Abstract
"PROCESSO DE FORMAçãO DE UM PRODUTO DE MASSA FERMENTADA, PRODUTO ALIMENTìCIO FRITO RECHEADO, E, PRODUTO DE MASSA RECHEADO COZIDO". Um processo de extrusão é usado para obter produtos de massa fermentada com características desejáveis. Um fermento químico é usado para liberar dióxido de carbono na extrusora e / ou em um pré-misturador para fornecer uma massa expandida após o processo de extrusão. Em algumas formas de realização, são produzidos produtos de massa melhorados. Os produtos de massa melhorados após fritura possuem desempenho de ciclo de congelamento / descongelamento e podem ser cosidos em microondas para fornecer uma massa macia com características desejáveis.
