本发明属于食用菌开发利用领域,提供了一种抗肿瘤保健蘑菇粥的制作工艺。此蘑菇粥包括猴头菇、北虫草、金针菇、香菇、银耳、平菇、杏鲍菇、海鲜菇、蟹味菇、西红柿、薏米、大米等,各原料按比例调配,所选原料要求绿色优质、无病虫害。制备流程包括原料的筛选及预处理、蒸煮、装罐灭菌等,制作过程不添加任何防腐剂及食品添加剂。特征为:以具有抗肿瘤功效的食用菌为主要原料,且原料为新鲜的食用菌子实体,与抗肿瘤蔬菜、谷物搭配使用,增强了各种原料的利用价值及营养价值。此蘑菇粥包含多种活性物质如虫草素、朴菇素、香菇素等,菇味浓郁、营养丰富,对增强免疫力、预防肿瘤具有明显的预防和保健效果。本工艺操作简单,适宜工厂化生产。

技术领域
本发明属于食用菌开发利用领域,具体地说,本发明涉及一种抗肿瘤保健蘑菇粥的制作工艺。
背景技术
联合国粮农组织和世界卫生组织提出最合理的膳食结构为“一荤一素一菇”,可见食用菌的食用价值及营养价值。食用菌种类繁多,含有丰富的蛋白质、多糖和微量元素,含有人体必需的8种氨基酸,且含量可达一般蔬菜水果的几倍甚至几十倍。
食用菌因其鲜美的味道而成为重要的食品原料,但目前食用菌粥类产品大多以一种食用菌为配料,且多以食用菌粉为主,失去了食用菌的原有风味,其营养价值也大打折扣。本发明提供的蘑菇粥含有多种具有抗肿瘤功效的食用菌,且原料为新鲜的食用菌子实体,完整地保留了食用菌的全部营养,包括多种活性物质,能够活化细胞、提高人体免疫力,起到抗肿瘤、预防心脑血管疾病、预防糖尿病等作用;还与抗肿瘤蔬菜、谷物搭配使用,增强了各种原料的利用价值及营养价值。
随着生活质量的提高和诸多慢性病的发生,人们的保健养生意识逐步增强,普遍认为可以通过合理搭配饮食结构有效预防多种疾病。随着食用菌种类的增多与普及,越来越多的人们开始喜欢食用各类食用菌及其制成品,对方便、营养的休闲食品的需求量不断增加。目前,食用菌、西红柿、薏米的抗肿瘤功效已得到医学认证,经常食用对增强免疫力、预防肿瘤具有良好的预防及保健效果。
发明内容
本发明的目的是提供一种抗肿瘤保健蘑菇粥,以多种具有抗肿瘤功效的食用菌为主要原料,且原料为新鲜的食用菌子实体,与抗肿瘤蔬菜、谷物搭配使用,增强了各种原料的利用价值及营养价值。
该蘑菇粥的制作工艺包括:
1、原料的筛选及预处理
挑选无病虫害的原材料,除去杂质,清洗、沥干水分后,按猴头菇5-10份、北虫草5-10份、金针菇10-15份、香菇10-15份、银耳10-15份、平菇5-10份、杏鲍菇5-10份、海鲜菇5-10份、蟹味菇5-10份、西红柿10-20份、薏米5-10份、大米5-10份备料;
2、蒸煮
先将薏米、大米和水以1:1:8的比例煮15 min,将各种原材料和米粥以1:1的比例混合,加入适量的葱、姜末及植物油,一并蒸煮10 min即可;
3、装罐灭菌
将煮好的蘑菇粥分装并按重量比加入1.5-2 %的食盐,密封灭菌。
具体实施方式
本发明提供的实施方式,均按照常规操作进行。
1、原料的筛选及预处理
若有些蘑菇为干品,先泡制再进行预处理;
西红柿去皮和根蒂,最好挑选沙瓤品种;
挑选无病虫害的新鲜原材料,除去杂质,清洗、控干水分后,按猴头菇5-10份、北虫草5-10份、金针菇10-15份、香菇10-15份、银耳10-15份、平菇5-10份、杏鲍菇5-10份、海鲜菇5-10份、蟹味菇5-10份、西红柿10-20份、薏米5-10份、大米5-10份的比例备料;将食用菌切成条状、颗粒状、片状等,用沸水快速焯一下,控水备用;
2、蒸煮
先将薏米、大米和水以1:1:8的比例煮15 min,将各种原材料和米粥以1:1的比例混合,加入适量的葱、姜末及植物油,一并蒸煮10 min即可;
3、装罐灭菌
将煮好的蘑菇粥分装并按重量比加入1.5-2%的食盐,密封灭菌。
此蘑菇粥制作的过程均按照现有粥的生产工艺和标准进行。

1.本发明制备的蘑菇粥包括猴头菇、北虫草、金针菇、香菇、银耳、平菇、杏鲍菇、海鲜菇、蟹味菇、西红柿、薏米、大米等,各原料按比例混合,所选原料要求绿色优质、无病虫害。
2.如权利要求书1所述,该工艺的特点是:以具有抗肿瘤功效的食用菌为主要原料,且原料为新鲜的食用菌子实体,与抗肿瘤蔬菜、谷物搭配使用,增强了各种原料的利用价值及营养价值。
