背景技术
随着生活水平的提高,生活节奏的加快,对快速食品的需求量愈来愈大,但是现今市场上的这类食品大多营养单一,主要成分为淀粉或者植物蛋白,不能满足人体对多种营养的需求,目前国内市场上的食品口感匹配效果差,大部分人难以接受。
发明内容
鉴于现有技术的不足,本发明的目的在于提供一种含鸡肝的食品及其制备方法。
本发明的目的是这样实现的:
一种含鸡肝的食品,它由如下重量份数的原料制备得到:水发银耳150-200克、鸡肝100-150、水发枸杞30-40克、白菊花10-15克、茉莉花24-30朵、石斛12-15克、荸荠粉10-15克、葛根粉15-20克、姜汁3-5毫升、精盐3-5克、绍酒2-5毫升。
上述含鸡肝的食品,它由如下重量份数的原料制备得到:水发银耳150克、鸡肝100克、水发枸杞30克、白菊花10克、茉莉花24朵、石斛12克、荸荠粉10克、葛根粉15克、姜汁3毫升、精盐3克、绍酒2毫升。
上述含鸡肝的食品的制备方法,它包括如下步骤:将银耳摘去根部,撕成片,洗净;将鲜白菊花冲洗干净,取下花瓣、沥水,浸泡在清水中;荸荠粉、葛根粉加清水60毫升调匀,成芡汁,茉莉花、石斛、水发枸杞洗净,装入药料袋中;鸡肝去筋,切成1厘米见方、0.2厘米厚的片,加入精盐、姜汁、淀粉0.3克拌匀,成肝片生坯;将银耳放入砂锅中,加清水1000毫升,烧沸后撇去浮沫,焖烧45分钟;将药料袋、精盐加入锅中,继续焖烧15分钟;肝片放入沸水中煮30秒钟,捞出、洗净,与姜汁、精盐、绍酒、枸杞、菊花瓣一同加入锅中,烧沸后,撇去浮沫,拣去药料袋,将芡汁调匀,徐徐倒入锅中,勾成薄芡,装盘即可。
本发明原料中合理搭配上述食材,维生素、矿物质和植物纤维含量丰富,使产品营养更均衡,尤其适合肥胖者和维生素缺乏者食用,荸荠粉、葛根粉具有甜味,食盐对本食品也有调味作用,制作方法中更好的保留它们的自然口味,产品味道更鲜美。本发明的制作方法保持原汁原味原药性,能够最大限度发挥各成分的有效作用,制备工艺简单,可适合于家庭应用,亦可适合工厂化大规模生产。

实施例1:
取水发银耳150克、鸡肝100克、水发枸杞30克、白菊花10克、茉莉花24朵、石斛12克、荸荠粉10克、葛根粉15克、姜汁3毫升、精盐3克、绍酒2毫升,将银耳摘去根部,撕成片,洗净;将鲜白菊花冲洗干净,取下花瓣、沥水,浸泡在清水中;荸荠粉、葛根粉加清水60毫升调匀,成芡汁,茉莉花、石斛、水发枸杞洗净,装入药料袋中;鸡肝去筋,切成1厘米见方、0.2厘米厚的片,加入精盐、姜汁、淀粉0.3克拌匀,成肝片生坯;将银耳放入砂锅中,加清水1000毫升,烧沸后撇去浮沫,焖烧45分钟;将药料袋、精盐加入锅中,继续焖烧15分钟;肝片放入沸水中煮30秒钟,捞出、洗净,与姜汁、精盐、绍酒、枸杞、菊花瓣一同加入锅中,烧沸后,撇去浮沫,拣去药料袋,将芡汁调匀,徐徐倒入锅中,勾成薄芡,装盘即可。
实施例2:
取水发银耳200克、鸡肝150、水发枸杞40克、白菊花15克、茉莉花30朵、石斛15克、荸荠粉15克、葛根粉20克、姜汁5毫升、精盐5克、绍酒5毫升,将银耳摘去根部,撕成片,洗净;将鲜白菊花冲洗干净,取下花瓣、沥水,浸泡在清水中;荸荠粉、葛根粉加清水60毫升调匀,成芡汁,茉莉花、石斛、水发枸杞洗净,装入药料袋中;鸡肝去筋,切成1厘米见方、0.2厘米厚的片,加入精盐、姜汁、淀粉0.3克拌匀,成肝片生坯;将银耳放入砂锅中,加清水1000毫升,烧沸后撇去浮沫,焖烧45分钟;将药料袋、精盐加入锅中,继续焖烧15分钟;肝片放入沸水中煮30秒钟,捞出、洗净,与姜汁、精盐、绍酒、枸杞、菊花瓣一同加入锅中,烧沸后,撇去浮沫,拣去药料袋,将芡汁调匀,徐徐倒入锅中,勾成薄芡,装盘即可。
