Abstract
一种从用热水提取茶叶以制取水溶性茶叶提取物时形成的废茶渣中制取水溶性茶叶提取物的方法,包括将所述废茶渣用酸催化剂水解,水解温度为170℃至250℃,压力为120至600磅/平方英寸,时间为5至120秒。
Description
本发明涉及茶叶产品的制备,更具体地说,涉及由废茶叶渣的酸水解制取水溶性茶叶提取物,所述的茶叶渣是在制取水溶性茶叶提取物时对茶叶进行热水提取过程中形成的。
茶叶产品已经越来越多地以水溶性茶叶提取物的形式销售,常常是以干粉的形式销售。已经作了大量的研究试图改善茶叶饮料的品质,使其风味和颜色尽量接近用冲沏茶叶方式得到的饮料。可溶茶制造的另一方面是增加茶叶可溶固体的产量。
用串级反向提取法或二级提取法从茶叶中制取茶叶提取物的方法是众所周知的。水溶液提取的温度可从室温到高至180℃的高温,同时施以高压。
但是,绝大部分的剩余废茶,即茶叶提取残渣物,目前都丢弃掉。
US-A-4668525叙述了一种用于处理在茶叶提取过程中留下的废茶叶的方法,包括将废茶叶酸化,使pH降低至大约2.0至3.0的范围,用含水溶剂在约80-100磅/平方英寸的压力和约140℃-170℃的温度下将酸化过的废茶叶再提取至少4分钟,把残余的茶叶固体从含水溶剂中分离出来,留下高温高压水提取物。但是,所得到的提取物具有不合格的苦味和梅干样的异味。
我们发明了一种将废茶叶固体在高温下短时间水解的方法,可以使苦味和梅干异味大大减少。据认为,糠醛的形成是产生梅干异味和苦味的原因,在我们的方法中形成的糠醛数量大大减少。
因此,本发明提供了一种从废茶渣中制取水溶性茶叶提取物的方法,所述的废茶渣是在制取水溶性茶叶提取物时用热水提取茶叶而形成的,该方法包括将所述废茶渣在170℃-250℃的温度和120-160磅/平方英寸的压力下用酸催化剂水解5至120秒。
水溶性茶叶提取物可以按常规方法用热水提取红茶或绿茶茶叶得到,例如用串级反向提取法或二级提取法。水溶液提取的温度可以从室温到180℃或更高的温度变化,同时伴以高压。
废茶渣可以脱水处理,而且最好在水解前磨细到例如平均粒径为0.05至2.0毫米。
废茶渣的水解最好在塞流式反应器中进行。在Ind.Eng.Chem.Prod.Res.Dev.,1979年18卷第3期166页D.R.Thompson和H.E.Crethlein的文章“用于纤维素酸水解的塞流式反应器的设计和鉴定”中,介绍了塞流式反应器的原理。大体上,它包括浆体槽、泵、加热装置、注酸装置、反应管、热交换器和控温仪。
所用的酸可以方便地采用食品级强酸,例如HCl、HNO3、H2SO4、H3PO4、CH3COOH或柠檬酸。优选H2SO4和H3PO4。所用酸的数量,按浓酸占废茶渣的重量百分数计,可以为0.01%至15%,优选0.1%至2.0%,特别优选的是0.25%至1.5%。
反应温度优选180℃-240℃,压力优选150至500磅/平方英寸,加工时间优选10-90秒。
然后可以方便地用过滤法将含有酸解产物的水提物与不溶性残渣分开。如果需要的话,可以将酸解产物中和,优选用氢氧化钙中和,然后过滤除掉不溶物。也可以利用阴离子交换树脂除掉酸。
分离出的水提物可以与常规的茶叶水提物、天然茶叶香精或强化剂相混合。(天然茶叶香精是在茶叶提取物蒸发和干燥期间损失的那些物质,通常用汽提及冷凝法回收,在干燥前加回到茶叶浓缩物中)。
如果需要的话,可以将分离出的水提物浓缩,并且喷雾干燥至水份含量低于5%,优选低于4%(重量)。
下列实施例进一步说明本发明。
实施例1-5
脱水的红茶渣磨细料含10%固体物质,是在用热水提取红茶茶叶以制取水溶性茶叶提取物时得到的,令其在连续式塞流管形反应器中于酸催化剂存在下水解,浓度、温度及停留时间如下面的表I所示:(表1见文后)
将水解产物过滤,滤饼用去离子水洗涤。用Ca(OH)2中和滤液,然后过滤除掉不溶的磷酸钙或硫酸钙。
滤液基本上没有任何苦味或梅干异味,糠醛的含量很低。
将滤液在50℃用蒸发器浓缩至40-45%固体。将茶渣酸解产物的浓缩物(10%)与用常规的热水提取法得到的含40-45%固体的茶叶水提物的浓缩物(35%,重量)及茶叶香精相混合,然后用Anhydro喷雾干燥器喷雾干燥,入口温度150℃,出口温度95℃。成品的水含量控制在4%以下。
比较例
将实施例1-5的方法中所用的脱水红茶渣磨细料在高压釜间歇式反应器中用1%磷酸在190℃水解10分钟。糠醛的数量为可溶茶固体重量的4.1%,产品有苦味和梅干异味。

Claims (7)
1.一种从用热水提取茶叶以制取水溶性茶叶提取物时形成的废茶渣中制取水溶性茶叶提取物的方法,该方法包括:在170℃至250℃的温度和120至600磅/平方英寸的压力下,用酸将所述废茶渣水解5至120秒,并将水提物与不溶性残渣分离开,其中酸的用量按浓酸占废茶渣的重量百分数计为0.1-2.0%。
2.根据权利要求1的方法,其中废茶渣的水解在塞流式反应器中进行。
3.根据权利要求1的方法,其中酸是硫酸或磷酸。
4.根据权利要求1的方法,其中温度为180℃-240℃。
5.根据权利要求1的方法,其中压力为150-500磅/平方英寸。
6.根据权利要求1的方法,其中水解时间为10-90秒。
7.根据权利要求1的方法,其中将酸解产物中和。
