Abstract

"PROCESSO DE TRATAMENTO DE ALIMENTO, E, UTILIZAçãO DE UMA SOLUçãO". A presente invenção tem por objeto um processo de tratamento de alimento. Este processo é definido em que comporta uma etapa de colocação em contato do referido alimento com uma solução apresenta uma concentração em OH-compreendida entre 0,02 e 0,2 e pelo fato de que a referida solução comporta, por outro lado, um sal tribásico do ácido ortofosfórico de modo que a relação entre a concentração inicial de íons OH-, expressa em equivalente por litro, e a concentração em ortofosfatos, expressa em mol por litro, seja pelo menos igual a 1/4, com vantagem a 1/3, preferivelmente 1. Aplicação à descontaminação bacteriana dos produtos alimentícios.
