一种速冻食品油,涉及食品原料领域,主要由如下重量份的原料组分制成:精炼棕榈油35-45份、精炼猪油20-30份、精炼棕榈仁油12-18份、精制食用盐2.0-3.5份、纯净水12-20份、聚甘油脂肪酸酯0.5-1.0份、山梨醇酐单硬脂酸酯0.1-0.3份、柠檬酸0.01-0.03份、脱氢醋酸钠0.01-0.03份、黄原胶0.01-0.03份。本发明提供的速冻食品油,油脂晶型可达到速冻食品专用油脂理想晶型的要求,并且本发明的速冻食品油经调和而成,可以弥补单一种类油脂的缺陷,食用更加健康。

技术领域:
本发明涉及食品原料领域,尤其涉及一种速冻食品油。
背景技术:
近年来,随着人们生活节奏的加快及生活水平的提高,速冻食品因其卫生、方便、富有营养,深受人们青睐。速冻食品专用油脂是速冻食品生产中必不可少的重要原料之一,对产品的品质起着至关重要的作用。然而,目前对于速冻食品专用油脂的研究甚少。
速冻食品专用油脂由于其黏度较大,稳定性较好,可改变速冻食品的结构和光泽;此外,其对焙烤制品的风味、口感等品质特性及贮存性也有重要影响。目前速冻食品专用油脂主要有氢化植物油及部分的动物油脂为主。但单纯的氢化植物油硬度较高,影响口感,更重要的是氢化植物油反式脂肪酸含量高,对人体的健康造成威胁;而实用单纯的动物油脂又存在晶粒粗大,产品品质较差等问题,所以目前常用的氢化植物油、动物油脂等速冻食品专用油脂均存在各自的缺点,有待进一步改进。
