本发明涉及一种营养全面的新型速冻食品。
背景技术
近年来,随着人们生活节奏的加快及生活水平的提高,速冻食品因其卫生、方便、富有营养,深受人们青睐。速冻食品专用油脂是速冻食品生产中必不可少的重要原料之一,对产品的品质起着至关重要的作用。然而,目前对于速冻食品专用油脂的研究甚少。
速冻食品专用油脂由于其黏度较大,稳定性较好,可改变速冻食品的结构和光泽 ;此外,其对焙烤制品的风味、口感等品质特性及贮存性也有重要影响。目前速冻食品专用油脂主要有氢化植物油及部分的动物油脂为主。但单纯的氢化植物油硬度较高,影响口感,更重要的是氢化植物油反式脂肪酸含量高,对人体的健康造成威胁;而实用单纯的动物油脂又存在晶粒粗大,产品品质较差等问题,所以目前常用的氢化植物油、动物油脂等速冻食品专用油脂均存在各自的缺点,有待进一步改进。
