Abstract

MOLHO DE SOJA PASTEURIZADO. Um objetivo da invenção é fornecer um molho de soja que possa ser fabricado por um processo de fervura e que não se deteriore facilmente por aquecimento, e que tenha uma excelente propriedade de manutenção de aroma e um excelente prazo de validade, tendo ao mesmo tempo um sabor inerente a um molho de soja. O objetivo é alcançado por um molho de soja pasteurizado contendo 30 ppb ou mais de acetato de fenetila, um molho de soja pasteurizado que contém 30 ppb ou mais de acetato de fenetila e em que a taxa de redução do acetato de fenetila após envelhecimento a 25 ºC por uma semana é de 5% ou menos, molhos de soja pasteurizados fervidos e semelhantes.
