Abstract
"BARRA NUTRITIVA E PROCESSOS PARA A PREPARAçãO DE UMA PORçãO E DE UMA PORçãO CONTENDO PROTEìNA". Trata-se de uma barra nutritiva que incorpora proteína na forma de porções com níveis elevados de proteínas selecionadas. Pelo uso das porções da invenção, as barras nutritivas são formuladas para que tenham níveis elevados de proteína, e ainda um gosto bom e outras propriedades organolépticas. As porções de acordo com a invenção incluem mais de 50% em peso de uma proteína que não de soja selecionada do grupo que consiste em proteínas do leite, proteínas do arroz e proteínas da ervilha, em especial entre 51% em peso e 99% em peso, com mais preferência entre 52% em peso e 95% em peso, e ainda com maior preferência 55% em peso ou mais. A proteína do leite é de preferência a proteína de soro de leite coalhado. As porções da invenção são feitas de preferência ao se empregar um processo de extrusão no qual a temperatura de extrusão é moderada para evitar os danos às proteínas do soro de leite coalhado e o sabor insosso concomitante. Nesse processo preferido de acordo com a invenção, a extrusão é executada a temperaturas de 60 a 140<198>C, depois do que a proteína é secada ao utilizar uma secadora correia/corrente ou um secador de leito fluido. Em um método alternativo de produção das porções de acordo com a invenção, uma temperatura mais baixa de extrusão de até 90<198>C é usada e um ou mais fluidos super-críticos são injetados antes da extrusão para formar um produto estufado.
