Abstract
PROCESSO PARA PREPARAR UMA EMULSãO óLEO EM áGUA COMESTìVEL Emulsões óleo em água com boa firmeza de textura que podem ser preparadas pelo processo nas quais qual a óleo que compreende os resíduos de ácidos graxos insaturados é adicionado depois da esterificação. As emulsões resultantes não apresentam o sabor estranho que é freqüentemente encontrado nas emulsões que compreendem resíduos de ácidas graxas. As emulsões preferidas são isentas de oxidantes.
