Abstract

MELHORADOR DE SABOR ENCORPADO, MéTODO PARA AUMENTAR O EFEITO DO MESMO, COMPOSIçãO DE GORDURA E óLEO VEGETAL, ALIMENTO, E MéTODO PARA MELHORAR O SABOR ENCORPADO DE UM ALIMENTO A invenção refere-se a uma melhorador de sabor encorpado compreendendo um ácido graxo altamente insaturado de cadeia longa e/ou um éster deste como um componente principal e um componente de aumento de sabor encorpado; a um melhorador de sabor encorpado compreendendo um ácido graxo altamente insaturado de cadeia longa e/ou seu éster derivado de um óleo vegetal particular tendo uma grande parte de ácido Y-linolênico; a um método para aumentar o efeito de um melhorador de sabor encorpado compreendendo um ácido graxo altamente insaturado de cadeia longa e/ou um éster deste, compreendendo a adição do componente aumentar de sabor encorpado ao melhorador de sabor encorpado; uma composição de óleo e gordura vegetal com um teor de ácido a-linolênico de 5% ou menos compreendendo um ácido graxo altamente insaturado de cadeia longa e/ou um éster deste; um alimento tendo um sabor encorpado melhorado compreendendo o melhorador de sabor encorpado ou a composição de gordura e óleo vegetal; e a um método para melhorar o sabor encorpado de um alimento, compreendendo a adição do melhorador de sabor encorpado ou composição de gordura e óleo vegetal ao alimento. e a um método para melhorar o sabor encorpado de um alimento, compreendendo adicionar separadamente um ácido graxo altamente insaturado de cadeia longa e/ou um seu éster, e um componente de aumento de sabor encorpado ao alimento.
