Abstract

本发明公开了一种槟榔专用红糖香精,其特征在于,主要由以下重量百分比的原料组成:乙基麦芽酚3%~4%,4-羟基-2,5-二甲基-3(2H)呋喃酮1%~2%,香兰素0.2%~0.5%,乙位突厥酮0.5%~1%,乙位紫罗兰酮0.02%~0.04%,2-庚酮0.001%~0.003%,2,3-戊二酮0.008%~0.02%,薄荷脑0.01%~0.03%,5-甲基糠醛0.1%~0.2%等组成。本发明通过乙基麦芽酚、4-羟基-2,5-二甲基-3(2H)呋喃酮及乙位突厥酮的搭配形成红糖的主体香气,同时添加有5-甲基糠醛、乙基紫罗兰酮、草莓酸等辅助原料,因此不仅能确保红糖香气连贯始终,而且制备的红糖香气更加逼真,接近于天然红糖香气。

技术领域
本发明涉及一种香精,具体是指一种槟榔专用红糖香精。
背景技术
槟榔作为一种食品,已在湖南发展达300余年之久。现在,槟榔已成为湘潭乃至湖南食品的支柱产业之一,随着槟榔行业的发展,槟榔厂家需要做出品质更高、口感更好、更多样化的槟榔产品来才能满足消费群体的要求,然而,市面上人们所生产的槟榔,其口味大多一样,没有特色,不能满足人们的需求。
发明内容
本发明的目的在于克服目前槟榔增香剂制备过程较为复杂,成份较多,不适合广泛推广和使用的缺陷,提供一种槟榔增香剂及其制备方法。
本发明的目的通过下述技术方案实现:一种槟榔专用红糖香精,主要由以下重量百分比的原料组成:乙基麦芽酚3%~4%,4-羟基-2,5-二甲基-3(2H)呋喃酮1%~2%,香兰素0.2%~0.5%,乙位突厥酮0.5%~1%,乙位紫罗兰酮0.02%~0.04%,2-庚酮0.001%~0.003%,2,3-戊二酮0.008%~0.02%,薄荷脑0.01%~0.03%,5-甲基糠醛0.1%~0.2%,糠酸甲酯0.008%~0.02%,丙醇0.2%~0.4%,辛酸0.02%~0.04%,草莓酸0.01%~0.04%,异戊酸0.006%~0.012%,乙酸0.01%~0.02%,丙醛0.01%~0.12%,异佛尔酮0.01%~0.03%,2,3,5-三甲基吡嗪0.002%~0.006%,丙二醇91.663%~94.875%。
为了较好的实现本发明,本发明的槟榔专用红糖香精主要由以下重量百分比的原料组成:乙基麦芽酚3%,4-羟基-2,5-二甲基-3(2H)呋喃酮1%,香兰素0.2%,乙位突厥酮0.5%,乙位紫罗兰酮0.02%,2-庚酮0.001%,2,3-戊二酮0.01%,薄荷脑0.02%,5-甲基糠醛0.15%,糠酸甲酯0.01%,丙醇0.2%,辛酸0.02%,草莓酸0.02%,异戊酸0.006%,乙酸0.012%,丙醛0.01%,异佛尔酮0.01%,2,3,5-三甲基吡嗪0.002%,丙二醇94.809%。
或者,本发明的槟榔专用红糖香精主要由以下重量百分比的原料组成:乙基麦芽酚4%,4-羟基-2,5-二甲基-3(2H)呋喃酮2%,香兰素0.3%,乙位突厥酮0.8%,乙位紫罗兰酮0.04%,2-庚酮0.002%,2,3-戊二酮0.02%,薄荷脑0.03%,5-甲基糠醛0.2%,糠酸甲酯0.02%,丙醇0.4%,辛酸0.04%,草莓酸0.04%,异戊酸0.01%,乙酸0.02%,丙醛0.01%,异佛尔酮0.02%,2,3,5-三甲基吡嗪0.003%,丙二醇92.045%。
本发明较现有技术相比,具有以下优点及有益效果:
(1)本发明通过乙基麦芽酚、4-羟基-2,5-二甲基-3(2H)呋喃酮及乙位突厥酮的搭配形成红糖的主体香气,同时添加有5-甲基糠醛、乙基紫罗兰酮、草莓酸等辅助原料,因此不仅能确保红糖香气连贯始终,而且制备的红糖香气更加逼真,接近于天然红糖香气。
(2)本发明不仅具有红糖的香气,而且还具有薄荷的清凉,因此能够压制槟榔果自身苦涩感。
(3)使用本发明所制备的红糖香精,能彻底突破传统槟榔的口味,确保产品的多样化。
具体实施方式
下面结合实施例对本发明作进一步地详细说明,但本发明的实施方式不限于此。
实施例1
本实施例以总重量为100g的槟榔专用红糖香精为例进行说明,本发明的制备采用常规的称量拌合过程来实现,首先分别称取各原料组分如下:
乙基麦芽酚3g,4-羟基-2,5-二甲基-3(2H)呋喃酮1g,香兰素0.2g,乙位突厥酮0.5g,乙位紫罗兰酮0.02g,2-庚酮0.001g,2,3-戊二酮0.01g,薄荷脑0.02g,5-甲基糠醛0.15g,糠酸甲酯0.01g,丙醇0.2g,辛酸0.02g,草莓酸0.02g,异戊酸0.006g,乙酸0.012g,丙醛0.01g,异佛尔酮0.01g,2,3,5-三甲基吡嗪0.002g,丙二醇94.809g。
然后将称取的上述原料倒入搅拌器充分搅拌即可。
实施例2
本实施例以总重量为100g的槟榔专用红糖香精为例进行说明,本发明的制备采用常规的称量拌合过程来实现,首先分别称取各原料组分如下:
乙基麦芽酚4g,4-羟基-2,5-二甲基-3(2H)呋喃酮2g,香兰素0.3g,乙位突厥酮0.8g,乙位紫罗兰酮0.04g,2-庚酮0.002g,2,3-戊二酮0.02g,薄荷脑0.03g,5-甲基糠醛0.2g,糠酸甲酯0.02g,丙醇0.4g,辛酸0.04g,草莓酸0.04g,异戊酸0.01g,乙酸0.02g,丙醛0.01g,异佛尔酮0.02g,2,3,5-三甲基吡嗪0.003g,丙二醇92.045g。
然后将称取的上述原料倒入搅拌器充分搅拌即可。
实施例3

乙基麦芽酚3.5g,4-羟基-2,5-二甲基-3(2H)呋喃酮1.5g,香兰素0.4g,乙位突厥酮0.6g,乙位紫罗兰酮0.03g,2-庚酮0.0015g,2,3-戊二酮0.01g,薄荷脑0.02g,5-甲基糠醛0.15g,糠酸甲酯0.01g,丙醇0.3g,辛酸0.03g,草莓酸0.03g,异戊酸0.008g,乙酸0.015g,丙醛0.01g,异佛尔酮0.025g,2,3,5-三甲基吡嗪0.005g,丙二醇93.3555g。
然后将称取的上述原料倒入搅拌器充分搅拌即可。
如上所述,便可以很好的实现本发明。
