Abstract

Procédé pour le pétrissage mécanique d'une pâte de boulangerie. Selon l'invention, ce procédé est caractérisé en ce que l'on dirige sur la pâte en cours de pétrissage un courant de gaz, dont la temperature est choisie pour que la température de ladite pâte ait une valeur prédéterminée. Réglage de la température de la pâte en cours de pétrissage, pour obtenir une texture de pâte déterminée.
