、虾仁分别除杂洗净沥干,入笼蒸熟,分别切制成小颗粒后烘干混合,与药酒、米醋、抹茶粉揉拌均匀,静置2-3小时,加适量水焖煮至干,将魔芋粉与其重量2-3倍的水搅拌均匀,加入焖干混合颗粒,搅拌均匀,挤压膨化制粒,得三鲜颗粒;
(4)、取魔芋粉重量的25-50%的植物油入锅加热至75-88℃,加入生姜粉、五香粉煎炒出香,加入三鲜颗粒翻炒香熟,加入其它剩余原料及香甜酱,加水覆盖固态物1-2厘米,搅拌均匀,文火焖煮至固液比为1:0.7-0.9,即得。

本发明魔芋海三珍酱,采用海鱼原料加工制备,营养丰富,口感鲜嫩软滑,加入魔芋粉及其他中药有益成分,增强保健价值,具有开胃护胃、降脂减肥、排毒养颜、安神益智、护肝抗衰的功能,适合各种人群食用。

下面结合实施例对本发明作进一步详细描述:
实施例:
一种魔芋海三珍酱,由下述重量(斤)的原料制成:
鱿鱼条35、鱿鱼须20、虾仁30、魔芋粉40、海带粉12、树仔菜10、灰灰菜8、榛子6、松子6、芝麻油0.8、抹茶粉4、枣花蜜8、板栗叶3、远志1、刺五加叶2、红景天2、荔枝草2、芦根3、生姜粉5、五香粉0.5、米醋8、酱油5、料酒8、植物油适量。
所述的魔芋海三珍酱的制备方法,包括以下步骤:
(1)、将板栗叶、远志、刺五加叶、红景天、荔枝草、芦根合并破碎至80目,加13倍水煎煮,过滤去渣,滤液超滤,与料酒搅拌均匀,得药酒;
(2)、将树子菜、灰灰菜洗净切末研磨成浆,得鲜菜浆;将榛子、松子混匀入锅,加入水煮至稠糊,研磨成浆,加入鲜菜浆、海带粉、枣花蜜搅拌均匀,得香甜酱;
(3)、将鱿鱼条、鱿鱼须、虾仁分别除杂洗净沥干,入笼蒸熟,分别切制成小颗粒后烘干混合,与药酒、米醋、抹茶粉揉拌均匀,静置3小时,加适量水焖煮至干,将魔芋粉与其重量3倍的水搅拌均匀,加入焖干混合颗粒,搅拌均匀,挤压膨化制粒,得三鲜颗粒;
(4)、取魔芋粉重量的30%的植物油入锅加热至78℃,加入生姜粉、五香粉煎炒出香,加入三鲜颗粒翻炒香熟,加入其它剩余原料及香甜酱,加水覆盖固态物2厘米,搅拌均匀,文火焖煮至固液比为1:0.7,即得。
Claims (2)
1.一种魔芋海三珍酱,其特征在于是由下述重量份的原料制成:
鱿鱼条30-35、鱿鱼须10-20、虾仁20-30、魔芋粉30-40、海带粉8-15、树仔菜8-12、灰灰菜8-13、榛子5-8、松子5-10、芝麻油0.4-0.8、抹茶粉2-5、枣花蜜3-8、板栗叶2-3、远志1-2、刺五加叶1-2、红景天2-3、荔枝草2-3、芦根2-3、生姜粉5-7、五香粉0.4-1、米醋8-12、酱油3-8、料酒6-13、植物油适量。
2.一种如权利要求1所述的魔芋海三珍酱的制备方法,其特征在于包括以下步骤:
(1)、将板栗叶、远志、刺五加叶、红景天、荔枝草、芦根合并破碎至60-90目,加7-15倍水煎煮,过滤去渣,滤液超滤,与料酒搅拌均匀,得药酒;
(2)、将树子菜、灰灰菜洗净切末研磨成浆,得鲜菜浆;将榛子、松子混匀入锅,加入水煮至稠糊,研磨成浆,加入鲜菜浆、海带粉、枣花蜜搅拌均匀,得香甜酱;
(3)、将鱿鱼条、鱿鱼须、虾仁分别除杂洗净沥干,入笼蒸熟,分别切制成小颗粒后烘干混合,与药酒、米醋、抹茶粉揉拌均匀,静置2-3小时,加适量水焖煮至干,将魔芋粉与其重量2-3倍的水搅拌均匀,加入焖干混合颗粒,搅拌均匀,挤压膨化制粒,得三鲜颗粒;
