实施例可以具有以下的一个或多个优点。可以在诸如食品之类的粘度较低、易于流动状态下的易损表面上形成高分辨率、多种色彩的图像。该图像充分稳定,从而在进一步处理、提供和/或消费产品的一段时间里可以辨认。例如,在食品处于低粘度状态的情况下,可以在15、30或45或更多分钟的时间里保持基本的图像质量。图像并不显著改变食品的粘度,从而不会显著改变食品的构造特性。利用按需喷印式打印装置可以快速、低成本地形成该图像。图像的内容可以在马上要打印之前选择。图像可用于标识食品、生产者或消费者。
其它方面、特点和优点将在以下说明。例如,以下将说明例如重力可流动性、粘度、扩散性、分辨率、食品类型以及其它参数的组合和范围。

具体实施方式
参照图1,利用分装台2和打印台4对食品进行处理。在分装台2处,食品5从分装器4被分装到容器6中。食品5以可流动状态,例如液体或浆体被分装,或者在分装之后被转变成可流动状态。打印台8包括输送机构10和打印头12。输送机构10,例如传送器,支撑并相对于打印头12输送包括了食品的容器6。在打印头12处,喷射介质以一系列流体滴14的形式按照预定的图案落向食品的表面。同时参照图1A,喷射介质可以是着色材料,其设置成形成从产品表面可以看见的希望的图像18的图案。食品可以在打印图像之后的短时间里提供给消费者。例如,食品可以是咖啡饮料。图像可以例如标识该食品、其生产者或消费者,或者可以是装饰性的。
参照图2,利用分装台30、打印台32、包装台34和打印后续处理台36来处理食品。在分装台30,产品被分装到容器38中。在打印台32处,在食品处于可流动状态的同时,喷射介质以一系列流体滴40的形式按照预定的图案落到食品的表面上,从而例如形成图像。在包装台34处,密封包装以便运送。在所示实施例中,包装台包括压盖机,该压盖机在容器38上配上盖42。在打印后续处理台处,对食品进一步处理。在所述实施例中,后续处理台36是用于冷冻产品的快速冷冻器。快速冷冻是特别适合于冰淇淋产品的一个处理步骤,冰淇淋一般在冷冻之前被封装在容器中。通过在可流动状态的产品上打印图像,可以在无需将食品首先冷冻为固态的情况下在产品上形成并保持图像。另外,打印之后冷冻产品减小了介质在食品中的分散。在其它实施例中,后续处理台可以包括其它影响食品粘度或可流动性的处理。对于例如使用在蛋糕和点心上的糖霜,在糖霜处于液体状态(一般是熔化的)时添加喷射介质,该糖霜随后冷却到其固化温度,例如室温左右。对于酸乳酪,例如后续处理可以包括培养,以增加粘度。对于半透明的产品,例如果冻,后续处理可以包括在固化之后,在形成图像的表面上覆盖另一层食品,使得图像位于食品体内。后续的层也可以形成图像,以在食品的不同深度处形成多个图像。其它的后续处理步骤包括通过加热或者暴露于辐射中而进行灭菌。在一些实施例中,后续处理可以在压盖或者将食品封装在容器内之前以及/或者之后进行。
参照图3,打印头是包括一系列模块52的喷墨打印头,从所述模块的喷嘴阵列中喷射出介质。例如,所述打印头可以包括四个模块,各个模块打印一种不同的颜色,以提供四色打印。模块52优选是包括压电元件56的按需喷印模块,所述压电元件对泵送室58中的墨加压以便通过喷嘴开口60进行喷射。在一些实施例中,打印头包括将介质加热到希望的粘度以便喷射的加热器。适合的打印头是NOVA打印头,可以从新罕布什尔州汉诺威市的Specta公司购买到。在上述结合于此的Fishbeck等人的美国专利No.4825227,Hine的美国专利No.4937598,Moynihan等人的美国专利No.5659346和Hoisington的美国专利No.5757391以及WO01/25018中也讨论了适合的压电喷墨打印机,文献WO01/25018的全部内容通过引用结合于此。在一些实施例中,在打印过程中打印头相对于食品移动。
为了得到适合的图像,要选择打印条件,使得介质以流体滴的形式喷射出时,能够防止所述流体滴落在食品表面上而产生过量的溅射或形成凹坑,从而保持图像的完整性。另外,经加热介质的小流体滴在落在食品上之后快速冷却,不传递过量的热量给食品,以便进一步处理。对于粘度约为50,000cps或更小,特别是2,500cps或更小的食品,适合的流体滴大小约为200pL或者更小,例如60~100pL。流体滴的速度约为2~12m/sec,例如约为7~9m/sec。打印分辨率约为50dpi或更大,例如约为150~500dpi。在一些实施例中,介质被加热到例如大约40到125℃,以保持希望的喷射粘度,例如大约10~20cps。粘度利用旋转柱体型粘度计来测量。适合的仪器为具有由Model 106可编程温度控制器控制的Thermoset System 3样品座的ModelDV-III可编程流速计,该设备可以从Brookfield,Middleboro,MA.购买到。在使用#18心轴、速度为60rpm的情况下,所述系统可以测量最高约为49.9cps的粘度。更高的粘度可以利用平行板粘度计来测量。
在打印过程中,食品处于其表面易损、易遭破坏的状态,并且通常是可流动的。例如,食品可以是液体或者膏体。在一些实施例中,食品可以用其在重力下的可流动性来表征。可流动性通过下述方式测量。将食品放置在一端开口、高3英寸、直径3英寸的特富龙柱形容器中。在开口端上放置一扁平的特富龙板。该容器被倒置并垂直移开以得到一个食品柱。食品的可流动性用该柱的高度变化来表示。高度减小1.5英寸表示50%流动。在一些实施例中,食品在24小时或者更短时间内,例如10分钟或更短时间,或者10秒钟或更短时间内,具有50%或者更大的重力可流动性(gravity flowability)。例如,在一些实施例中,可流动性使得食品在移开柱体时可以自由流动,从而不形成自支撑的柱。
在一些实施例中,食品的状态可以用其粘度来表征。适合的粘度约为50,000cps或更小,例如2500,200,100,80或50cps或更小。在一些实施例中,食品在打印过程中的粘度大于水在室温下的粘度。在一些实施例中,食品的粘度可以相对于喷射介质的粘度来调节。例如,食品的粘度优选比喷射介质的粘度小,以减小介质向食品内部分散并保持图像完整性。在一些实施例中,在食品温度下,食品的粘度是喷射介质的粘度的75%或更小。
另外,食品优选处于其基本保持稳定稠度的状态,以便在较长的时间里保持图像。食品的状态优选在打印条件下或者后续处理或消费之前所保持的条件下基本上稳定。具有稳定稠度的食品表现出基本上恒定的重力可流动性或密度。优选,这些特性在打印过程中以及在产品被消费或者进一步处理之前保持在±10%。在一些实施例中,在打印条件下,食品稠度在例如10分钟更更长,或者30分钟或更长时间里是恒定的。
可流动性、稳定性以及/或者粘度可以是产品在被消费时的状态,或者产品可以在打印之前或打印过程中被处理,例如被加热或冷却,以获得所希望的可流动性或粘度。例如,产品可以处在冷冻之上的温度,例如,处在大约40到120,例如,处在室温下。在一些实施例中,产品在消费状态下基本上为固体,但是为了形成图像,其被加热到可流动的粘度状态下。被熔化的食品的离子包括巧克力、糖霜、果冻和布丁。
在一些实施例中,食品包括大约重量占1%、5%或50%或更多的低水溶成份。在一些实施例中,食品包括诸如冰淇淋、乳酪和奶昔之类的奶制品;诸如莱德(lattes)和卡布其诺(cappacinos)之类的含奶制品的咖啡产品;以及成块或作为顶层或糖衣的巧克力。常见的低水溶成份是脂类。适合的脂类包括来自植物或者动物物质的非极性提取物(nonpolar extraction),一般为丙三醇的脂肪酸衍生物。例子包括含有triestes of glycerol(三酰基甘油)的脂肪和油。其它的脂类包括磷脂(用膦酸酯化的丙三醇)或鞘脂(氨基丙三醇衍生物)。脂肪在室温下是固体的,而油在室温下一般是液体的。适合的脂肪和油包括动物黄油、猪油、鱼肝油、鲸油、可可油、椰子、谷物、棉籽、亚麻子、橄榄、花生或大豆提取物。脂肪酸成份包括月桂酸、肉豆蔻酸、棕榈酸、polmitoleic、油酸和亚油酸。在其它实施例中,食品基本上是可水溶的。实施例包括主要由蛋白质,例如凝胶构成的食品,例如果冻。食品还可以包括蜡、树脂或者乳化剂或其它增稠剂。
在一些实施例中,介质具有溶剂基(solvent-based)载体,该载体固化在食品上。这些介质的粘度一般在从喷嘴喷射并落在食品上时相对较低,这样减小了溅射或形成凹坑的情况。之后,随着溶剂载体蒸发或随着载体固化,介质的粘度增大,这样减小了介质向食品内的分散。适合的溶剂载体是小分子量的醇类,例如乙醇。适合的可熔载体为动物脂肪或蜡。在一些实施例中,介质的粘度在喷射过程中约为20cps或更小,例如10~20cps,而食品温度下的粘度为20~200cps或更大。在一些实施例中,喷射时粘度为10~20cps且介质被加热到40~125℃,例如粘度在50~60℃下为12~14cps。在一些实施例中,介质或介质的主要成份在食品中的溶解度较低,以减小介质向食品内的分散。对于包括非极性物质(例如脂类成份)的食品,介质或其主要成份一般是极性的并在水中具有较高的溶解度,例如为可混溶的。例如,在一些实施例中,介质包括高度水溶的载体,其占介质的50%或70%或更多。适合的高度水溶的载体包括水、酸和醇。适合的载体为丙二醇。对于基本上水溶的食品,介质可以包括具有较低水溶性的载体,例如动物脂肪。介质还可以包括诸如有机染料之类的着色剂、稳定剂、柔化剂、增塑剂以及/或者其它添加剂。在一些实施例中,介质包括调味品,但是不包括着色剂或者包括与食品无对比性的着色剂。在这些实施例中,调味成份可以分布成预定图案,但是不形成可以看见的图像。在WO03/048260中公开了适合于可食用介质的成份,该文献的全部内容通过引用结合于此。适合的调味品包括糖或诸如水果香料提取物之类的提取物。优选介质所包括的可食用成份在联邦管理条例(Code of Federal Regulations)的第21节中列为“被广泛认为是安全的直接食物添加剂(GRAS,Generally Recognized as Safe direct food addiktive)”,或者列入EAFUS中,即包括在食品药物管理局的“美国食品添加物(everything added to food in the United States)”表单中。“可食用介质”是所有杂质(即所有未列入GRAS或EAFUS的成份)的重量含量小于100ppm的墨。适合的介质可以从加利福尼亚州Escondido市的Sensient ImagingTechnologies公司购买到,叫做“FG”墨系列。这些墨可以是红色、绿色、蓝色和黄色的。
在一些实施例中,在不改变食品的情况下,食品的图像保持一定的时间,例如10分钟或更长,例如30分钟或更长,以便在对其进一步处理以及/或者提供给消费者时图像是可以辨认的。特定食品和喷射流体的图像质量的变化可以通过测量介质随时间侧向扩散的情况来确定。为了确定特定介质的扩散量,在食品上沉积各边尺寸为0.25英寸的单色正方形。监测该方形的宽度。宽度的增大量被表达为原始宽度的百分比,以指示图像质量的保持情况。在一些实施例中,在10分钟或者更长时间,例如30分钟或者更长时间,图像扩散约为10%或更小,例如2%或1%或更小。
示例
参照图4,四种颜色的漂浮气球的图像打印在牛奶冻咖啡饮料上。食品的成份包括咖啡和奶制品。食品在打印过程中的粘度约为80~100cps。食品的温度低于室温,约为32。食品装在直径约为2.5英寸、高2英寸的纸杯中。图像利用Spectra Model JetXpres-4/FG打印机打印,所述打印机可以从美国新罕布什尔州汉诺威市的Spectra公司购买到。该打印机包括具有长约1.25英寸的喷嘴阵列的打印头。喷嘴直径约为52微米。流体滴大小约为80pL,分辨率约为203dpi,打印头温度约为55℃。食品以大约25英尺/分钟的速度在传送器上相对于打印头移动。从打印头到食品表面的距离约为1cm。喷射介质是加利福尼亚州Escondido市的Sensient/Formulabs公司的“FG”墨系列。这些墨由下列成份构成:丙二醇、丙三醇、纯净水、异丙醇和有机染料,各成份的含量递减。蓝色墨包括FD&C蓝色1号和红色3号。红色墨包括红色3号、红色40号和蓝色1号。黄色墨包括黄色5号、红色40号和蓝色1号。绿色墨包括黄色5号、蓝色1号,并包括氢氧化钠。这些墨分别为不小于2.1%、2-3%、2.0%和2.0%的纯染料。图像在食品上无显著扩散地保持大约30分钟。
在所附权利要求中包括了其它的实施例。例如,图像可以打印在除了食品以外的易损、可流动基质上。
Claims (36)
1.一种处理方法,其包括:
提供能够喷射一系列流体滴以在基质上沉积出预定图案的喷墨打印机;
提供24小时内重力可流动性约为50%或者更大的、可保持稠度的食品;以及
从所述喷墨打印机向所述食品上以预定图案施加一系列介质流体滴,所述流体滴的流体滴体积约为200pL或更小。
2.如权利要求1所述的处理方法,其中,包括在施加所述介质之后,处理所述食品以减小所述重力可流动性。
3.如权利要求2所述的处理方法,其中,所述进一步处理包括冷却所述食品。
4.如权利要求3所述的处理方法,其中,所述进一步处理包括将所述食品冷却到大约32或更低。
5.如权利要求1所述的处理方法,其中,包括在施加所述介质之后,将所述食品封装在容器中。
6.如权利要求1所述的处理方法,其中,所述食品具有约为50,000cps或更小的粘度。
7.如权利要求1所述的处理方法,其中,所述食品具有约为50到110cps的粘度,所述流体滴体积约为120pL或更小。
8.如权利要求1所述的处理方法,其中,所述喷墨打印机是按需喷印式喷墨打印机。
9.如权利要求8所述的处理方法,其中,所述喷墨打印机是压电喷墨打印机。
10.如权利要求1所述的处理方法,其中,包括将所述喷射介质加热到大约40到140℃的温度。
11.如权利要求1所述的处理方法,其中,包括以50dpi或更高的分辨率进行打印。
12.如权利要求1所述的处理方法,其中,在施加介质的过程中,在食品温度下,所述喷射介质的粘度大于食品的粘度。
13.如权利要求1所述的处理方法,其中,所述喷射介质在喷射条件下具有大约8~20cps的粘度。
14.如权利要求1所述的处理方法,其中,所述喷射介质在室温下具有大约70~100cps的粘度。
15.如权利要求1所述的处理方法,其中,所述喷射介质具有水溶性载体。
16.如权利要求1所述的处理方法,其中,所述喷射介质主要是醇或酸或水或它们的混合物。
17.如权利要求1所述的处理方法,其中,所述喷射介质主要是脂肪或蜡,并且在室温下为固体。
18.如权利要求1所述的处理方法,其中,所述喷射介质在所述食品中基本上是不可溶的。
19.如权利要求1所述的处理方法,其中,所述喷射介质包括可以看见的染料。
20.如权利要求1所述的处理方法,其中,所述喷射介质包括调味添加剂。
21.如权利要求1所述的处理方法,其中,所述食品是乳制品。
22.如权利要求21所述的处理方法,其中,所述食品是冰淇淋或酸乳酪。
23.如权利要求1所述的处理方法,其中,所述食品是包括乳制品的咖啡饮料。
24.如权利要求1所述的处理方法,其中,在施加介质时,所述食品处于约为室温或更高的温度下。
25.如权利要求1所述的处理方法,其中,包括在施加所述介质之后的大约45分钟内将所述食品提供给消费者。
26.如权利要求1所述的处理方法,其中,所述食品上的介质在10分钟之后具有大约10%或更小的图像扩散。
27.一种处理,其包括:
提供能够喷射一系列流体滴以在基质上沉积出预定图案的喷墨打印机;
提供24小时内重力可流动性约为50%或者更大的食品;
以预定图案向所述食品施加一系列介质流体滴,所述流体滴具有大约200pL或更小的体积,所述食品上的介质在30分钟内具有大约10%的图像扩散;以及
在施加所述介质之后,处理所述食品以降低所述重力可流动性。
28.如权利要求27所述的处理方法,其中,包括在施加所述介质之后,将所述食品封装在容器中。
29.如权利要求28所述的处理方法,其中,包括在降低所述重力可流动性之前将所述食品封装在容器中。
30.如权利要求27所述的处理方法,其中,包括在施加所述介质后的10分钟或者更长时间之后降低所述重力可流动性。
31.一种食品,其包括:
24小时内重力可流动性约为50%或更大的、可保持稠度的可食用物,所述可食用物包括可从其表面看到的图像,所述图像由分辨率约为50dpi或更大的预定的一系列流体滴限定出,并且图像扩散在大约10分钟内约为10%。
32.如权利要求31所述的食品,其中,所述重力可流动性是自由流动。
33.如权利要求31所述的食品,其中,所述图像扩散约为2%或更小。
34.如权利要求31所述的食品,其中,所述图像扩散在大约30分钟内约为2%。
35.如权利要求31所述的食品,其中,所述食品包括乳制品。
36.如权利要求31所述的食品,其中,所述食品是咖啡饮料。
