Abstract
La presente invención se refiere a un método para elaborar productos de confitería congelados. En particular, la invención está relacionada con un método que contribuye al mejoramiento de los atributos sensoriales y de textura de los dulces obtenidos con el mismo, en particular de los productos basados en formulaciones con bajo contenido de grasa. El método incluye el uso de calor controlado sobre una mezcla de dulce helada acidificada para formar por lo menos parcialmente un sistema de proteína coagulada que incluye proteína de suero y caseína. Se usa dicho sistema de proteína de acuerdo a la invención en dulce congelado preparado mediante congelación convencional sola o combinado con congelación a baja temperatura donde dicho sistema de proteína mejora la microestructura y la estabilidad en los productos congelados.
