本发明涉及一种苦瓜汁的制作方法和配方,其特征在于是一种采用鲜苦瓜所榨原汁和糖类(首选天然蜂蜜)为原料,按一定配比加工而成,原料采取以下重量百分比:苦瓜原汁75%-99%,糖类(首选天然蜂蜜)1%-25%。工艺流程是:新鲜苦瓜洗切、榨汁、过滤、加入糖类(首选天然蜂蜜)、制成饮料、灭菌消毒而成。本发明的有益效果是,一种纯天然绿色食品,极大限度保持了鲜苦瓜的原有营养成分及浓厚的纯正原汁风味、更大限度地保持了苦瓜丰富珍贵的药膳疗效和营养价值。它不含任何化学添加剂和防腐剂。本果汁的制备工艺过程简单,成本低。更好地迎合了广大消费者的原汁、生态、营养、健康的需求。、保持了苦瓜浓厚的纯正原汁风味、保持了天然绿色食品应有的特质及丰富珍贵的药膳营养价值。是理想的功能性原生态绿色食品。
具体实施方式
挑个大肉厚苦瓜洗切备用。清水一锅加热至于90℃(可选择性加入少量葡萄糖酸锌护色,100毫克/公斤水)将苦瓜丁放入烫10分钟,捞出过冷水后,沥水、榨汁、过滤。澄清苦瓜原汁后(可选择性加入小量果胶酶澄清),加入糖类(首选天然蜂蜜)调配,配方重量百分比:苦瓜原汁75%-99%,糖类1%-25%。制成饮料后,灭菌消毒包装。
产品色泽清亮黄绿色,带苦瓜的原汁清香和蜂蜜的香味(糖类如选蜂蜜)。苦中有甜,清口甘凉,清爽润喉。糖类如选蜂蜜,蜂蜜与苦瓜汁相辅相成,无论是从口味的角度还是从药膳营养价值的角度出发,都是佳配。
