Abstract
La invención proporciona un producto graso sólido vegetal cuyo ingrediente fundamental es aceite de oliva, preferentemente aceite de oliva virgen extra (AOVE), siendo el resto de los ingredientes manteca de cacao desodorizada, lecitina de girasol líquida, celulosa microcristalina líquida y, en su caso, estabilizante de mono y diglicéridos de ácidos grasos de origen vegetal. Igualmente se refiere al uso del producto en la cocina y en la fabricación de productos de pastelería y repostería como sustituto de la mantequilla y la margarina.
