Abstract

a presente invenção se refere, de uma forma geral, à produção de glicosídeos de esteviol. um método para fornecer enzimaticamente um glicosídeo de esteviol modificado é fornecido, o qual compreende a incubação de um substrato de glicosídeo de esteviol na presença de sacarose e glucanucrase gtf180 da cepa de lactobacillus reuteri 180 ou um seu mutante com a atividade de transglicosilação desejada. também são proporcionados glicosídeos de esteviol modificados obtidos por um método da invenção e a sua utilização como edulcorante com baixo teor de glicêmico.
