A presente invenção refere-se às pululanases modificadas úteis na indústria de amido. A presente invenção proporciona processos para produção de pululanase modificada, composições enzimáticas compreendendo pululanase modificada, e processos para a sacarificação de amido compreendendo o emprego de composições enzimáticas.
