Abstract

Patente de Invenção: <B>"AGENTE PARA CONFERIR UMA SENSAçãO DE CREMOSIDADE ESCORREGADIA NA BOCA A ALIMENTOS E BEBIDAS"<D>. A presente invenção refere-se a um agente para conferir uma sensação de cremosidade na boca (referido aqui como "agente para sensação de cremosidade na boca") a alimentos e bebidas. O referido agente compreende um componente insolúvel em água e um componente solúvel em água. O referido componente insolúvel em água possui partículas com um tamanho médio de diâmetro de partícula de cerca de 0,1 a cerca de 3,0 mícrons e compreende: (a) de cerca de 5 a cerca de 70% de um componente em micropartículas; (b) de cerca de 0 a cerca de 60% de um componente gorduroso/oleoso; (c) de cerca de 0 a cerca de 5% de um componente emulsificador; (d) até cerca de 5% de um componente em celulose microcristalina. O referido componente solúvel em água compreende: a) de cerca de 0,05 a cerca de 40% de um espessante; (b) de cerca de 0 a cerca de 10% de caseinato de sódio; (c) de 0 a cerca de 40% de sólidos de leite; e (d) de cerca de 0 a cerca de 4% de auxiliares de processamento. O agente para sensação de cremosidade na boca também compreende de cerca de 0 a cerca de 10% de flavorizantes; os referidos flavorizantes podem ser parte dos componentes insolúveis em água, dos componentes solúveis em água ou ambos. Os componentes insolúveis em água compreendem pelo menos 60% dos sólidos totais do agente para sensação de cremosidade na boca. O agente para sensação de cremosidade na boca da presente invenção pode ser usado em produtos alimentícios e bebidas onde uma sensação suculenta, de cremosidade na boca é desejada e é particularmente preferido naquelas composições alimentícias onde produtos formadores de creme tenham sido convencionalmente usados.
