发明内容
本发明的目的在于提供一种富有营养的火腿肠的制作方法,以改善以往火腿肠营养比较单一的缺点。本产品主要由以下成分组成:大豆、海带、玉米、芝麻、瘦肉、植物蛋白粉。
大豆中含有大量的大豆蛋白、异黄酮、低聚糖、膳食纤维、大豆油、磷脂、B族维生素、泛酸、烟酸及各种微量元素。能够增强人体免疫功能,防止血管硬化,降低血糖、血脂,延缓细胞衰老。
海带是一种营养价值很高的蔬菜,含有大量的粗蛋白、粗纤维、脂肪、无机盐、钙、铁、胡萝卜素、硫胺素等物质。可以预防甲状腺肿大、白血病、骨痛病,对治疗急性肾功能衰退、脑水肿、乙性脑炎、急性青光眼也有很好的效果。
玉米中含有较多的粗纤维和亚油酸,此外还有蛋白质、矿物质、维生素、叶黄素等物质。对冠心病、动脉粥样硬化、高脂血症及高血压等都有一定的预防和治疗作用,其维生素B6、烟酸等成分,具有刺激胃肠蠕动、加速供便排泄的特性,可防治便秘、肠炎、肠癌。

2、按重量份,称取瘦肉20~40份,用绞肉机绞碎,加入食盐0.3~0.8份,糖0.1~0.5份,黄酒1~10份,混合均匀,腌制3~5小时;
3、按重量份,在步骤2腌制好的瘦肉中加入30~60份植物蛋白粉,20~50份水,再加入步骤1中的混合物A,混合均匀,得混合物B;
4、用塑料肠衣将混合物B灌肠,两头打结,置于锅中小火煮20~40分钟,取出,烘干即得产品。

4、用塑料肠衣将混合物B灌肠,两头打结,置于锅中小火煮40分钟,取出,烘干即得产品。

2.根据权利要求1所述的制作方法,其特征在于:
a)按重量份,称取大豆10份,海带10份,玉米10份,芝麻5份,磨碎,混合均匀,得混合物A;
b)按重量份,称取瘦肉20份,用绞肉机绞碎,加入食盐0.3份,糖0.1份,黄酒1份,混合均匀,腌制3小时;
c)按重量份,在步骤b)腌制好的瘦肉中加入30份植物蛋白粉,20份水,再加入步骤a)中的混合物A,混合均匀,得混合物B;
d)用塑料肠衣将混合物B灌肠,两头打结,置于锅中小火煮20分钟,取出,烘干即得产品。
3.根据权利要求1所述的制作方法,其特征在于:
a)按重量份,称取大豆15份,海带15份,玉米15份,芝麻8份,磨碎,混合均匀,得混合物A;
b)按重量份,称取瘦肉30份,用绞肉机绞碎,加入食盐0.5份,糖0.3份,黄酒5份,混合均匀,腌制4小时;
c)按重量份,在步骤b)腌制好的瘦肉中加入45份植物蛋白粉,35份水,再加入步骤a)中的混合物A,混合均匀,得混合物B;
d)用塑料肠衣将混合物B灌肠,两头打结,置于锅中小火煮30分钟,取出,烘干即得产品。
4.根据权利要求1所述的制作方法,其特征在于:
a)按重量份,称取大豆20份,海带20份,玉米20份,芝麻10份,磨碎,混合均匀,得混合物A;
b)按重量份,称取瘦肉40份,用绞肉机绞碎,加入食盐0.8份,糖0.5份,黄酒10份,混合均匀,腌制5小时;
c)按重量份,在步骤b)腌制好的瘦肉中加入60份植物蛋白粉,50份水,再加入步骤a)中的混合物A,混合均匀,得混合物B;
d)用塑料肠衣将混合物B灌肠,两头打结,置于锅中小火煮40分钟,取出,烘干即得产品。
5.根据权利要求1所述的制作方法,其特征在于:
