本发明涉及食品加工的技术领域,其特点是将蔬菜作为制作香肠的重要原料。
背景技术
    香肠是一种利用非常古老的食物生产和肉食保存技术,将动物的肉绞碎成泥状,再灌入肠衣制成的长圆柱体管状食品。中国的香肠有着悠久的历史,香肠的类型也有很多,主要分为川味儿香肠和广味儿香肠。主要的不同处就在于广味儿是甜的,川味儿是辣的。在以前香肠是每年过年前制作的食品,而现在一年中的任何时候都可以吃到香肠了。
目前,随着人们生活水平的改善,对香肠的口味要求亦越来越高,本发明推出的配方,改变了香肠品种品质及口味,迎合了广大人群新口味、新口感的需求,配制了一种蔬菜香肠。
发明内容
本发明蔬菜香肠配方为:蔬菜50-60%、白糖3-5%、白酒1-3%、酱油2-4%、十三香粉  2.5-4%、味精2-4%、辣椒粉0.5-4%,荞面20%。
本发明的优点在于;由发明配方生产的蔬菜香肠,既有香肠的特征,又别有风味,提高了香肠的营养成分。
具体实施方式
取蔬菜50g、白糖3g、白酒1g、酱油2g、十三香2.5g、味精2g、辣椒粉0.5g、荞面20g,将蔬菜粉碎和荞面混合均匀,再加入白糖、白酒、酱油、十三香味精、辣椒粉继续搅拌,然后装入肠衣,进行蒸或煮即可制成蔬菜香肠。

1.一种蔬菜香肠,其特征是:原料中以蔬菜为重要成份来制做香肠,即:茄子、黄瓜、小白菜、香菜、甜菜、小包菜、黄椒,辅料为荞面;
蔬菜香肠配方为(为重量百分比):     
蔬菜50-60%、白糖3-5%、白酒1-3%、酱油2-4%、十三香粉 2.5-4%、味精2-4%、辣椒粉0.5-4%、荞面20%。
