Abstract

produtos de confeitaria congelados com textura aprimorada. a presente invenção refere-se a um método para produzir produtos de confeitaria congelados. em particular, a invenção refere-se a um método que contribui para o aprimoramento de atributos de textura e sensoriais dos produtos de confeitaria obtidos a partir do mesmo, em particular, de produtos à base de formulações com baixo teor de gordura. o méto do inclui o uso do calor controlado ( entre 90<198>c e 140<198>c por 5 segundos a 30 minutos) em uma mistura de confeitaria gelada acidificada (ph entre 5,6 e 6,5) para formar pelo menos parcialmente um sistema de proteína coagulado que inclui caseína e proteína de soro de leite. tal sistema de proteína é usado de acordo com a invenção em produtos de confeitaria congelados preparados por congelamento convencional sozinho ou combinado com congelamento em baixa temperatura, em que ele melhora a microestrutura e a estabilidade em produtos congelados.
