Abstract
本发明涉及用钙对含有水果的食品进行强化的方法,所述食品例如果汁、水果提浓物、水果浆或水果涂抹食品。所述方法包括将无机钙盐和有机酸钙盐加入含有水果的食品中。本发明方法特别适合含有含花色素苷的水果(例如蔓越桔)的食品。优选的钙盐组合为乳酸钙和氯化钙。
Description
本发明涉及含水果的食品的钙强化方法,所述食品例如是果汁、水果提浓物、水果浆或涂抹食品。
这类方法在现有技术中已有报道。WO 00/28838中描述了一种含有脱果胶果汁和一种选自天然奶、矿物质、乳酸钙、葡糖酸钙或它们的混合物的钙源的钙强化果汁基营养饮料。所述饮料还可以含有例如维他命的营养成分。在EP397232中也描述了一种含有果汁的营养饮料,其中使用氯化钙、碳酸钙或柠檬酸-苹果酸钙作为钙源。
US 6086927描述了一种通过将氢氧化钙、含磷的酸、乳酸钙和磷酸钙混入水中或果汁中来制备钙强化食品的方法。该混合物中总钙含量的约40重量%来自氢氧化钙,总钙含量的约15重量%来自乳酸钙,总钙含量的约45重量%来自磷酸钙。
在将钙化合物加入含水果的食品中时,会出现颜色变化的问题。特别是对于得自含有对pH敏感的色素(如花色素苷)的水果的果汁或提浓物。花色素苷在低pH值下是稳定的,在较高的pH下其会从红色或蓝色变成棕色。这是不希望发生的。除了颜色稳定性还要求强化食品具有稳定的和可接受的口味。
本发明的目的是提供一种用钙对含有水果的食品进行强化的方法,以使得食品的颜色可接受,优选食品的口味也可接受,并且在较长的时间内保持稳定。
本发明的目的是提供一种用钙对含有水果的食品进行强化的方法,其包括向所述食品中加入无机钙盐和有机酸钙盐。优选,所加的总钙量中至少20重量%由有机钙盐来提供,更优选所加的总钙量中至少50重量%由有机钙盐来提供。已发现当所加的总钙量中至少20重量%由有机钙盐来提供时,食品的良好口味可以得到保障。
所述有机酸钙盐优选选自合适的食品级羧酸的钙盐,特别是乳酸、葡糖酸、柠檬酸、苹果酸、富马酸、酒石酸、己二酸或它们的混合物,最优选乳酸。这些钙盐的实例是乳酸钙、葡糖酸钙、柠檬酸钙(柠檬酸单钙、柠檬酸二钙、柠檬酸三钙、柠檬酸钙钠、柠檬酸钙钾、柠檬酸钙铵)、柠檬酸/苹果酸钙、苹果酸钙、氨基酸钙络合物和富马酸钙。
有机酸的钙盐还可以通过向食品中加入有机酸或其钾盐、钠盐和/或铵盐以及氢氧化钙、钙水合物和/或碳酸钙从而原位形成来获得。
无机钙盐优选选自氯化钙、磷酸钙(磷酸单钙、磷酸二钙、磷酸三钙、磷酸钙钠、磷酸钙钾、磷酸钙铵)、硫酸钙、氢氧化钙、钙水合物、碳酸钙和它们的混合物,优选氯化钙、磷酸钙或硫酸钙,最优选氯化钙。值得一提的是,如果在原位形成无机钙盐,那么无机钙盐应选自氯化钙、磷酸钙或硫酸钙。
当所述无机钙盐是氯化钙或磷酸钙时,其还可通过将氢氧化钙、钙水合物和/或碳酸钙与磷酸或其钾盐、钠盐和/或铵盐和/或盐酸一起加入食品中来原位形成。
优选,所加的总钙量中至少20重量%由无机钙盐提供。已发现当所加的总钙量中至少20重量%由无机钙盐来提供时,可以确保食品的良好色彩稳定性。
于是,最优选总钙量的20-80重量%由无机钙盐提供,并且总钙量的20-80重量%由有机钙盐(优选乳酸钙)提供。
天然钙源也可以作为无机钙盐的一个来源,例如奶钙、海苔钙或得自岩矿的钙。这些产品含有例如碳酸钙或磷酸钙。
本发明的另一方面涉及一种如上所述的方法,其中所述无机钙盐是选自磷酸单钙、磷酸二钙、磷酸三钙、磷酸钙钠、磷酸钙钾、磷酸钙铵的磷酸钙,并且由磷酸钙提供的钙占总钙量的15-100%。如上所述,这些盐也可以原位形成。
本发明还涉及通过以上方法得到的钙强化食品,所述食品中添加有无机钙盐和有机酸的钙盐,其中优选所加的总钙量中至少20重量%由有机钙盐来提供。优选所述食品中总钙量的50-80重量%为乳酸钙且总钙量的20-50重量%为氯化钙。添加的钙的意思是指所述钙并非天然地存在于食品原料中。比如说,如果食品中含有奶,奶中所含有的奶钙并不包括在所加的总钙量之中。
本发明的含有水果的食品不仅包括果汁,还包括水果提浓物、含水果的饮料、蜜汁饮料、水果浆等,还可以是涂抹食品,其包括可涂抹的水果产品例如果酱、桔子果酱和水果馅。
本发明方法特别适合基于含有花色素苷的水果的食品,这样的水果例如越桔、欧洲越桔、蔓越桔、接骨木果、草莓、树莓、黑莓、黑醋栗、红葡萄、黑葡萄和蓝葡萄、李子和樱桃。
钙强化后得到的食品的pH低于4.5,优选低于3.5,尤其优选在2.5-3.5之间。
根据建议的日常食品摄入数值确定最终产品中的钙浓度,但是优选小于3000ppm,更优选小于600ppm。果汁或涂抹食品中合适的钙浓度为400-900ppm。
实施例
实施例1
使用1200ppm的钙对橙汁和苹果汁进行强化。以不同比例加入磷酸钙和乳酸钙。40℃下5天之后对颜色、pH和口味进行分析。结果列于表2和3中。

表2和3表明当来自磷酸钙的钙超过75重量%时,对食品口味带来不利的影响。而使至少20重量%的所加钙来自乳酸钙就可以确保良好的口味。使用乳酸钙/柠檬酸钙混合物进行相同的实验,得出了同样的结果。
实施例2
使用500ppm的钙对蔓越桔汁进行强化。首先向果汁中加入乳酸钙,然后搅拌至溶解。此后加入氯化钙。测量pH并评估口味。将所得果汁在35℃下保存40小时以检查颜色稳定性。
实验结果示于表1中:

这些结果表明当所提供的钙中有至少20重量%来自无机钙盐时,可以确保良好的色彩稳定性,而至少20重量%的所加钙来自乳酸钙则可以确保良好的口味。
实施例3
使用乳酸钙/氯化钙的混合物强化柠檬汁(Orange formex KarvanCevltam)(剂量水平20%RDI,250ml保存)。PH和口味结果示于表4中。

这些结果表明在柠檬汁中乳酸钙和无机钙盐的结合使用对于获得可接受的口味也是必须的。至少20重量%的所加钙来自有机钙盐可以确保良好的口味。
实施例4
使用乳酸钙和柠檬酸单钙的混合物对饮用酸奶进行强化(675ppm)。当至少20重量%的所加钙来自乳酸钙时,可以确保良好的口味。
Claims (20)
1、用钙对含有水果的食品进行强化的方法,其包括向所述食品中加入氯化钙和有机酸的钙盐,其中所述有机酸的钙盐选自乳酸、葡糖酸、柠檬酸、苹果酸、富马酸、酒石酸、己二酸的钙盐及其混合物。
2、根据权利要求1的方法,其中所加的钙的总量的至少20重量%是由有机酸的钙盐提供的。
3、根据权利要求2的方法,其中所述有机酸的钙盐为乳酸钙。
4、根据权利要求1的方法,其中所加的钙的总量的至少20重量%是由无机钙盐提供的。
5、根据权利要求1的方法,其中所加的钙的总量的20-80重量%由有机酸的钙盐提供,并且所加的钙的总量的20-80重量%由无机钙盐提供。
6、根据权利要求1的方法,其中所述食品中的水果含有对pH敏感的色素。
7、根据权利要求6的方法,其中所述食品中的水果含有花色素苷。
8、根据权利要求7的方法,其中所述水果选自蓝莓、欧洲越桔、蔓越桔、接骨木果、草莓、树莓、黑莓、黑醋栗、红葡萄、黑葡萄和蓝葡萄、李子和樱桃。
9、根据权利要求8的方法,其中所述水果是蔓越桔。
10、根据权利要求1的方法,其中通过向所述食品中加入所述有机酸钙盐的有机酸或其钾盐、钠盐或铵盐以及氢氧化钙、钙水合物或碳酸钙,在所述食品中原位形成所述有机酸的钙盐。
11、根据权利要求1的方法,其中所述有机酸的钙盐为乳酸钙盐。
12、根据权利要求1的方法,其中通过向所述食品中加入氢氧化钙、钙水合物和/或碳酸钙以及磷酸和/或盐酸或它们的钾盐、钠盐或铵盐,在所述食品中原位形成所述无机钙盐。
13、根据权利要求1的方法,其中所述经过钙强化的食品的pH值小于4.5。
14、根据权利要求12的方法,其中所述经过钙强化的食品的pH值小于3.5。
15、根据权利要求1的方法,其中强化后食品中的钙浓度低于3000ppm。
16、根据权利要求13的方法,其中强化后食品中的钙浓度低于600ppm。
17、根据前述任一权利要求所述的方法制得的含有水果的钙强化食品。
18、根据权利要求17的含有水果的钙强化食品,其含有一种添加的氯化钙和一种添加的有机酸钙盐,其中所加的钙的总量的至少20重量%是由有机酸钙盐提供的。
19、根据权利要求17的含有水果的钙强化食品,其中所加的钙的总量的50-80重量%为乳酸钙,并且所加的钙的总量的10-50重量%为氯化钙。
20、根据权利要求17的含有水果的钙强化食品,其是一种汁、浓缩物、饮料、浆或涂抹食品。
