Abstract

A invenção refere-se a um sistema de dispositivos para amassar, misturar e fermentar massa visco-elática, compreendendo um tanque móvel (10) com braço motorizado (30) e um contra-braço em forma helicoidal (31) que é acionado pelo fluxo de mistura da massa, é associado a um dispositivo de climatização de ativação lenta que gera e mantém uma temperatura de ar e das massas entre 20 a 26<198> C durante o amassamento, a mistura é o armazenamento, e correspondendo a uma fermentação acelerada, é de 9 a 15<198> C que torna possível realizar uma crescimento lento das massas e produzir massa fermentada, correspondendo a um segundo ciclo de fermentação.
