Abstract

"PROCESSO PARA REFORçAR UM PRODUTO ALIMENTìCIO CONTENDO FRUTA COM CáLCIO, E, PRODUTO ALIMENTìCIO ENRIQUECIDO COM CáLCIO". A presente invenção refere-se a um processo para o reforço de produtos alimentícios contendo fruta, tais como sucos, concentrados, xaropes ou pastas, com cálcio. De acordo com este processo, um sal de cálcio inorgânico e um sal de cálcio de ácido todo orgânico são adicionados ao produto alimentício contendo fruta. Em particular, este método é adequado para produtos alimentícios com fruta contendo antocianinas, tais como oxicocos. Uma combinação preferida de sais de cálcio é um sal de cálcio de ácido lático com cloreto de cálcio.
