Abstract
MéTODO DE FABRICAçãO DE UM LìQUIDO LáCTEO CONCENTRADO ESTáVEL, E, LìQUIDO LáCTEO CONCENTRADO ESTáVEL A invenção refere-se a um líquido lácteo concentrado estável, tal como leite concentrado, com flavor, cor e sabor na boca melhorados, e um método de produção deste. O método utiliza tratamentos térmicos específicos para produzir o líquido lácteo concentrado estável ao qual um estabilizante e um melhorador de paladar são adicionados. Os produtos resultantes têm um valor de esterilização F~ ?~ de pelo menos 5 que é também resistente à geleificação e ao amarronzamento durante esterilização em alta temperatura e é também resistente à geleificação e amarronzamento durante a armazenagem por mais que seis meses. O método equilibra tais tratamentos térmicos com adição de estabilizantes e melhorador para alcançar o flavor / sabor na boca desejado e esterilização e para alcançar um nível reduzido de proteína solúvel no leite concentrado antes da concentração para resistir e minimizar amarronzamento. Além disso, tal processamento pode ser utilizado em um leite que é concentrado até um fator de 2,7 vezes ou maior e contém pelo menos 8,5 porcento de proteína.
